Fig Jam

1 lb. (about 20) Fresh Figs
1/4 Cup Water
3/4 Cup Sugar (granulated)
1/2 Lemon (juice)
1 teaspoon Vanilla Extract

Serve on bread, over cream cheese, brie cheese or on a spoon!
