Dijon & Pineapple Chicken

I found a recipe that had Dijon and pineapple in it about 25 years ago on the back of a can.  I’ve been making it ever since with a few modifications of my own, served over Rice download nintendo 3ds for free. Both Bill and I really enjoy the flavors and the cooked pineapple.  This dish contains Marjoram, which is a herb  that has hints of sweet pine and citrus flavors.    Give it a try when you want a quick hot but fresh dish that is delicious, healthy and just overall something different download windows 8.1 language packs!

Ingredients:

2 large Onions

3 stalks Celery
1 (20 oz) can of Pineapple (also added about 1/3 Cup of fresh that I had on hand)
2 Tablespoon Brummel & Brown (butter)
2 Garlic cloves
1/4 Cup Dijon Mustard
4 Tablespoons of fresh chopped chives
1 Tablespoon Worcestershire sauce
1 Tablespoon crumbled Marjoram
1 Can Water chestnuts
Salt & Pepper

Drain pineapple, reserve juice.  Saute celery and onions in butter until translucent herunterladen.

Add cubed chicken and cook seasoning with garlic, salt & Pepper.  Add chestnuts and reserved pineapple juice to skillet.  Allow it to simmer reducing some of the liquid.  Stir in mustard, Worcestershire, chives and marjoram.  Serve over white rice Download itunes match music!

Lamb Chops with Mascarpone & Mint dipping sauce

I often see interesting dishes that call for two ingredients that I hadn’t been very familiar with while watching the Food Network; Creme Fraiche and Mascarpone.  Mascarpone seemed to usually been used in sweet dishes, but also sometimes in savory ones, but I always wondered just what it tasted like!  I know I have had it out to eat and believe it’s used in Tiramisu…   But really needed to explore this further.  I understand that you can use sour cream (or Dr zdf app videos download. it up to try to make similar if you don’t have creme fraiche, but now that I’ve finally found, bought it and tasted it… there is a world of difference!  I was able to purchase it at Trader Joe’s after looking in numerous local grocery stores to no avail.  I only wish there was a location closer to my home iphone 6s for free music!   The Creme fraiche is smooth, creamy, more golden in color than sour cream and it was very rich and delicious!  The Mascarpone is really sort of similar to me in taste, but much thicker like a cream cheese.  Each are rich like an ice cream to me…

I have been waiting to prepare a rack of lamb that has been in the freezer and Bill has been mentioning that he was ready for me to make it for him…

I referred to a few different recipes on-line before coming up with my own version of utilizing the two new ingredients.  A couple of the recipes included “herbs de Provence”.  This too was an unfamiliar term; so thanks to Wikipedia:

Herbes de Provence is a mixture of dried herbs typical of Provence disney plus app download tv. I decided to go back to my own method of preparing lamb and used the herbs that were in my notes from my friend Pete, who had originally taught me how to prepare lamb chops while we were visiting him a few years back at their home in Seattle!  He simply used fresh Mint and Oregano, so did I musikvideos downloaden!

Ingredients:

Lamb:
1 rack of Lamb, trimmed, with 1/4-inch of fat left on meat (I find beautiful Australasian ribs at Costco already trimmed for just about $20 a rack!)
1 Tablespoon Olive Oil
1 Tablespoon Butter
Salt & Pepper
2 Tablespoons Oregano

Sauce:
2 Tablespoons honey
1 Tablespoon ground Cumin
2 Tablespoons chopped fresh Mint leaves
1/2 Cup Mascarpone cheese, at room temperature
Fresh Mint sprigs for garnish
Salt & Pepper

For the lamb:

Preheat the oven to 400, drizzle the olive oil on both sides of the lamb download or save. Season with salt, pepper and herbs.  Brown lamb for two to three minutes each side in a large skillet over high heat.

Place the browned rack in a shallow roasting pan or baking sheet and roast for 20 minutes for medium-rare Download apps samsung s9. Allow the lamb to rest for 10 minutes before slicing.

For the sauce:

In a small bowl, combine the creme fraiche, honey, cumin, and mint herunterladen. Add the mascarpone cheese and stir until just combined. Season with salt and pepper, to taste.

Cut the lamb between the bones (I cut them double chops) into individual chops and serve with the sauce over the top allowing it to melt somewhat.   We served mashed potatoes and sautéed fresh spinach and cauliflower with garlic windows 8 free download 32 bit.

Add a tablespoon or so of butter to the bits at the bottom of the skillet that you browned the lamb chops in.  Add smashed garlic and saute for a minute or two.  Add fresh spinach a cauliflower tossing frequently over high heat until you see the cauliflower pick up nice browned edges.  Shut off heat and cover allowing vegetables to steam.  Salt and pepper to taste

Baked Roasted Red Pepper Cheese Dip

I was inspired to make this dish after Bill and I recently went out to dinner at a new local place that we discovered…  They had a great appetizer called “Fire Baked Cheese goat cheese and roasted red peppers” served with flatbread on the menu.  We weren’t’ sure what to expect, but were pleasantly surprised as it was very rich and delicious!  We’ve revisited the establishment because they have a great Chef who makes terrific dishes!  They also have wonderful wines offered at half price on Wednesdays!  Our kids loved the cheese dip as well, so I decided that I would give it a whirl and try my own version herunterladen!

If you follow my blog, you know that I always work with what I have on hand in the fridge and pantry.  I usually have cooked caramelized onions on reserve so that when I’m in a hurry I can just grab!  I also had some left over roasted red peppers and red pasta sauce…  Here is what I came up with:

Ingredients:

1/2 Cup semi-soft Goat Cheese
1/2 Cup Monterrey Jack Cheese
3/4 Cup Gruyere Cheese
1/4 Cup Cheddar Cheese
2/3 Cup cooked chopped Onions
2 Garlic cloves, crushed
1/4 Cup prepared pasta Sauce
1 Cup Roasted Red Peppers

Chop the red peppers and combine with all of the other ingredients ausweisapp2 downloaden.

Place into medium size baking dish that has been coated with non-stick cooking spray and bake at 400 for about 20-30 minutes until golden brown, hot and bubbly herunterladen!

I served this with Naan, which is an Indian flat bread that I purchased at the grocery store.  I simply drizzled it with olive oil and sprinkled with garlic salt.  Bake this on a stone until crispy on the bottom and heated all the way through Christmas music for free!

Baked Artichoke Dip

This is a “go to” appetizer dish that I prepare quite frequently.  It’s simple and it seems guests like it either with crackers or with crustini’s.  I almost always have the ingredients on hand and will spruce it up from time to time by adding fresh spinach, but it’s delicious just as is.  I add half of the plain Greek yogurt in lieu of using all mayo just to reduce some of the fat.  You really can’t tell the difference and it tastes great download entire websites!

This recipe is good in a crock pot as well if you have to keep it hot for a long time.

Ingredients:

1/2 Cup Mayonnaise
1/2 Cup Greek Yogurt
2 Cans Artichoke hearts
1 small call of Chili Peppers, chopped
1 Cup grated Parmesan Cheese
8 oz download pt sans. of grated Mozzarella Cheese
pinch of Garlic Salt

Make sure you get the “non marinated” artichokes and drain them well. chop them up very fine youtube videos in hd.

Combine all other ingredients and mix gently.  Pour mixture into baking dish that has been sprayed with non-stick cooking spray

Bake 350 for 25-30 minutes until cheese starts to brown on top and edges

Asian Chicken lettuce wraps

We were walking through Costco the other day and spotted the fresh live Butter Lettuce.  We love PF Chang’s “lettuce wraps” but there isn’t one very close and I’m not sure just how healthy they really are.  I told Bill I would give them a try to asked him if he was feeling like having them soon.  He said “how about tonight?!”  So I decided that I could make them in the comfort of home.  They are not exactly the same, but they sure were delicious kann man mediathek-beiträge downloaden! I didn’t have any of the crispy white rice noodles, but did have some left over cooked white rice from a previous meal, so it did the trick!

Ingredients:

Butter Lettuce
1 lb fluidsim herunterladen. Chicken tenderloins
1 large Onion
2 Tablespoons Vegetable Oil
1 Tablespoon dark Sesame Oil
2 Garlic cloves
1 can Water Chestnuts
salt (dash, salt in other ingredients)
fresh ground Black Pepper
1 Cup cooked White Rice

Sauce:
2 Tablespoons chunky Peanut Butter
2 teaspoons Soy sauce
1/4 Cup Hoisin sauce
2 Tablespoons Oyster sauce
1 Tablespoon Honey
2 Tablespoons fresh grated Ginger
1 Tablespoon Rice Vinegar
1 Tablespoon Red Curry Paste
2 Tablespoons dark Sesame Oil
1/2 Cup toasted Pine Nuts
1/4 Cup lightly salted Peanuts
1/4 Cup Green Onions
1/4 Cup Chives

Dipping sauce:
Soy sauce
Siriracha Hot sauce
ground Wasabi

Start by cooking the chopped onion and chicken tenderloins together in vegetable oil, plus one tablespoon of sesame oil.  Press and grind chicken into small pieces as it cooks breaking the meat down into small pieces.  Season with salt & pepper bluetooth download op laptop.
