The other day I was trying to decide what to bring to share to our “Winer’s” night get together. I had a lot of nice larger sized grape tomatoes on hand, as well as some spinach and feta, so I decided to prepare this salad to bring along that evening. This recipe was inspired by a dish I had tried some time ago! A few years back a friend brought a salad to the office to share and since, a couple of us have made our own versions which are similar dateien von dropboxen!
This is a bright and delicious salad that is nice along other foods or can easily be enjoyed on it’s own for a light lunch!
Ingredients:
1 Cup dry Orzo, pasta (heaping)1/2 Lemon, about 2 Tablespoons of juice, plus the rind
1 or 2 Egg Yolks
2 Tablespoons Campaign Vinegar
1 Tablespoon Dijon Mustard
1 Tablespoon Sugar
1/4 Cup Roasted Garlic, smashed
Salt & Pepper to Taste
3/4 Cup Olive Oil (I use a 1/2 Cup, plus 1/4 Cup Vegetable Oil for a lighter consistency
2 Tablespoons Basil, fresh chopped
2 Tablespoons Parsley, fresh chopped
2 Tablespoons Cilantro, fresh chopped
1/3 Cup Parmesan Cheese
1/3 Cup Feta Cheese
1-2 Cups Grape Tomatoes, halved
1/4 Cup Onion, chopped
In a pot of boiling, salted water cook the pasta according to the package directions to al dente. Drain, but don’t rinse! (My friend Deb gave me a hint on how to cook pasta: Boil water rapidly, add salt & pasta and stir for one minute. Place a cover on it and turn off burner. Set a timer for 10 minutes and it should cook perfectly every time without sticking German language on mobile phone. I haven’t tried it, but I might!)
Whisk together egg yolk, lemon juice and rind, vinegar, mustard, sugar, roasted garlic and oil. Season with salt and pepper to taste. Combine remaining ingredients and drizzle with the dressing tossing gently. Do not overdress, you may have a little bit left over. This is bright from the lemon, rich from the roasted garlic and cheese and you get a nice punch of freshness from the spinach, herbs and tomatoes herunterladen!
