Lamb Shoulder Chops (Iceland)

In recent months, I’ve encountered Chimichurri.  Not only is it fun to say, but it’s a wonderful, fresh sauce that brightens anything it comes in contact with download maps for free.  I’ve been finding it on a lot of menu’s and have been seeing it prepared with various chefs on the Food Network.  It seems that this sauce appears, like many ingredients (like Polenta) to be experiencing a recent flash of widespread popularity in the United States and everybody is using it Download photos from icloud on macbook.  Chef Bobby Flay says that this sauce is Argentina’s answer to barbecue sauce.  He suggests letting it do all the work as both a marinade and a dipping sauce download jewel quest for free in full.

Ingredients:
3 Lamb Shoulder Chops
Grape seed Oil

Mint Chimichurri:
1 Cup fresh Mint Leaves, chopped fine
1/2 Cup fresh Flat-leaf Parsley leaves, chopped fine
1/3 Cup fresh Cilantro leaves, chopped fine
4 Garlic Cloves, pressed
1 Serrano Chile, roasted and seeded and chopped fine (maybe a half, it was hot!)
1/2 Lemon, juice & rind
2 Tablespoon Pure Maple Syrup
2 Tablespoon Dijon Mustard
1/2 Cup Extra Virgin Olive Oil
Salt & freshly ground Black Pepper

Roast the pepper over an open flame charring it completely gmx attachment.  Place it in a bowl, covered with plastic wrap and allow to steam for about ten to fifteen minutes before removing the skin, stem and seeds.  Chop very fine ms projekt!

Chop the fresh herbs and combine with the other ingredients listed above for the Chimichurri neuen tonie herunterladen.  Then place the lamb chops in the bowl, turning to evenly coat the meat.

Marinate at room temperature for an hour (or in the refrigerator for at least two hours).

Remove the chops from the Chimichurri/marinade and discard the marinade. (If there is a lot of sauce, you may want to lightly scrape the remaining marinade off the chops.)  Preheat a large cast-iron grill pan over high heat before placing the chops in the pan.  Cook until they are browned well, about five minutes before turning to cook on the other side.  Reduce the heat to medium low, and cook until medium-rare, about two to four additional minutes until they reach an internal temperature of 140 degrees.  Allow the chops rest for five minutes before serving.

Bill and I thought that the fat is like butter, the meat was very tender and flavorful, but we found that they have a lot more fat than we prefer so I’ll go back to normal style lamb chops in the future.

We enjoyed a simple salad made with Arugula and fresh Kale that was topped with my vinaigrette and a terrific cheese with cranberries and pumpkin seeds.

The chop was served on roasted red pepper sauce, (I will post very soon!) a side fresh asparagus and a sweet potato latke.  Bill paired our meal with a 2011 Famiglia Meschini Gran Reserva Malbec.  This wine was dry and full-bodied with a slightly tart acidity.  It was terrific!

Cauliflower Soup

Our friend Lisa has been very kind and patient with me…  She first brought this soup over during a social gathering and since, I’ve made it several times download all photos van facebook!  But recently, I was looking the recipe and needed her to send it again!  I modified quantities of some of the ingredients, but she gets the credit for this delicious soup download printer drivers for free!

What’s unique about it is the use of Evaporated milk, also known as dehydrated milk, rather than cream.  It is a shelf-stable canned milk product with about 60% of the water removed from fresh milk download maps for free.  It’s used most often for desserts and baking due to its unique slightly caramelized flavor.  The evaporation process naturally concentrates the nutrients and the calories, so evaporated versions are higher in calories, while more nutritious than their fresh counterparts Download photos from icloud on macbook.  If you’re watching your weight, you want to look for skim or low-fat varieties, though I’m not sure the soup would taste the same.  While I was preparing this, I was reminded by the amount of butter (and flour) in this recipe and realized that this is a treat and not something I will be making very often download jewel quest for free in full.  I prepared it for our fall “girls weekend” hosted at Linda’s in Alexandria and everyone seemed to enjoy it!

Ingredients:

2 Heads Cauliflower, (2 bs) cleaned and chopped into small pieces
14 Cups Chicken Stock, (homemade is best – I used 8 Cups, plus 4 Cups water and better than bouillon)
2/3 Cup Better than Bouillon, Chicken
3 Sticks Butter
1 Onion, large, diced
4 Cups Celery, chopped
2 Tablespoons Fresh Thyme, chopped
2 Tablespoons Thyme, dried
1/2 Cup Fresh Thyme socks/leaves, to soak in soup
3 Cups Flour
4 Cans Evaporated Milk
Salt & Pepper, to taste
Shredded Cheddar Cheese, for garnish optional

In large soup pot, sauté’ onion and celery in the butter until they start to become translucent herunterladen.  Add chopped thyme.

Stir in the flour, turning frequently and cook over medium high at least five minutes; until the flour begins to brown herunterladen.

Add milk and stir gently, adding chicken stock (and cauliflower) until it becomes a creamy consistency gmx attachment.

Allow to cook at least ten minutes over medium heat so that it thickens.  Add additional fresh bunch of thyme (optional) for more fresh flavor.  Season with season with salt & pepper, to taste.  For a thinner consistency, add additional stock

I am thinking I want to add carrots as I love color and added vegetables next time.

Pistachio Crusted Walley

Ingredients:

2 Walley Fillets
3/4 Cups Pistachios, coarsely chopped
3/4 Cup Panko Bread Crumbs

Salt & Pepper, fresh ground to taste
1 Egg, lightly beaten (I used egg whites that I had on hand)
2 Tablespoons Grapeseed Oil

Cedar Plank Salmon

Oh boy, it’s not even November and I’m missing summer already.  It has been “grey” outside and there has even been little white flakes falling over the last few days apps für windows 10en.  Although I do use the grill all year round, you can see from the pictures that this dish was prepared during our sunny, warmer months of Minnesota.  I find that grilling salmon on a wooden plank gives it a wonderful smokey flavor download manager herunterladen.  Grilling planks can be found just about anywhere these days and when you soak them in water beforehand, it helps keep the fish moist and tender while it cooks Download farming simulator 15 for free.

Ingredients:

1 Cedar Plank, soaked

Apple, Berry Crisp!

I often try to include some healthy tips and/or benefits to some of the key ingredients within my dishes, but it would be a stretch to say this dessert is healthy at all idealo app herunterladen.  Hey, it does give you a bunch of fruit!  And the oats, via their high fiber content, are known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream, right herunterladen?  Well, let’s just call this a treat because these items blended together are just that!  I was inspired to make something warm and delicious because I was having Bills folks over for dinner, but also because I had come across some apples and mixed fruit that I had on hand in my freezer happy birthday lied herunterladen.  It’s very easy and really heavenly!  I made two dishes so that I could bring one to work to share with the team.

Ingredients:

4 Cups Apples, peeled, cored and sliced
2 Cups Mixed Berries
2 Cups Blueberries
1/2 Cup Brown Sugar
1/2 Cup Sugar
2 Oranges, juice only
4 Tablespoons Flour
1 Tablespoon Corn Starch
1 Tablespoon Cinnamon
1 Tablespoon Nutmeg, grated
1 teaspoon Salt

Topping:
1 1/2 Cup Flour
1 1/2 Sticks Butter, some cold and some room temperature
1 Cup Brown Sugar
1/2 Cup Sugar
Cinnamon
1 Cup Oats
