Roasted Acorn Squash

Acorn Squash is known for its compact size, (usually about the size of a softball) provides one squash provides one generous or two portions.  It is usually dark green, but can be one of three colors: green, gold and white.  It has ridges around its surface and the outside skin is quite hard and inedible.  It is the orange meat inside that is delectable,  naturally sweet and slightly fibrous, but delicious!  Lucky for me I have friends who have gifted them to me recently and they are also really inexpensive at the grocery store.  We’ve been eating a lot of them lately.  Try them and see how simple they are to prepare and are so delicious and healthy too office 365 testversion herunterladen!

Ingredients:

1 Acorn Squash
1 Tablespoons Olive Oil
Salt & Pepper

Preheat oven to 400 degrees download wscad.

Poached Eggs with Roasted Root Vegetable Hash

On the ship when they are teaching “healthy” cooking classes, they have to watch for gluten intolerance and have to find substitutes for the toasts and breads that they would typically serve with poached eggs.  The caramelized flavors of these root vegetables pair perfectly with the savory and nutritious yolk of an egg.  We actually preferred this hash to toast!  I encourage you to try it!   (FYI, fresh Celery Root may be hard to find.  I recently tried some parsnips as a substitute and would not recommend them.  They remained more firm than the other vegetables, so simply omit it if you can’t find it.)

Roasted Root Vegetable Hash Ingredients:

1 Sweet Potato, peeled and diced into 1/2-inch cubes
1 Red Pepper, seeded and cut into 1/2-inch pieces
1 White waxy Potato, peeled and diced into 1/2-inch cubes (“waxy” means a low starch potato.  The most popular waxy potato is the Red potato, which can also be called the Norland, the Boiling potato, or the New potato.)
1 Celery Root, peeled and diced into 1/2-inch cubes
3 Tablespoons Olive Oil
Sea Salt
Fresh ground Black Pepper

FOR THE ROASTED ROOT VEGETABLE HASH: While chopping the vegetables, preheat the oven to 350 degrees.  Place the vegetables on a baking sheet.  Coat with the olive oil and season with salt and pepper.  Roast for 30 to 45 minutes, until caramelized.  Divide the hash among six portions spiele herunterladen fürs handy.

1 Gallon Water
1/3 Cup White Vinegar
6 Eggs, room temperature
Cayenne pepper, for garnish
Parsley sprigs, for garnish

FOR TE POACHED EGGS: In a large pot, heat the water to 195 degrees (a soft simmering boil).  Add the vinegar.  Crack each egg into it’s own individual ramekin or small bowl download the new edge browser.

White Chicken Chili

We came home from our wonderful vacation to cool, fall weather!  The kids were coming for Sunday dinner and I was feeling like creating a warm hearty dish that all of them would like.  White chicken chili came to mind as it is a mild, fulfilling meal.  It is made with white beans, chicken and chilies instead of red beans, beef and tomatoes.  My version is still packed with plenty of chili flavor and you can add more kick if you choose by increasing the amount of red peppers or hot sauce download movies from tvthek.

Ingredients:

1 whole fryer chicken
Salt
Pepper
Lawreys Season Salt
Vegetable Oil
4 Tablespoons Butter

2 Large Onions
2 bunches Green Onion
1 Cheyenne Pepper, minced

4 Garlic cloves
2 Pounds dried Navy Beans – prepared in advance by soaking & rinsing
4 Cans (4 oz.) chopped Green Chilies

1/2 Cup Skim Milk
1/2 Cup Heavy Cream
2 Tablespoons Corn Meal

Cut up a whole chicken.  Rub with oil and season with salts and pepper.  Cover with foil and bake in oven until done hörspiel downloaden. Remove meat from bones, shred and cut into pieces (about six cups). Set aside and reserve the skin and bones.

Roasted “Winter” Squash

So who knew that there were so many varieties of winter squash?!  Since I never turn down a “freebee” and my friend Jen gave me a number of fresh squash from her garden recently, I had to go to work on the Internet trying to figure out what one of the varieties of winter squash was that I had.  Clearly I know Acorn Squash looks like, but there was one type that she had given me that I just couldn’t identify.  I wasn’t sure if it was Butternut, Turban or Kobacha?  It really didn’t matter since I roast a lot of squash this time of year, but I finally gave up the guessing game and just cooked it driverdoc downloaden!

One image looked similar to the squash I had on hand with a description of “squat and green with vertical gray or pale green stripes, the decorative buttercup squash with tender orange flesh has a flavor similar to sweet potato.”  (This it was!)
