Stuffed Jalepeno Peppers with Bacon

If you think the jalapeno “poppers” with cream cheese are good at the local pub, you’re going to LOVE these!  They are crazy delicious!  The first time I ever tried a bacon wrapped homemade version similar to these was while camping with friends on a girls-weekend.  I later purchased this nifty hand crafted “pepper rack” made out of steel at a trade show a few years back.  It even came with a seed remover, which I can’t get to operate anything like the fast talking, deal making sales dude who collected the $40 bucks or out of me for the o”ne of a kind gem..”.  Since, I’ve had other friends find their own versions of the racks on line and although they aren’t as heavy or high quality, I’ve even seen them at the local grocery store in the seasonal items Download ms teams!  A paring knife and a cookie sheet work just fine.

These days, because we’re trying to keep the waste lines to a minimal I’ve revised my ingredients to “light” and they are so tasty we still simply can’t get enough of them!  These are great piping hot, at room temperature and even re-heated the next day duolingo kostenlos!

Bill and I both enjoy sweet red, yellow and orange peppers – so we change it up by stuffing all the varieties.  One can never tell just how “hot” the jalapeno’s will be, so by adding some of the sweet peppers to the mix, you can cool down your pallet in between the heat polizei simulator download vollversion kostenlos!

Ingredients:

Jalapeno Peppers
Sweet Red, Orange and/or Yellow mini-peppers
Sour Cream (light)
Cream Cheese (1/3 less fat)
Taco and/or Fajita Seasoning packet
Bacon (well, I haven’t reverted to turkey bacon yet, but do make smaller cuts!)

Start by washing and cleaning the peppers.  Cut the end of the pepper removing the stem.  Using a paring knife, remove all of the seeds and inner core of the peppers, which is were the majority of the heat comes from.  If you do not have a pepper rack, cut the peppers lengthwise and fill them that way!  You can cook them on a grill safe skillet or in the oven with the bacon wrapped around them or simply draped over the top! 

Cream together the cream cheese, sour cream & seasoning packet.  (I prefer fajita, but taco works if it’s what you have on hand!)  If chilled, pop the cream cheese into the microwave for a few seconds to soften.   Fill a pastry piping bag (or a thick zip lock bag with the corner cut out) with the mixture for ease of filling peppers

Cut a small “X” in the bottom of each pepper bottom to allow excess juices to escape.  I par-cook the peppers on high in the microwave for two minutes before stuffing.   Using a piping bag, fill each pepper heaping with the cream cheese mixture kinderfilmpjes downloaden op ipad.

Place in holder (or lay lengthwise on cookie sheet or griddle) and drape with bacon

Place on pre-heated grill over medium high heat (or in oven at 375 or 400) and bake with the cover closed for 20-25 minutes until bacon is browning and cooked

I placed a small cake pan under my rack to avoid as much flare up from the bacon drippings.  Allow to cool slightly so that the filling firms up somewhat

Orzo, Basil & Spinach Feta Salad

Do you look for a variety of salads to serve utilizing your fresh herbs like I do?  We have a glorious Cilantro plant this summer, along with an abundance of Basil.  I love, love, love tomatoes and the grape ones are so sweet and succulent right now!  We were headed out to the lake with friends and because we’re together a lot, I felt I wanted to change it up and bring something out that was different than our usual “go to” salads.  Orzo is a fun pasta, which is delicious cool and seems a bit lighter on a hot day mod!

I was inspired to make this salad after enjoying one similar years ago that a friend had brought to the office.  I always tend to change recipes based on what I have on hand… This dish is no different.  The lemon adds a brightness, the herbs are fresh!  While the yolk adds just the right amount of creaminess along with thee small amount of cheese!  I cooked the pasta a day in advance and put it together in about five minutes.  This salad also holds up for a day or two, so make it when you have time and then “take it and go!” (a few of you will catch that phrase!)  I hope you enjoy it too download videos in safari!

Ingredients:

1 package Orzo, cooked and chilled

1/2 Cup Olive Oil
1/2 Lemon & Zest
1 Egg Yolk
1 Teaspoon Dijon Mustard
2 Tablespoons White Wine Vinegar
Salt & Pepper

1/4 Cup Basil
1/4 Cup Cilantro
1/2 Cup fresh Spinach
1 Cup grape tomatoes, halved
1/2 Cup Parmesan – Italian blend shredded cheese

Whisk together egg yolk, lemon juice, mustard and vinegar.  Slowly stream in the olive oil while continuing to whisk herunterladen.

Combine chopped herbs and spinach with lemon zest, salt & pepper and shredded cheese.

Turkey Ham – Chow Mein Salad

We are continuing to experience a lot of heat and humidity with high temps here in Minnesota!  The other night I was trying to decide on a meal that required minimal or no cooking, which is a perfect way to enjoy an evening while beating the heat!  We love salads and summer is just the time I tend to pull dishes out of the memory bank that I haven’t prepared in some time!  This dish came from an extended family member some years ago.  By modifying it using turkey ham and light mayonnaise – rather than the real thing, it spares the waste lines a bit!  I mentioned this one to Bill and he was all for it!  I searched for the original recipe to no avail.  This is my version off memory.  It is a very simple and easy salad to prepare.  Add the zest of the lemon for a brightness and you’ll be surprised how rich and creamy this dish is santa claus game for free!

Ingredients:

3 Cups Celery
3 Cups Turkey Ham
1/4 Onion
2/3 Cups Light Mayonnaise
2 Tablespoons Splenda
2 Eggs, hard boiled
1/2 Lemon & Zest
Salt & Pepper

Chow Mein noodles

Combine minced onion with mayonnaise, Splenda, lemon juice & zest and about a teaspoon of salt and fresh ground pepper to taste.  Don’t over salt, because the turkey ham has some saltiness to it download network driver windows 7!

Stuffed Sweet Red Peppers

We never get tired of stuffed peppers!  Bill loves any color and it doesn’t matter what time of the year it is, this dish can be changed up to enhance just about any flavor combination based with what you have on hand in your fridge and pantry nokia 6.1 bilder herunterladen!   This version is a very simple one.  Sweet, spicy and delicious!

Ingredients:

3 large Red Bell Peppers

1 medium Onion

2 large Carrots
2 Jalapeno peppers
2 Garlic cloves

1/2 Cup shredded Parmesan Cheese

Fish Taco’s with Tilapia & Pollock

We were first inspired to try making our own fish tacos after Bill and I both enjoyed them while eating out at a couple different places here in Minnesota as well as while traveling in California.  This is a very light, bright and delicious dish.  We’ve had them prepared also with fresh caught lake fish, but if you haven’t got any of that on hand – Tilapia and Pollock are nice, mild fish varieties that you can pick up at the grocery store or at your local Costco.  Lightly breading and pan frying the fish adds a nice, thin crispy texture to the tacos!  The topping sauce is what brings this dish together!  It has a nice tang, a hint of heat and it blends perfectly with the creamy richness of the avocado.  We love the flavor of the fresh Cilantro and crunch of the cabbage herunterladen!

Ingredients:

Topping sauce:
1/4 Cup light Sour Cream
1/4 Cup plain Greek Yogurt
1/2 Cup light Mayonnaise
2 Tablespoons skim Milk
Juice of One Lime
3 Tablespoons Capers
2 Tablespoon jarred Jalapeno’s
1 Tablespoon Dill
1 teaspoon Cayenne
1/2 Teaspoon Cumin
1 Teaspoon Oregano
1/3 Cup Chopped roasted Onions (left over)
2 large fresh raw Green onion
Salt & Pepper

Chop capers, jalapenos, onions and dill.  Mix with all other ingredients above and set aside to chill in the refrigerator while you prepare the fish

Fresh Cilantro
Chopped Cabbage
Avocado

Soft shelled tortillas
Fillets of Tilapia & Pollock

1 Tablespoon Butter
1 Tablespoon Vegetable Oil
Egg Beaters
Salt & Pepper
Corn Starch
Flour

Prepare dredging area by mixing flour & corn starch with salt & Pepper.  Pour some egg beaters in another dish.  Heat the butter and oil in a frying pan and heat over medium high heat.  Pan fry fish until golden brown on each side and allow to drain any access fat off on paper towels avis preferred karte herunterladen.
