Ingredients:
2 Cod Fillets
Dry Rub:
1 Tablespoon Paprika
1 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander
1/2 teaspoon Turmeric
1/2 Lemon Rind

1 Tablespoon Vegetable Oil, divided
1 Tablespoon Butter, divided
1/2 Large Onion
1 Garlic Clove
2 Carrots
1 medium Zucchini
1/2 Cup Green Bell Pepper
1 Cup Yellow, Orange & Yellow Peppers
Salt & Fresh Ground Pepper
The potatoes are “Simply Potatoes”, which are a fresh option that are cleaned, cut and ready to go in the dairy section of the grocery store. I prepared these in a splash of hot oil and butter and seasoned them with salt & pepper herunterladen.
