Roasted Brussels Sprouts

Ingredients:
1 Pound Brussels sprouts

Chicken Alfredo with Broccoli

This is a dish I prepared recently, while visiting my friend Jen.  She was hungry for something creamy and this hit the spot!  Wikipedia’s description of Fettuccine Alfredo is a pasta dish made from fettuccine pasta tossed with Parmigiano-Reggino cheese and butter download cydia for free apps.  As the cheese melts, it emulsifies the liquids to form a smooth and rich coating on the pasta.  In the United States cuisine it is sometimes mixed with other ingredients such as broccoli, parsley, cream, garlic, shrimp and/or chicken microsoft spiele herunterladen!  You can use whatever pasta you like and this would be a treat and not something Bill and I would eat very often.  Although chicken and broccoli are good for us, along with it’s rich, decadent sauce it packs a lot of fat and calories that we just don’t need download ard videos.

Dry Fettuccine or Spaghetti Pasta (6 ounces or so)
3/4 package Cream Cheese (8 ounce)
1/2 Cup grated Parmesan Cheese

2 Tablespoons Butter
2 Tablespoons Olive Oil
1/2 Cup Milk
1/2 Cup Heavy Cream
1 Cup Chicken Stock
2 Garlic Cloves, minced
Salt and Pepper, to taste
1/2 Onion, chopped

Creamy Polenta with Mascarpone

Ingredients:

Roasted Rack of Lamb

Ingredients:

1 to 2 Tablespoons Fresh Rosemary, chopped

Bake uncovered for about 10 minutes, then lower the heat to 350 and cook for ten 10 to 15 minutes longer (depending on the size of the lamb rack, or one of the lamb racks if you are cooking more than one).

Use a meat thermometer inserted into the thickest part of the meat and cook until it reaches 125 degrees a for rare or 135 for medium rare.  Remove from oven, tent with foil and let rest for 5-10 minutes.  Keep in mind that once the rack is pulled out of the oven, the temperature will continue to climb a few degrees.  Cut lamb into chops serving two to three chops per person.

Chipotle Tomato Soup

I came up with this really easy and delicious version of soup after enjoying some similar at Whole Foods recently, while on vacation in Seattle.  It’s been brutally cold in Minnesota and Bill’s been asking for tomato soup klingelton iphone herunterladen.  We had grocery shopped and planned to honker down for the weekend and though soup sounded good!  Though I would have liked it a bit creamier and would recommend heavy cream if you’re not trying to cut calories, but don’t worry because it is really flavorful with the lower calorie almond milk microsoft office produkte herunterladen.  You can omit the chipotle if you wish, but we think it’s different and flavorful for a change with the roasted vegetables and really warmed us up herunterladen!  Start with less chipotle peppers and add to your liking.  Since my soup turned out pretty spicy, a garnish of sour cream cooled it off a bit!  As always, you could halve the recipe if you want less, but I prefer the larger batch as I want extra for sharing and freezing pdf creator kostenloser download.

Ingredients:

20 Roma Tomatoes, cut in half roasted
1 Large Onion, peeled and cut in half, roasted
3 Heads of Garlic, roasted
2-3 Tablespoons Extra Virgin Olive Oil, for roasting

4 Cup Italian Tomatoes, canned – peeled in juice
1/2 to 1 Cup Fresh Basil, chopped
1 1/2 Cup Vegetable Broth

We had the soup along side of a simple grilled cheese, using shredded mild cheddar and a creamy country style cheese, with fresh spinach on wheat bread.
