Spinach & Arugula side salad with Feta

This salad was served as a side dish.  It is simple, easy and delicious!

Ingredients:

1/2 Orange Juice & Zest
1 Tablespoon Lemon Juice
1 Garlic clove
2 Tablespoons Olive Oil
Salt & Pepper
1 Tablespoon Splenda

Arugula
Spinach, chopped
Feta

Wisc together the ingredients and toss together with enough fresh torn Arugula & chopped Spinach for two people.  Toss in about two tablespoons of feta and enjoy along side of any dinner download internet explorer voor mac!

Tomato Basil Soup – Gazpacho

With fresh Basil in plenty, I have been craving some homemade tomato-basil soup!  This is one of my daughter Michelle’s favorite dishes.  I didn’t use much cream as we were trying to keep it light and omitted the heavy cream!  With this hot weather, this soup can very easily be enjoyed cold or as “Gazpacho”.  (a tomato-base soup traditionally served cold.  It is widely consumed in the Spanish cuisine and is mostly consumed during the summer months, due to its refreshing qualities and cold serving temperature!)  At our house, we’re not big fans of the heat outside so we have our central air conditioning turned to “chilly”!  We enjoyed this hot download rossmann 10 app!

Ingredients:

8 Large Tomatoes
2 Cans of Petite Diced Tomatoes (14.5 oz)
1 Can Tomato Paste (6 oz)
4 Garlic Cloves
1 pint 1/2 & 1/2 Cream
1 Tablespoon Butter
1 Tablespoon Olive Oil
2 Pints Chicken Seltock
1 Onion (Vidalia)
1/3 Cup Splenda
Salt & fresh ground Black Pepper
3 Tablespoons fresh Thyme
1 Cup chopped fresh Basil

These tomatoes had thick skin on them, so I decided to remove them.  Place the tomatoes into a large pot of boiling water.  Cook for about three to five minutes and immediately run them under cool water visio icons download.

Chop the sweet onion into small pieces and saute in the oil using the same stock pot.  Once they begin to turn translucent and browned somewhat, add the smashed garlic cloves and cook for an additional minute or two.  Add the canned tomatoes and allow to cook while you peel the fresh tomatoes

Using a paring knife, gently peel the tomatoes and smash each one with your hands adding them (seeds and all) into the tomato – onion mixture in the pot

Add the tomato paste, chicken stock and salt and pepper and allow to simmer for at least 30 minutes.  Soup will begin to turn from bright red to a more orange color

Chop the fresh basil and thyme and add it to the soup

Using an immersion blender blend until smooth.  Add cream (or 1/2 & 1/2) and continue blending until completely mixed.  Garnish with fresh basil sprig and serve hot or cold!  We at this soup along with Tilapia that was simply sauteed in a dash of butter and oil and seasoned with salt & pepper.  The cooked wheat pasta was tossed in a dash of pesto and a splash of 1/2 & 1/2.  Bill actually enjoyed placing his pasta in his soup and eating it that way jewel kostenlos downloaden!

Creamy Cole Slaw – by Mel

My friend Melania recently shared her version of Cole Slaw.  She brought some over for girls night just following her sons high school graduation party.  I’ve made a number of different versions of slaw, but I have to say this recipe was really delicious!  We’ve eaten it a couple times since download e mail in full!

Ingredients:

1 head Green Cabbage, cored and shredded
2 Green Onions
2 Cups Mayonnaise (I used light!)
3/4 Cup Sugar (Splenda)
1/4 Cup Dijon Mustard
1/4 Cup Cider Vinegar
2 Tablespoons Celery seeds
1 Teaspoon Salt
dash of White pepper

Place cabbage, (2 medium-size Carrots, peeled and grated – optional, but I was in a hurry!) and onion into a large bowl and set aside.   In another bowl, combine together all of the remaining ingredients.  (I might use slightly less celery seeds next time around)

Pour over the vegetables and toss well to combine ets2 multiplayer herunterladen. Cover the coleslaw and refrigerate for at least an hour for the flavors to mend.

Homemade Wheat Pasta

So I’ve been wanting to make some wheat pasta since my new pasta machine attachments arrived some time ago.  I did a lot of looking on thee web of what people had success with and decided I would go with a 50-50 Whole Wheat/White Flour Mix.  I still choose the healthier option of omitting the egg yolks and this pasta turned out just wonderful herunterladen!

People might think it’s ambitious to make your own pasta, but it really is quite simple if you have the right tools. I love my Kitchenaid and especially the pasta tools jquery!  chose a Rigatoni shaped noodle because I wanted to prepare a baked dish that would soak up the red sauce!

Ingredients:

6 Egg beaters
2 Cups Wheat Flour
2 Cups all purpose Flour
1 Tablespoon Olive Oil
2 teaspoons Kosher Salt

In Mixer, combine the two types of flour with the salt.  While the mixer wand is turning, slowly pour in eggs and olive oil.  Mix with wand until Ball forms.  If a ball does not form, add one teaspoon of water at a time until one does, but be careful not to make it too wet program for music for free. Raspberry-Lemon Mojito!

So Minnesota is still on a hot streak (several days of hot, humid 100+ degrees temperatures outside on this lovely – humid Sunday afternoon.  After spending much of the morning outside biking, mowing and puttering in the gardens we were feeling like sipping on something light and refreshing!  I have some beautiful fresh mint growing on the porch, have a couple of beautiful lemons and some fresh raspberries on hand! We don’t usually go for the fruity drinks because of the added sugar, so I created this one with Splenda and it’s light and delicious fortnite für nintendo 3ds downloaden!

Ingredients:

Ice
White Rum
10 or so fresh Mint leaves
1/4 Cup fresh Raspberries
1/2 Lemon juice and one slice for garnish
4 Tablespoons of Splenda
