Gnocchi

Gnocchi has become one of my ultimate food finds and what I seek out these days at fine restaurants.  I just love to eat it and it can be flavored so many ways!  Who knew? I was inspired and determined to make it myself after eating out at one of our favorite Minneapolis restaurants: Bar La Grassa!   They serve a Gnocchi with Cauliflower and Orange and it is to die for escape room spiel herunterladen!

I prepared it as a side dish along with Garlic Shrimp on the BBQ.  It wasn’t theirs, but it was DELICIOUS!  I went on a hunt to find the best and easiest looking recipes.  I tried to find instructions which had tools and food items that I have on hand.  I ended up following one which was extremely detailed for the most part, so I give my hats off to 101 Cookbooks and a post from 2007.  It was very helpful microsoft office für windows xp kostenlos downloaden!

I’ll do my best to share my experience!

Ingredients:

2 large Russet Potatoes
1/4 Cup egg (one egg)
1 Cup all-purpose flour
Kosher Salt

Fill a pot with cold water and salt it.  Add potatoes (skins on) that have been cut in half.  Bring the water and potatoes to a boil and cook until potatoes are tender.  This takes roughly 45 minutes.

Place each potato piece on a large cutting board and peel each potato one at a time as soon as possible after removing from the water before moving on to the next potato.  As each potato is peeled, run it through your food mill.

For what ever reason I was thinking that the two potatoes didn’t sound like much and because I was hoping for left overs….  I doubled the recipe…  I won’t do that again unless I have a lot of people joining us for dinner because it made a lot!  I ended up freezing the little dumplings on a cookie sheet individually and then froze them in dinner size portions.  I later prepared them by boiling them later and they were very good, but we prefer the texture of eating them right away.  It’s just a little bit different.

Each and every time that I’ve ordered them out since at a variety of restaurants, they have not had the impressions, so I’ll skip this step moving forward!

This sauce was made by reducing chicken stock, sautéed shallots, fresh garlic, a bit of cream and the pesto.  I added slivered cauliflower just at the end to cook al dente prior to tossing it.

 

Serve immediately, top with fresh grated Parmesan cheese.

Looking through some old pictures, I found this fun shot of Jen and I when she was up visiting some time ago….

I remember appreciating her teaching me how to prepare her version of Mussels, as don’t have much experience with those!  We also enjoyed seared Scallops, a nice salad and pasta!  It appears we had enough to eat for the four of us, what’s new tweakbox kan niet downloaden!

Smashed Pork Chops, by Jennifer

Ingredients:

6 Boneless Pork Chops  1″ thick  Let these rest for half hour after you take them out of frig.

1 Tablespoon each of these dried spices:
Parsley
Oregano
Basil
Flour
1 Teaspoon each
Pepper

1 Package Brown Gravy mix – Generic! Mix this with 2 Cups of cold water
2 Tablespoon Dried Onion Flakes
1/4 Cup Captain Morgan Rum
1 Tablespoon Canola oil
2 Garlic cloves – smashed and finely diced
1 Tablespoon Olive oil

4 Tablespoon Cold Butter (divided, see below – 1 Tablespoon for sauteing Garlic just until aromas are released and 3 Tablespoons for stirring in at the end)

Your chops have come just shy of room temp. This is important.
I use cling wrap, about an 18″ long piece. Lay 1 chop 2/3 in and flip rest of cling wrap over.

Serve over Rice, Egg Noodles, Linguini, Risotto, mashed potatoes, bread….. Whatever you have on hand!  I served this over rice.  Topped with crumbled blue cheese and caramelized onions. Remember to top your dish with the fresh grated Parmesan cheese or Blue cheese Crumbles, to your liking!

One last thing.  Fresh Spinach… a few leaves torn by hand is great tossed over the top! Cha!

Stuffed Mushrooms

Stuffed Mushrooms are a wonderful and tasty treat!  You can modify the ingredients to make them taste different every time you make them based on what you have in your fridge and pantry.  I love, love love them and have more recently been making them with lighter ingredients than the traditional heavy cream cheese and bacon that was my go to filling before I started trying to slim down google earth free download windows 10.

Ingredients:
15 firm large white Mushrooms
1/2 Onion chopped fine
1 Tablespoon Butter
1 Tablespoon of Olive Oil
2 cloves of Garlic
Kosher Salt & fresh Black Pepper
1 teaspoon of White Wine vinegar
2 Tablespoons of Sweet Vermouth
1 Tablespoon of Italian seasoning
1 Tablespoon of fresh Oregano
2/3 Cup (left over) cooked ground Turkey (included onions and celery)
4 Oz Cream Cheese
1/3 Cup of Sour Lean

Topping: 1 teaspoon of melted Butter & 2/3 Cup Panko Bread Crumbs

Instructions:
With a damp paper towel, remove any dirt from outside of mushrooms.  Using a spoon, remove the stems and center of the mushrooms and chop stems about the same size as the onions angelspiel pc kostenlos downloaden.

 

In pan, melt butter and oil and saute onions until translucent and then add chopped mushroom caps.  Cook until browned herunterladen.

Season with salt & pepper.

Acorn Squash Risotto with Cod

Ingredients:
1 medium Acorn Squash
Olive Oil
Kosher Salt & fresh Ground Pepper

Cut squash in half, remove seeds and insides by scraping the inside with a spoon.  Drizzle with oil and salt & pepper.  Bake at 350 for about 40 – 45 minutes or until soft music from youtube linux.

The rice will be done when it is tender, yet a bit al dente (from 20-40 minutes).  At this time, remove from heat.  Remove skin from squash and chop into small bite size pieces

Cook Cod in separate fry pan.  Melt butter and oil, saute over high heat (about 3-5 minutes per side)
