Spritz Cookies

We typically only make Spritz Cookies at Christmas time, but they are so flavorful and delicious that they really could be made any time of the year when you are wanting a soft, sweet little delicate cookie treat Forge of empires for free!  Spritz cookies are traditional Christmas cookies in Scandinavian countries and are simple butter cookies, shaped by putting the dough through a cookie press music can beed legally on the Internet.

Ingredients:

1/2 Cup Butter
1/2 Cup Shortening
3/4 Cups Sugar
1 Egg
1 Tablespoon Vanilla

Butternut Squash Ravioli with Brown Butter, Sage & Pecans

One of my favorite pasta dishes to order out is Butternut Squash Ravioli.  To me, it’s almost like eating dessert for dinner, because it’s just that good!  One advantage is that squash is actually good for you!  Butternut squash is the most popular among winter squash varieties.  It is oftentimes recognized as a large pear shaped golden-yellow pumpkin fruit; that’s described as tasting sweet, nutty and a little like a sweet potato fotocommunity bilder downloaden.  It contains many anti-oxidants and vitamins and has more vitamin A than that in pumpkin.  This dish also gives me the excuse to pull out my pasta machine and play!

Ingredients: 

Pasta Dough:
3 Eggs
1 Tablespoon Olive Oil
2 Cups Flour, plus some for dusting

Blend the eggs and flour together in a kitchen aid mixer using the dough hook download music for free from youtube.  (You could use a food processor or mix by hand with a fork)  Drizzle in a tablespoon of olive oil and continue to incorporate all the flour until it forms a ball.  If the ball of dough is even slightly sticky when you take it out then pat it with flour.  Sprinkle some flour on work surface, knead and fold the dough until elastic and smooth, this should take about ten minutes skype free tablet.  Form it into a ball and wrap in plastic wrap.  Allow it to rest for 20 to 30 minutes at room temperature on the counter.

After the dough has rested, either roll it out by hand or use a pasta machine to thin out the dough and make sheets.  When you are working with your dough it should not be sticky at all so sprinkle it with flour as needed. My pasta attachment has a number of settings; setting 1 makes the dough the thickest and the larger numbers make it the thinner Download zoom for windows. I start on 1, fold the dough over a few times and keep running it through until it is a nice flat piece.  Then progress through 2, 3, 4, etc. to the desired thickness.  I have found that when making ravioli it is best to stop at 4 otherwise it will get too thin and break apart easily.

Filling: (I had extra that I froze for later use)
6 Cups Butternut Squash, roasted
3 Tablespoon Olive Oil, for roasting
3 Tablespoon Pure Maple Syrup
1 Tablespoon Butter
Zest of a large Orange
8 oz pkg Mascarpone Cheese
1/2 Cup Parmesan Cheese, grated
1/4 teaspoon Cinnamon
1/2 Nut of Nutmeg, (grated)

Preheat oven to 400 degrees for free.  Slice the squash lengthwise and remove the seeds.  Place the squash on a foil lined baking sheet and drizzle with olive oil.  Season with salt and pepper.

Roast the squash in the oven about an hour until tender when pierced with a fork landwirtschafts simulator 19 downloaden.  Let cool slightly, then scoop out the meat of the squash.

I tried to pass it through a food mill, but had better luck with a food processor; pulsing it until it was smooth.  Add the remaining ingredients and stir together thoroughly.

Dust the counter and dough with a little flour youtube video ausschnitten. Pull and stretch the sheet of dough with the palm of your hand as it emerges from the rollers. The dough should be paper-thin, about 1/8-inch thick.  On the bottom half of a sheet of pasta, place teaspoon sized mounds of the filling spaced about an inch apart.  Fold over the unfilled half of the pasta sheet.  Be careful covering each mound so that no air is trapped.  Press firmly between the mounds of filling to seal how to facebook video.  If your pasta is on the dry side, use egg wash to seal the top and bottom layers together.

Use a pizza cutter or pastry wheel to cut the sheet into squares or rectangles, checking that each piece is well sealed.  Place the ravioli, not touching one another, on baking sheets dusted with flour.  Let stand 45 minutes to an hour at room temperature, turning the pieces occasionally before cooking to dry business declaration form here. (If you want to freeze the ravioli, this is the time to do it.  Place leftover pasta’s on sheets of wax paper in a Tupperwear container.  Raviolis should not be touching and there is never a need to defrost…  just throw the frozen ones right in the boiling water for about two to four minutes.)

Bring a large pot of well-salted water to a rolling boil.  Cook the ravioli in plenty of boiling salted water for about four minutes; or until al dente.  They will float to the top when ready, so be careful not to overcrowd the pot instagram live videos.  Pull the ravioli from water with a large strainer. Serve with the browned butter (following) and shaved Parmesan cheese.

Brown Butter Sauce:
1 Stick Butter
1 Garlic Clove, pressed
1/2 Cream
8-10 Sage Leaves, chiffonade
Salt and Pepper, freshly found to taste

Cut the sage.  Cook the butter over med-high heat in a saute pan.  Brown the butter, stirring frequently to scrape the brown bits off the bottom of the pan, until the butter is fragrant and the milk solids have turned a deep brown.

Add the sage leaves and the pressed garlic to the butter.  Add the toasted pecans and lower the heat.  Mix in the cream and season with salt and pepper, to taste.

Pour over cooked ravioli.  The pasta will have little pillows of the creamy filling!

Ingredients:

2 Large Onions, chopped
3 Celery Stocks, chopped
3 Green Peppers, pureed
2 Jalapeno Peppers, pureed
1 Red Pepper, pureed
6 Cups Fresh tomatoes, pureed
1/2 Cup Chili Powder
1/3 Cup Sweet Paprika
1/3 Cup Cumin, ground
1/2 Cup Fresh Oregano, chopped
1 Pint Salsa,  pureed
2 10 oz mdr sachsen app. cans petite diced Tomatoes with Chili’s
1 14 oz. can diced Tomatoes
1 16 oz. can Tomato Sauce
1 6 oz. can Tomato Paste
2 Tablespoons Brown Sugar
10 Garlic cloves, pressed
1/2 Cup Worcestershire Sauce
2 1.25 packets Chili Seasoning

Stir together well, cover and reduce the heat to low.  Simmer for at least an hour stirring occasionally. If the mixture becomes overly dry, add a small amount of water, or tomato juice, salsa, etc. as needed.

Serve with shredded cheddar, sour cream, chopped onions, tortilla or corn chip, or lime wedges.  Whatever you prefer!

Tiramisu

Tiramisu happens to be one of both mine and Bill’s favorite desserts.  This light, delicious, blissful indulgence “Pick me up” is an Italian cake sims 3 downloaden op laptop. Ingredients:

2 (3 ounce) Packages Ladyfinger Cookies
9 Egg Yolks, room temperature
3/4 Cup Sugar
2 packages Mascarpone Cheese, room temperature
1 Cup Espresso, cooled to room temperature
2 Spoons Sugar, to mix with Espresso
Cognac, to taste (2-4 Tablespoons)
1 Pint Heavy Whipping Cream
Powdered Sugar, to taste in whipping cream
1 Tablespoon Vanilla, for whipping cream
2 Tablespoon Ground Coffee Beans
2 Tablespoons Unsweetened Cocoa Powder, mixed with ground beans for dusting
Fresh Raspberries

Start by beating Separate eggs, combine sugar with the egg yolks and mix until creamy customs receipt.  Mix until the egg yolks and sugar reach “ribbon stage”.

Dust with cocoa powder and top with raspberry.  Chill two hours in refrigerator.  Can be stored a day or two.  If you wish to use another vessel type:

BOWL:
Line bottom and side of 2-1/2-qt. bowl with half the soaked ladyfingers.  Top with half the mascarpone mixture, and half of the whipped cream.  Repeat layers and sprinkle with cocoa. Top with remaining cream and raspberries. Refrigerate until set.

PAN:
Arrange half of soaked ladyfingers in bottom of a dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that. Repeat layers and sprinkle with cocoa. Cover and refrigerate until set.

PARFAITS:
As described above.  Refrigerate until set.

Potato Water, Turkey Gravy

Years ago, Bill’s aunt Marlys always seemed to be in charge of making the gravy at the Thompson Family Thanksgiving dinner.  I watched her many times and came up based my recipe on what I could remember from hers Download videos from web pages.  I’m sure she didn’t use “Wondera” for her flour, but I love it!  Wondera is a high-quality, bleached, enriched all-purpose flour milled from a select blend of wheats hintergrundmusik zum downloaden.  It is a really fine flour that mixes quickly, so it’s a perfect solution for lump-free gravies and sauces.  I’ve heard of Potato Water Gravy referred to as “poor man’s gravy” google sketchup kostenlos herunterladen deutsch.  I think it tastes awesome and since I don’t like to let anything go to waste, what better way to use the starchy water from your boiled potatoes arte beiträge herunterladen?  It’s also a good solution for those who don’t tolerate milk or cream, like my friend Heather!  I prepare this gravy throughout the year and will add additional flavors such as garlic, Worcestershire or balsamic in addition to fresh herbs to add variety to dishes bücher von google books downloaden.  You can multiply this simply if you’re hosting a large group.

Ingredients: 

1/2 Onion, small, minced
1 Cup Potato Water
2 Tablespoons Butter
3 Tablespoons Wondra
1/2 Cup Chicken or Turkey Drippings

Salt and Pepper, to taste

While the turkey is roasting, cook your side dish potatoes in a large saucepan citrix workspace windows.  Cook until the potatoes are very tender, 10 to 15 minutes. Drain, reserving some of the water.
