1/2 Cup Bell Peppers, chopped
2 Tablespoons Extra Virgin Olive Oil
1 Cup Ricotta Cheese
Chicken Tenderloins, left over chopped (optional, could be ground beef, etc.)

4 Eggs
2/3 Cup Half and Half
Mozzarella and Cheddar Cheese, shredded
Fresh Cilantro, chopped

These are great hot out of the oven, or even warm – closer to room temperature. Top with your favorite toppings!
