Apple Pie with Dried Cranberries

So Laura and Jon were coming for dinner and I wanted to prepare a special desert.  Jen had gifted me a wonderful large bowl of crisp, tart apples from her farm, which inspired me to bake a fresh apple pie!  I had recently read in a couple of different “Foodie” magazines a couple of recipes for apple-cranberries cobbler and figured it would be a nice change and a unique preparation for my pie music from youtube on iphone.

Whenever I decide to enjoy desert, which it isn’t very often just ignore the fact that it’s probably not the healthiest thing I could eat!  Just go for it I say deezer single titles download!  And if I was going to think too much about it, apples and cranberries have to be somewhat OK to eat anyways, right?  So as in all things… moderation.  Enjoy a piece and give the rest away!   This evening, I can tell you it was scrumptious and worth every bite fotocollage kostenlosen!

Sauted Cape Hake with Aisian Sauce

Written By: Chris - Oct• 29•12

Hake are members of the cod family, found on the continental shelf and slope to depths over 1,000m and are popular throughout Europe and America.  Living in Minnesota, I happen to find mine at our local Costco and bought some frozen after a taste at one of their sample stops!

This variety are fished by bottom trawling with different mesh sizes for inshore and deep-water trawls wetransfer video downloaden ipad. Ranging from 1kg to 5 kg, hake has a metallic gray back and a silvery white belly.  Mine came in perfectly formed, cleaned, skinned, de-boned individual frozen fillets soundcloud lieder downloaden!

Hake is a mildly flavored fish. The flesh is quite soft, but firms up on cooking, and is well worth trying!  I have read that for a light, modern alternative to heavily battered cod, that you could try deep-frying hake fillets dipped in a light tempura batter.  Well, I don’t deep fry much and since I’ve grilled this type of fish in the past, I am familiar with it’s mild flavor.  I knew that it’s nice firm white flaky texture would hold up to a quick pan saute herunterladen!

This is a quick and delicious dinner idea!

The milk removes most of the fishy taste and helps frozen and pre-thawed fish to taste fresher. Sear and saute fish in hot melted butter in oil until a nice crispy brown coating is apparent and fish is cooked about half way through before flipping and cooking on the other side 60 seconds gratis herunterladen.

“Perfect” Scones

Written By: Chris - Oct• 26•12

Bill and I learned how to make the “Perfect Scone” while on vacation and in our fun cooking course in the “bon appetite culinary center” on board the Oceania Cruise Ship with Executive Chef Kathryn Kelly how to paid apps for free.

Scones are delightful for breakfast, brunch and/or for tea (if you’re into that sort of thing!) This recipe is for cream scones and was a favorite at tea time on the Oceania Cruises’ ship!  Scones, like frittatas, are extremely versatile.  You can add chives or a little Stilton cheese for a savory variation.  Chef Katheryn mentioned that her mother in law loves black walnuts and a little cinnamon in her scones.  You might want to add lemon or orange zest, nuts, and cheeses to your scones for flavor – just be sure to add small amounts so they do not overwhelm this great recipe.  Bill wanted me to prepare them with fresh blueberries, so I did recently when we had friends over for a wood cutting weekend and they turned out delicious premiere elements!

Ingredients:

3/4 Cup all-purpose Flour
1 Tablespoon Sugar
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/4 teaspoon Salt
2 Tablespoons unsalted Butter, melted and cooled
1 Egg Yolk, Medium
2 Tablespoons Heavy Cream
1/2 Cup fresh-frozen Blueberries, if desired

In a medium bowl, mix the flour, sugar, baking powder, baking soda and salt.  Make a well and mix in the butter and egg yolk.  Gradually add the cream and continue to mix JUST until the dough comes together.  DO NOT overwork the dough lieder direkt von youtube herunterladen.

Transfer the dough to a work surface (if you wish to add blueberries, chives, nuts, zest, work them into the dough with the palm of your hand.) Form the dough into a ball, wrap in plastic wrap, and let the dough rest in the refrigerator for 30 minutes warzone auf ps4 herunterladen. (We did not do this resting step and ours turned out delicious!)

Preheat oven to 350 degrees.  On a lightly floured work surface, roll and shape the dough to about 1-inch thick kaufda.de free of charge.

Using a sharp knife or a baker’s cutter, cut the dough into preferred shapes.  Triangles or circles are the most common typekit font downloaden.

Bake the scones until slightly browned, about 10 minutes.  Baking time may vary according to the size of the scones herunterladen.

At the ships tea time, scones are typically served with clotted cream and raspberry jam, which is how we ate ours!  Clotted cream is made by indirectly heating full-cream cow’s milk using steam or a water bath and then leaving it in shallow pans to cool slowly download internet explorer voor mac. During this time, the cream content rises to the surface and forms ‘clots’ or ‘clouts.  It reminded me of Mascarpone, which is a soft and delicious Italian cheese made from cream.  Scones do not keep well, so they are best enjoyed immediately chess game download for free.

Chicken, Shrimp & Beef Fajita Salad

Written By: Chris - Oct• 25•12

I know, I know… I’ve made Fajita’s before and blogged about them.  We really just don’t ever get tired of them and this time I prepared them in my WOK and we ate them as a salad!  Years ago, I invested in my official WOK and it’s one of my favorite kitchen tools vavoo apk 1.35!  According to Wikipedia, a wok  is a versatile round-bottomed cooking vessel that originated in China.  It is one of the most common cooking utensils and is also used in East and Southeast Asia.  They are often used for stir frying, steaming, pan frying, deep frying, poaching, boiling, braising, searing and stewing bilder herunterladen facebook sichtbar!   Wok cooking is done with a long handled chahn (or spatula) or with a hoak (ladle). The long extensions of these utensils allow the cook to work with the food without burning the hand.  When I had my appliances upgraded and gas piped into the kitchen, I chose an awesome range that included a burner to fit my wok excel windows 7 kostenlos download!

Fajita’s always come to mind when ever I have a left over steak on hand in the fridge.  I pulled out a couple chicken tenderloins from the freezer along with a couple delicious jumbo shrimp that I picked up at Costco and served it with some Blue Corn chips.  For some reason these chips just “seem” healthier to me and somehow make it easier to indulge in them!  Don’t be fooled, both blue corn tortilla chips and regular tortilla chips contain 140 calories per ounce, according to the FatSecret website.  Blue corn tortilla chips have 6 g of fat per ounce, while regular tortilla chips have 7 g of fat per ounce… so I guess they are a little bit healthier! Just eat fachbücher illegalen!

1 Package of your favorite Fajita Seasoning
Salt & Pepper
Lettuce

Chips
Light Sour Cream

Prepare all of your items.  Cut left over steak, clean and peel and de-vein shrimp and cut into thirds (depending on how large they are).  Clean and chop peppers and set aside and dice chicken

Clean and chop onion.  Begin to cook the onion in about a tablespoon of oil within the wok over medium-high heat – tossing frequently until they become translucent.  Add chopped chicken and cook while tossing until it is cooked through Download videos from web pages.

Add peppers and cook tossing constantly for about three minutes prior to adding the rare slices of beef download apk files.

Follow the instructions on the seasoning packet and set aside.  Toss in Shrimp and cook only for a few minutes until they are no longer translucent and turn from grey to pink.  Add seasoning sauce and toss constantly
