French Onion Soup with Meatballs

Ingredients:

Meatballs:
1 lb Ground Beef
1 Egg
1⁄3 Cup Panko crumbs
2 Tablespoons Onion Powder
2 Tablespoon Tomato paste
Salt & pepper, to taste

Slow Cooker Chicken With Vegetables

When I know I’ve got a full day and still want a healthier option for dinner that will be quick and easy, but still taste good, I reach for the slow cooker sms message.  Chicken is a good option as it always turns out moist and delicious prepared this way.  I prefer white meat and Bill likes the dark.  Either meat can be healthy because each contains essential vitamins and minerals whatsapp herunterladen schweiz.  I usually have chicken breasts on hand in the freezer and had picked up a bulk pack of  boneless, skinless thighs that were on sale for a ridiculously low price vcds for free.  The kids had been scheduled to come for dinner, but things didn’t work out that night, so I had a lot of meat thawed out and it was the crock pot to the rescue instagram ohne google konto herunterladen!

Ingredients:

6  Chicken Thighs, skinless, boneless
2  Chicken Breasts, skinless, boneless (cut in half)

1 Onion, large chopped
2 – 3 Potatoes, chopped
2 Cups Carrots, peeled and chopped
Peas, frozen or canned, drained
2 Garlic Cloves, pressed 
1 – 2 Cups Chicken Stock
1/3 Cup Half and Half
Fresh Herbs, I used fresh Rosemary 
Salt & Pepper, to taste
Fresh Grape Tomatoes, halved
1 Cup Mozzarella Cheese, shredded

Buffalo Chicken Salad

Ingredients: 

2 Romaine Lettuce heads, chopped
1 pound, Chicken Breasts or Tenderloins, cut into bite size pieces
Sunflower Oil, for shallow pan frying
1 Cup Mozzarella, shredded

2 Green Onions, sliced small
1/2 cup blue cheese crumbles
1/2 Cup Grape Tomatoes, halved
1 Avocado, chopped
Buttermilk Ranch dressing, to taste
Frank’s® RedHot® Original, to taste
Salt and black pepper, to taste
Batter:
1/2 Cup Flour
1/2 Cup plus 2 teaspoons Cornstarch
1 Cup of  Water
1/4 teaspoon Salt
3/4 teaspoon Baking Powder

Roasted Red Pepper Hummus

Our household loves Hummus!  We’ve been experimenting with making a variety of flavors and just think it’s an alternative, healthier option then the Ranch dressing we usually reach for as a veggie dip audio from youtube.  We have purchase hummus pre-made with roasted red peppers from the store, so I got to thinking, why not make our own?  Both Bill and I are also fans of red peppers adler app!  Once they are roasted, their flavor takes on a deep, sometimes smokiness that adds great dimension to a dish.  The hummus really benefits from the addition herunterladen.  I’ve made it by roasting my own peppers, but I’ve also cheated when in a hurry and used the jarred red peppers, which is really just as good kan icloud drive niet download!

Ingredients: 

1 15 oz Can Garbanzo Beans (Chick Peas)
2 Whole Red Bell Peppers, (roasted or about 3/4 cup chopped jarred roasted red peppers)
1/4 Cup Tahini
1 Garlic Clove, minced
2 Tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 teaspoon Cumin
2 Tablespoon Extra Virgin Olive Oil (more to taste)
2 to 3 Tablespoons Water, if too thick

In the bowl of a food processor, combine tahini and lemon juice.  Fresh lemon juice makes all the difference.  I like to use the zest as well!

Process for about a minute. Scrape the sides and bottom and process a little longer to try to whip the tahini.

Add the cumin and whip again.  Scrape the sides and bottom.

Add the olive oil, minced garlic, and the salt and process for about another minute or so and keep scraping the sides and bottom between processing.

Drain the liquid from the chickpeas and rinse well with water.  Start by adding only half of them to the mixture processing them for about a minute.  Scrape sides and bottom again before adding the rest of the chickpeas.  Process until thick and quite smooth.

Add the peppers to the hummus and continue to process for 1 to 2 minutes or until smooth.
If the hummus is too thick or still has tiny bits of chickpea, slowly add water with the food processor turned on; a tablespoon at a time until the consistency is smooth.

Store hummus in an airtight container and refrigerate up to about a week.j

Chicken and Red Grape Pasta Salad

We had picked up some crisp, wonderful red grapes recently and had quite a big bag.  The combination of unique texture and sweet, tart flavor has made grapes an ever popular between-meal snack for Bill lately iphone fotos auf pc herunterladen.  Every time I eat them it makes me think that they belong as a refreshing addition inside of a chicken, pasta salad.  They are relatively low in calories and are fat and cholesterol free windows 10 von microsoft herunterladen.  I usually use any kind of left over chicken, but for a recent family gathering I chose a couple of chicken breasts that I had on hand in the freezer download nltv.  The breast is light meat, as opposed to meat from the thighs or drumsticks, which are dark meat.  Light meat generally contains less fat while still being a good source of protein modelhuurcontract.  They take on flavors easily, but be sure not to overcook them because they can become dry.  This salad is really easy and it’s delicious!

Ingredients: 

1 Box Pasta, cooked to package instructions al dente 
2 Chicken Breasts, boneless, skinless
2 Tablespoons Extra Virgin olive Oil
2 Cups Celery, diced small 
4 Cups Red Grapes, seedless, halved
3 Green Onions, chopped fine
1 teaspoon Onion Powder
2 Tablespoons Italian Seasoning, dry
2 Tablespoons Sugar
1 Cup Mayonnaise
Salt & Pepper, to taste

You can use any pasta you prefer herunterladen.  I tend to reach for the wavy ones, or bowtie type.  I like tubular noodles for hot pasta dishes.  Bring a large pot of salted water to a boil.  Add the pasta, and cook for seven to eight minutes or until al dente; drain, but don’t rinse adobe illustrator cs2 gratis downloaden!  Set aside.

After slicing the chicken into chunks, let the pieces sit in the juice until you are ready to mix them into the other ingredients.

In a medium bowl, combine celery, onions, mayo, salt and pepper; mix well and reserve.

Using a slotted spoon, add the cubed chicken to the other ingredients.  Toss the pasta with the chicken mixture and gently fold in the grapes.  Cover the salad with plastic wrap and refrigerate for at least two to four hours before serving.
