Ground Beef or Turkey Enchiladas

Although we really enjoy it, I don’t prepare a lot of Mexican cuisine – other than taco’s and/or taco salads.  Recently, I decided to prepare Enchilada’s (pronounced as “ehn-chee-lah-thahs”) after spotting some pre-made sauce at the grocery store that got my taste buds going herunterladen.  The term “enchilada” simply means ” dipped in chili”.  Originally, enchiladas are made from a tortilla dipped in chili sauce and stuffed with cheese and beans or chicken and beef, sometimes with spinach din herunterladen.  Mexican restaurants worldwide cater enchiladas with different kinds of filling and when the kids were coming recently for dinner, I decided to wing it and prepare my version based on some ingredients that I had on hand herunterladen!  In Mexico, enchiladas are often enjoyed on city streets. Ingredients: 

2 Cups Turkey, cooked and cubed
1 pound of Ground Beef
Salt and pepper
1/2 teaspoon Coriander, ground
1 teaspoon Oregano, dried
1  Onion, chopped fine
1 Tablespoon Cumin, ground
1 teaspoons Garlic Powder
1 Tablespoon Cornstarch
1 Tablespoon Chili Powder, I used HOT
1 Tablespoon Paprika
1 Tablespoon Brown Sugar
1/3 Cup Chicken Bouillon Powder
1 Tablespoon  Chipotle peppers in Adobe Sauce, minced
2 Garlic Cloves, pressed
1 Can Corn, drained
1 Can Green Chiles, chopped with juice
1 (28 ounce) Can Fire Roasted Tomatoes, chopped with juice
1 Can Tomatoe sauce
4 Cups Shredded Cheddar Cheese, or more to taste

I decided to prepare a pan of enchiladas to include two kinds of meat spider solitaire for free for mac.  I had some left over cooked turkey and started by sauteing the onions and ground beef together until cooked through.  Drain the cooked ground beef, allow to cool and place in it’s own bowl sender.  Next, combine the dry herbs and spices with each meat divided in half.

Microwave tortillas on high for 30 seconds to soften them and to make them more pliable.  Coat the bottom of two baking dishes with with a bit of enchilada sauce.

Using a pan, warm the sauce and dip each tortilla in enchilada sauce to lightly coat on both sides.

Spoon about 1/4 to 1/2 cup of the meat mixtures within each tortilla and filling two pans.  Fold over filling, place eight enchiladas of each flavor in the pans with seam side down.

Top with remaining filling (if any) and pour over the rest of the enchilada sauce.

Top with remaining cheese.

Bake for 15 minutes in a preheated 350 degree oven until cheese melts.

Top with garnishes including cilantro, green onion, sour cream, black olives and chopped tomatoes before serving.  I served ours with black re fried beans and it paired perfectly with the Kunde Chardonnay!

Creamy Polenta with Mushroom Brie

I was preparing dinner for friends recently while on a trip in Napa.  Bill and I really both enjoy Polenta, which is a food product made out of cornmeal download ipsw.  A traditional part of Italian cuisine, polenta is commonly made by mixing coarse, yellow cornmeal with boiling water and a pinch of salt.  Traditional polenta is cooked until it thickens and almost solidifies budget rechnung herunterladen. Ingredients: 

2 Tablespoons Butter
1/2 Red Onion, chopped fine
2 Cups Chicken Stock, homemade is best, but I didn’t have any so I used bouillon cubes
2/3 Cup Polenta
1/4 Cup Sour Cream
7 ounces of Brie Cheese
Salt & Pepper, to taste

I chose a delightful soft-ripened cheese with a gentle mushroom flavor kaspersky antivirus testversion kostenlos.  Bill isn’t a fan of mushrooms texture, but I’ve found he likes the flavor so this is a good way to incorporate them.  Brie is a luscious triple-cream cheese and this gave a earthy and creamy buttery taste in every bite geschenkanhänger weihnachten kostenlos!

In a deep pan, saute the onion in butter until it begins to become translucent hsv ringtone.

Stir in grits and mix until all of the butter is absorbed.

Dissolve bouillon in water and gradually stir it into the grits. Cover and reduce to a simmer. Stir frequently for about 30 minutes or so. The package recommends a long-handled wooden spoon because the Polenta will spit and splatter and could cause burns.

Lower the heat to a low simmer.

Cube the cheese and stir it, along with the sour cream into the cooked polenta.

I served the polenta topped with a homemade tomato and garlic sauce, Cajun style shrimp and roasted vegetables topped with grated Parmesan.  It was wonderful!

Sara’s Homemade Bread

Ingredients:

1 Cup Warm Water 
1 1/2 Tablespoon Active Dry Yeast
1 Tablespoon Sugar
1 1/2 teaspoon Salt
4 Tablespoons Olive Oil
3 to 3 1/2 Cups Bread Flour

Directions:

Manicotti with Zucchini and Ground Meat

Ever since I learned how to make Pete’s wonderful fresh Italian tomato and garlic sauce, I’ve been thinking about what I can prepare with it herunterladen!  I happen to have some Manicotti pasta on hand in the pantry, which are very large pasta tubes usually ridged, that are intended to be stuffed (filled) then baked topped with a traditional Italian white or red sauce Download videos from web pages.  Traditionally, the filling is ricotta cheese mixed with cooked chopped spinach which may or may not include ground meat.  I winged it based on the ingredients I had around the house and replaced the spinach with chopped zucchini hintergrundmusik zum downloaden!  I prepared this dish similarly to what I would put into lasagna layers or stuffed large shell noodles.  Hot pasta bring us great comfort and since it makes plenty, I decided to prepare it for friends Jeff and MaryAnn who were joining us for dinner recently google sketchup kostenlos herunterladen deutsch!  The filling is simple and delicious!

Ingredients:

1 pound Ground Chicken
1 pound Ground Beef
1 Onion, chopped
Zucchini, medium chopped fine
1 Egg, slightly beaten
1/4 Cup Sharp Parmesan Cheese, grated
1 Cup Mozzarella, shredded
1/2 Cup Cheddar Cheese, shredded
1/4 Cup Ricotta
1 Cup Cottage Cheese, drained and pressed – because I was short of Ricotta
2 Tablespoons Italian Seasoning, dried
1 Tablespoon Oregano, fresh chopped
2 Tablespoons Balsil, fresh chopped
2 Tablespoons Basil Pesto
Salt & Pepper, to taste
Prepared Tomato Sauce

Place about a cup of the tomato or marinara sauce in a baking dish wetransfer auf ipaden.  Spread it around to cover the bottom.  Either place the mixed filling into a piping bag or simply use a spoon along with a long handled spoon to help push the filling into the pasta.  Hold a cooked manicotti shell in your hand and place the filling inside the shell.  Allow it overflow on both sides.

Place the filled shell into the sauce-lined pan.  Repeat with remaining manicotti and fill the pan with the stuffed shells, until you run out of shells and filling.  You should be able to fill 12 to 14 shells. (I made a second pan to freeze for a future meal)

Cover the pasta with your tomato marinara sauce, using about two to three cups of sauce.   (I got carried away, but I recommend NOT covering the ends of the pasta, because once baked, they are hard to separate!  You can use less sauce.)  Sprinkle additional shredded shredded and mozzarella cheese on top.  Cover with foil and bake for at least 50 minutes or until hot through.  Remove foil and bake an additional 10 minutes until the cheese is melted and browned.

Ingredients:
1 – 4 large eggs (if cooking more eggs, work in batches)
