Rosemary Grilled Potatoes

Even when you are in a hurry, you can prepare a delicious, flavorful meals that include potatoes!  I reach for the “Simply Potato” wedges and keep them on hand in the fridge for quick and easy preparation and to have as an addition to meals when I’m in a hurry.  Although I love to cook and spend time in the kitchen, I’m OK with making life simple from time to time and these potatoes on the grill are just that!  This meal was thrown together and cooked in less than 45 minutes ältere java versionen downloaden!

Ingredients:

1 package Simply Potato wedges with Rosemary
1 Vedalia Onion
1 Tablespoon Vegetable Oil
3 sprigs fresh Rosemary
1/4 Cup Brummel & Brown (Yogurt butter)

Start by chopping and sauteing the onions in oil.  Cook until translucent and starting to caramelize.  In the mean time, chop the potato wedges into bit size pieces and microwave for five minutes on high herunterladen.

Roasted Beet & Feta Salad

A chilled Beet salad with crumbled Feta is an amazing little treat!  I recently posted how to roast beets and this is a simple, healthy and delicious salad.  Try it before you think you won’t like it!  You will likely be surprised at how wonderful and addicting this is how to gif!

Ingredients:

3 Beets (roasted and sliced)
1 Tablespoon White Wine Vinegar
1 Tablespoon Red Wine Vinegar
1 Tablespoon Honey
1 Tablespoon Olive Oil
2 Tablespoons Feta Cheese
1 Tablespoon Fresh Parsley, chopped
Salt & Pepper

Roast beets, peel them and chill until cooled completely.  Peel and slice gta 4 kostenlos vollversion pc deutsch chip.

Roasted Beets

Another dish we’ve been craving ever since our recent visits to the Valley is a good “Beet Salad!”  I didn’t think while growing up that I would ever enjoy these odd-looking vegetables that our folks used to eat.  Ever since trying them cold or chilled in a variety of salads, both Bill and I have come to love them.  They are good for you too!  Of course the heirloom varieties are so pretty and not always as easy to find here in Minnesota, but the dark ones are good too!  I choose the smaller to medium-sized ones because they are more tender iphone kostenlos musik downloaden ohne internet.

Roasting them seems to enhance their sweet nature and seems to be the easiest way to cook beets.  You can do them in the oven, much like you would roast your garlic bunch – but it also works on the grill.  In the heat of summer, I do what ever I can to utilize the grill so we don’t heat up the house.  Roasting beets give them a deep, earthy sweet taste that can’t be accomplished in any other method of cooking.  You can serve the roasted beets either as a side dish or a salad flickr foto downloaden iphone.

Ingredients:

3 Beets (small or medium in size)
1 Tablespoon Olive Oil
Kosher Salt
Freshly ground Black Pepper

Grilled Fresh Peaches with Balsamic

We love grilling and now that it’s summer, we do it a lot more.  We enjoy the terrific flavors created from the grill,  but also choose to so some of our cooking out doors so that we can cut back on efforts of the central air conditioner!  A few years ago, I recall watching a show with Bobby Flay BBQ’ing Peaches!  He made a nice reduction and served the peaches with Prosciutto.  It also had served it with fresh basil and although I had prepared his dish that way in the past and it was great – I was just working with what I had on hand and created a more simple version for a recent dinner download disney plus movies on pc. Ingredients:

2 Fresh Peaches
Extra Virgin Olive Oil
1 teaspoon honey
Sour Cream, for garnish
Salt & Pepper
1/3 Cup Balsamic Vinegar (reduced)

Place the vinegar in a small saucepan and bring to a simmer over high heat.  Watch carefully and turn down the temperature if you are busy preparing other ingredients.  Cook until thick and syrupy.  Stir in the honey and season with a dash of salt and pepper winrar free windows 10. Let cool slightly (It will keep thickening as it cools).

Drizzle and rub the peach halves with olive oil. Place on the hot grill, cut side down and grill until golden brown anime herunterladen. Turn over and grill for 1 minute longer.  They will be soft on the outside somewhat, but remain firm in the center.

Fresh Wheat Pasta with Marinara & Mozzarella

I recently posted the recipe for my homemade fresh Wheat pasta.  I intended on making a red sauce with some fresh Basil and Mozzarella that I had on hand herunterladen!

An enjoyable way for me to spend my time off on weekends, is in the kitchen!  Recently the kids were all coming for dinner – It was another blustering hot summer day in Minnesota, but that doesn’t mean we don’t crave a good hearty home-made meal.  All of my gang loves pasta and I even think Bri craves it as much or more than Bill Download youtube video on iphone!

I had fun preparing everything in doors, but “baked” this dish on the grill to help keep the heat outside!  I was really in the mood to play with my new pasta tools since I’ve not had much of an opportunity just yet!  To assemble the dish, simply follow these instructions!  I made this into three pans and froze two for a future meal.  Since it is meatless, it could easily be used as a nice side.  Marinara sauce is a southern Italian tomato sauce usually made with tomatoes, garlic, herbs, onions.  Traditional southern Italian cuisine uses this type of sauce to add flavor to pasta, rice, seafood and pizza.  I make my sauce semi-homemade and with this wheat pasta, it was a delicious hit with my family!   Don’t be afraid to start with some canned pasta sauce that you have on hand – just doctor it up and add fresh ingredients, it is economical and easy to prepare!

Ingredients:

4 large Tomatoes
4-6 small Tomatoes (because it’s what I had on hand)
1 Vidalia Onion
2 Tablespoons Olive Oil
3 Garlic cloves
1 Cup Basil, chopped

1 teaspoon Cinnamon
1 Tablespoon Sugar

Salt & Pepper

Start by chopping and sauteing the onion in the olive oil.  Once they are soft and transparent add the crushed garlic and saute for about a minute longer, being careful not to burn the garlic.  Add fresh basil and pulse items until chopped fine herunterladen.

Peel and de-seed the tomatoes and add them to the chopped onions and basil in the food processor and blend until smooth

Combine the pureed tomato and onion mixture with the canned pasta sauce and cook, simmering over low heat for 15 to 20 minutes to blend flavors.  Add Sugar (or Splenda), Cinnamon, fresh nutmeg and salt & pepper to taste.  Sauce will darken in color.  Mix in the Ricotta Con Latte until blended

Add the Parmesan & Imported Pecorino Romano (regular Parmesan would work just fine) and mix well.  Scoop some into the bottom of the pans, which have been sprayed with nonstick cooking spray

Mix cooked pasta in with prepared sauce.  Mix gently not to smash the pasta noodles, but long enough to allow sauce to seep throughout the noodles

Scoop each baking dish half full with pasta and sauce, spreading evenly.  Cube Mozzarella and place cubes evenly across the bottom layer of pasta

Cover with foil and bake in your oven or on the top shelf of your pre-heated grill (around 350-400) for about 25 to 30 minutes until hot and bubbly
