Tilapia with Tangy Mint & Basil Sauce

We’re always trying to incorporate more fish into our diet and one of our “go to’ options is Tilapia that I often find at our local Costco Download the latest android version.   According to the “Journal of the American Dietetic Association” this fish ranks as one of the most popular fish consumed in the United States!  Thanks mainly to it’s mild taste and it’s relatively low expense.  In our case, it’s readily available in the Midwest and so many other varieties of fish are not.  And it really tastes great!   It contains heart-healthy omega-3 fatty acids.  It is known that consumption of these types of fatty acids is thought to be associated with reduction in blood pressure, which is very important to Bill’s overall health.  This fish with it’s mild taste is fresh and can easily take on many flavors.  I’m always creating dishes based with what I have on hand and the Greek Yogurt is a staple these days.  I’ve also been trying to use up and keep alive what fresh mint and basil that is still alive from the culture shock of being brought indoors, since cold weather is upon us herunterladen.

This sauce will store in the fridge in a sealed container for about the same amount of time as your yogurt would.

Ingredients:

Two Tilapia fillets
Paprika
Salt & Pepper
Wheat Flour, sifted
Grape Seed Oil (or light vegetable oil*)

sauce:

3/4 Cup Plain Greek Yogurt
1/2 Cup Buttermilk
3 Tablespoons fresh Mint, chopped
3 Tablespoons fresh Basil, chopped
1 Teaspoon Red Pepper Flakes
1 Tablespoon Pesto
1 Large Garlic Clove, smashed

Combine and whisk all sauce ingredients and place in fridge to chill thoroughly while you cook the fish and other side dishes haus des geldes downloaden.

Light Basic Egg Pasta for KitchenAid

Recently, I shared my kitchen with Laura for a wonderful dinner!  She and I each prepared various parts of our meal in advance and then bumped elbows assembling and putting all of the dishes together.  We had a great time!  I prepared the fresh pasta earlier in the day and she was to make the Beef Bourguinon (this will be a later blog she is working on!)

We really enjoyed the texture of these noodles with the meat sauce and because I prepared them with Egg Beaters omitting the yolks, they were light and delicious bildschirmschoner windows 10 herunterladen!

Ingredients:

4 Eggs (1 Cup + 2 Tablespoons Egg Beaters – of course for money savings, I use the Kirkland/Costco brand)
2 Tablespoon Skim Milk
3 1/2 Cups sifted All-purpose Flour

I let my fresh pasta  partially air dry then curled it into portioned sized bundles. (like little bird nests!)  Place the bundles on a parchment covered cookie sheet and cover it with plastic wrap.  Place in the freezer for a few hours or until they are hardened likeing a youtube video. Remove the pasta bundles and place in freezer bags and then back in the freezer in a spot where they won’t get crushed!

When you are ready to cook the frozen pasta, don’t defrost the noodles.  Jut place the bundles in salted water as usual.  Gently stir to encourage the bundles to unravel.  The cooking time will need to be slightly extended over fresh noodles.  (It will depend on your noodles but the cooking time is approximately three to five minutes.)

Roasted Figs with Marscapone

One of the most splendid treats we enjoy in our future home of northern California are fresh figs!  If you are lucky enough to have seasonal access to these little gems, count your blessings!  Figs cannot withstand temperatures much below 20°F, and so are not available from local sources in much of the Midwest and northeastern U.S.  In other words, it’s rare to find them in our local markets in Minnesota!  They have two seasons herunterladen. A quick, shorter season in early summer and a second main crop that starts in late summer and runs through fall.

Last summer I was thrilled when I found “Brown Turkey Figs” at our local Costco!  Though I was unable to pick and choose my own fruits because they were sold in bulk, I was fortunate that the quality was perfect!  Figs are fragile so if you have the opportunity to choose your own fresh figs, look for slightly wrinkled (but still plump) and even split figs (as long as they are not weeping or leaking).  You also want a bit of bend at the stem and a slight weariness to the skin herunterladen.

Figs don’t last long either!  If you do manage to get your hands on some, you should share some and/or plan on eating them within a day or two of buying them.  They keep best at room temperature with plenty of air circulating around them (leaving them out in plain view also reminds me to use them!), but they will keep a bit longer in the refrigerator.  Know that chilling may reduce some of their full flavor, so try to avoid it survival games pc for free.

Fresh Figs
Brown Sugar

Brown Turkey figs have brownish-dark purple skin, a milder flavor than other figs and are noticeably less sweet than the similar-looking Black Mission figs knx ets4 herunterladen. This variety works well in salads or in desserts where a sweetener will be used.  In California, I can also easily find Black Mission figs, which are extremely sweet (sometimes they even ooze a bit of syrup so I omit the honey) and thus are perfect for serving plain or the tangy fresh cheese such as marscapone and eaten as a dessert word templates. The Black Missions have blackish-purple skin and dark pink flesh.  Each are delicious!

To prepare the roasted figs, gently clean them with a quick rinse of cool water and removing the stem.  Cut the figs in half and lay them on a baking sheet Download mahjong titans for free. Drizzle figs with honey and top with brown sugar.  Broil until the tops bubble and start to brown on the edges.

Remove from the heat and allow to cool.  Mix the marscapone and creme fraiche with a mixer until smooth.  Use a pastry bag to pipe onto each fig and enjoy them eaten slightly warm or at room temperature woozle app.

Golden & Red Beet Salad with Mozarella, Basil & Candied Nuts!

Golden beets are not as easy to come by as the red ones, but add a bright, zesty yellow color when served roasted and/or in salads.  They are a bit less sweet than the red beets, but also have a more mellow, less earthy flavor all around chkdsk.

Red beets are the variety most of us think of when our minds turn to “beets.”  They are the basic, but sweet  and earthy ones.  You can find them in almost any grocery store.  Look for beets with their fresh, leafy greens still attached if possible because you’ll know those are fresh.  Be sure to remove these greens when you get home and store them disconnected.  Much like squash, one of the great things about beets, is that they are great storage vegetable.  They get a bit less tender as they are stored and gain sweetness along the way vorlage lebenslauf downloaden.

I wanted to change things up a bit and had some left over Fig Balsamic salad dressing as well as some fresh mozzarella and fresh basil on hand so I was inspired to make this delicious and savory salad.  This was enough to serve four


Ingredients:

5 Roasted Beets
1/2 Cup Mozzarella Cheese, sliced

My Homemade Fig Balsamic Vinaigrette:
2 Tablespoons of fig Jam
add Balsamic to fill measuring cup to 1/2 C mark
Add one clove of fresh Garlic
fresh Salt & Pepper
Fill with Vegetable Oil to the 2/3 C mark
Wisc and spoon over fresh salad

1/3 Cup Candied Nuts, chopped roughly
Basil
2 small Green Onions
Salt & Pepper

Wash and roast your beets according to the link above, while baking another meal.  Store in an air tight container in the refrigerator until you are ready to use kann man spotify songs herunterladen.

Peel and slice the beets and arrange on plate alternating with the slices of fresh mozzarella cheese (you can see the golden beets have taken on some of the red beet color from touching while stored.  I think they are beautiful with vibrant color!)

Seasoned Rice with Roasted Squash & Garlic

I enjoy creating easy and delicious side dishes utilizing ingredients that I have on hand in my refrigerator and pantry.  Recently, I had some left over simple white rice that had been steamed, along with some roasted garlic and squash ndr-mediathek videos downloaden.  I had some Tilapia from Costco so this dish was created very simply and it was  rich and delicious!

Ingredients:

2 Cups cooked White Rice
1/2 Onion
1-2 Tablespoons EVOO
1 Tablespoon Butter
4 Garlic Cloves, roasted
1 Cup Squash, roasted
2 Tablespoons fresh Flat Leaf Parsley, chopped
Salt & Pepper

Chop the onion fine and saute it in the olive oil and butter over medium low heat until translucent.  Smash the roasted garlic and add it to the onions just until warmed through and then add the left over cooked white rice, as well as the parsley nova 3.

 

Cube the roasted squash and add it to the rice mixture.  Season to taste with salt & fresh ground black pepper.  Heat over medium low heat until all ingredients are hot herunterladen!
