Garlic Butter Pull Apart Bread

Written By: Chris - Apr• 26•13
I made a couple of these garlic butter bread pull aparts at a holiday social gathering I hosted; but they would be perfect any time of the year!  I had originally seen these made with pizza dough within a list of Rachel Ray’s top recipes and I believe hers included some herbs and cheese.  (I think next time I would consider adding some shredded cheese between the hunks of bread for rich treat!)  I based my recipe purely off of memory and with ingredients that I had on hand herunterladen.   These little wonderful nuggets are not very figure friendly, so plan to share when the party ends if they have not all been eaten!

Blackened Salmon with Blue Cheese Sauce

Written By: Chris - Apr• 25•13

I’ve been on a “blackened” a kick.  It happens, I go in streaks but the sun is out and they are saying possibly 70’s this weekend, so I’ll finally get out doors more to use my grill!  I bought some wonderful blue cheese last weekend at the Sunfish Cellars Wine and Cheese tasting and wanted to incorporate it into a meal.  It is expensive and I didn’t’ want it to go to waste!  I haven’t always loved blue cheese, but I’ve been tasting more and more and this variety was particularly mild and tasty!  I had been reading up on various salmon dishes and because it is not Bill’s favorite, I recalled seeing something on the “Big Daddy’s” show some time ago about Blue Cheese disguising salmon and making it taste better.  I was inspired to create my recipe based on Arons dish, but improvised as I always do working with ingredients that I had on hand vsco herunterladen mac!  I think it turned out delicious!  Though it didn’t change Bills mind on the salmon as his least favorite, he did tell me that he enjoyed the dish and said the blue cheese sauce is what made it better downloaden online video.

Ingredients:

1 Tablespoon Herbs De Provence seasoning
1 Tablespoons Sweet Paprika
1 Tablespoon Chili Powder
1 Tablespoons Cayenne Pepper
4 Salmon Fillets
1 Tablespoons Butter
1 Tablespoon Grape Seed Oil
1 Tablespoon Salt
1 Teaspoon Fresh Black Pepper
Blue Cheese Sauce:
1/2 Cup White Wine
2/3 Cup Half & Half
1 Cup Blue Cheese, crumbled
In a small bowl, combine the Herbs De Provence, Paprika, Chili Powder, Cayenne Pepper and salt.  Season each piece of fish with the rub.  (I had four odd fillets, two had skin and were thicker, two did not.  Season the sides without skin.)

Start by heating a cast iron skillet over very high heat (if you see smoke coming off the pan, you might think that’s hot enough polizeisirene herunterladen. Wait until you see actual white spots forming on your pan; white-hot.)  Heat the grape seed oil and add the butter just until melted.  Turn pan so oils completely cover the bottom of the skillet.  Cook fish for about 2-4 minutes on each side in my mind for free.  (The thicker fillets cooked longer)

Cajun Shrimp with Linguini

Written By: Chris - Apr• 24•13

It had been a full Saturday, and following a fun day of wine tasting last weekend we needed to grab a bite to eat before heading out for another social evening for our friend Julie’s big 50th Birthday party!  We swung by our house to grab the dog and quickly rummaged through the fridge to see what I had on hand to prepare a quick and delicious, yet healthier choice meal.  I had a baguette, a large package of jumbo shrimp and lots of nice sweet peppers.  Heather had the pasta and some other items that she agreed she would supply as well as the salad to complete our meal.  We got back to their place and got busy.  This dish is without cream and really turned out very tasty!  David doesn’t care for tomatoes, but I heard that he commented more than once that it was delicious!  Glad you liked it bac!

Spinach with Roasted Beets & Sweet Corn Salad

Written By: Chris - Apr• 20•13

We eat a lot of beet salads at our house.  It hasn’t been that way for too many years but both Bill and I have grown crazy for the sweet earthiness of this vegetable!  They are particularly wonderful when roasted, which allows for easy removal of the skins once cooled and can then be sliced to eat alone, or topped with a splash of vinaigrette.  Although I doubt it’s possible to ever grow tired, I do try to change the salads up!  I usually add Feta or Goat cheese along with some sort of greens and/or candied nuts topped with my own versions of vinaigrette’s.  This one was made by using the beet juice from the roasting drippings along with ingredients that I had on hand overcooked herunterladen.

The other night Bill suggested that I add some sweet corn that was hanging out in the fridge.  I usually prefer to grill corn on the cob, but although it is mid April in Minnesota and we were experiencing another crappy snowy and rainy day and I just wasn’t in the mood to fight the elements outdoors so I cooked them on the stove top!  Our son Andrew was joining us for dinner and he is usually a good sport about trying anything I prepare.  He enjoys most foods and is not fussy, but I have to admit when he saw the beets roasting he was a bit skeptical.  In the end, he too loved the salad and is now a fan of roasted beets songtexte kostenlos downloaden!

IMG_7378

Ingredients:

Fresh spinach
2 Medium Beets, roasted
2 Medium Sweet Corn, roasted and cut off the cob
1/2 Cup Goat Cheese, soft
2/3 Cup Candied Nuts, crumbled (I like to use Kirkland Cashew Clusters)
Vinaigrette:
1/2 Cup Beet Juice (drippings from bottom of roasting dish)
2 Green Onions, chopped fine
1 Tablespoon White Balsamic Vinegar
1 Tablespoon Champagne Vinegar
1 Tablespoon Dark Agave
1 Tablespoon Hazelnut Agave, (or a combination of any Agave or Pure Maple Syrup)
1 Teaspoon Dijon Mustard
1 Teaspoon Honey Mustard
1/4 Cup Vegetable Oil
1/4 Cup Extra Virgin Olive Oil
Salt & Pepper

I basically prepared the corn the same way as would on the grill, but after grilling the cobs within the husks for a while, I removed the skins and charred the cobs of corn directly.  Once cooled, cut the corn kernels from the cob herunterladen musik herunterladen.

Combine the ingredients to prepare the vinaigrette.  Assemble the salads by layering the spinach on the bottom of your serving plate.  Top with peeled and cubed cooled roasted beets, chopped corn kernels, crumbled goat cheese and candied nuts.  Drizzle spoon fulls of vinaigrette to your liking icloud dateien herunterladen.

We enjoyed this salad along side of a lemon peppered cod fillet with fresh dill, roasted potatoes and onions and a great value – terrific Cabernet Sauvignon out of Oakville from Kirkland!  (Check out Bill’s blog on this one!  It’s great!)

Smokey Cheese Grits with Seared Scallops

Written By: Chris - Apr• 18•13

The first time we tasted the dish that inspired my recipe was when we were visiting our friends Cynthia and Dan down in Austin TX earlier in the year.  She is a Pampered Chef Consultant and prepared the Cajun Shrimp with Smoked Gouda Grits Pampered Chef Recipe from the 29 minutes to dinner volume 2 cook book they sell.  We loved the dish download din normen for free!

I received some wonderful smoked Cheddar cheese from our friend Dwayne, who is the “best smoker we know”!    He prepared our last Thanksgiving turkey, which everyone raved about and saved me a ton of work!  Anyways, the original dish was made with shrimp smoked Gouda, but since we continue to try to incorporate more and more fish into our daily diets I happened to have a wonderful batch of scallops on hand!  As usual when I’m trying a new dish, I started with the basics from the recipe and of course modified incorporating my own ingredients into the dish.  Although this isn’t a terribly “light” dish, I did take steps to cut out some of the fat by omitting the heavy cream and avoided butter from the grits, which seemed to have been included most other times I’ve eaten them.  I would add something spicier next time as mine was missing the jalapeno that I forgot to buy!  I assure you that this one is worth your time and it really is a pretty quick and easy dish to prepare! android 9 herunterladen!

Ingredients:

1 Cup Grits (I had to ask at the store; you might find them near the oatmeal!)

1 Tablespoon Better than Bullion Chicken Flavor
2 Cups Smoked Cheddar Cheese, shredded

3 Large Garlic Cloves, pressed
1 Tablespoon Cajun Seasoning
1 (14.5 oz) Can Tomatoes with Peppers & Onions
1 Can Puree or Crushed Tomatoes
Salt & Pepper, to taste
6 Scallops, rinsed and dried
Grape Seed Oil
Smoke Oil, optional
Salt & Pepper
Fresh Parsley, for garnish

In a stock pot, bring chicken stock to a boil and add in the bullion flavoring.  Add the half and half and stir in grits.  Cook according to package directions; mine took about ten minutes, stirring frequently over low heat chrome enterpriseen.

Meanwhile, saute the onions in about a tablespoon of oil in a skillet over medium heat.  Add garlic and peppers.  Cook about three to five minutes until peppers are tender.  Add in the tomatoes (if using crushed smash into smaller pieces).  Season with salt and pepper and heat through.

Once Grits are cooked, add the shredded cheese.  Mix until melted completely, cover and set aside while you cook the scallops sema herunterladen.

Remove the small tag (side muscle) from the scallops, rinse with cold water and thoroughly pat completely dry with paper towels.  Season with salt and pepper legal filme downloaden bezahlen.

IMG_7401

Heat (I prefer to use cast iron) the skillet large enough that the scallops are not crowded in pan over high heat.  Add just enough grape seed and smoke infused oil to trace the bottom of the pan.  Once the oil and butter begin to smoke, gently add the scallops, making sure they are not touching each other.  Stay near and watch only searing the scallops for 1 1/2 minutes on each side.  (Use a timer!)  They should have a 1/4-inch or so golden crust on each side while still being translucent in the center download windows 10 upgrade.

IMG_7406

Serve immediately by placing them on a bed of grits.  Spoon on some of the tomato mixture, not to cover scallops completely and garnish with parsley yutube.

We enjoyed this with a silky Kunde Chardonnay and a nice simple pear salad.  I roasted the pear in the toaster oven while I was preparing the other dish.  I used some fresh spinach and iceberg lettuce; topped it with toasted Marcona Almonds, some Cran-raisins, blue cheese crumbles and a vinaigrette.  This is a take off of Laura’s Salad word pc!
