Chopped Salad with Green Goddess Salad Dressing

Bill was the inspiration to create this salad after we had eaten something similar recently while dining out at a great wine bar.  I was on a mission to find Israeli couscous, because it isn’t readily available in any of the markets near our home duolingo frans appen.  Fortunately, I was able to find it at Trader Joe’s not too far from home.

Ingredients:

Romaine lettuce
Red Grapes, halved
Cucumber, julienned
Israeli Couscous, cooked
Parmesan Cheese, shaved
Marcona almonds*

I created a “Green Godess” salad dressing for the salad:
1 Cup Mayonnaise
1 Cup Sour Cream, light
1/2 Lemon, juice and rind
1/2 Lime, juice and rind
1/2 Cup Chives, chopped fine
1/2 Onion, minced
2 Tablespoons Fresh Parsley, chopped
2 Tablespoons Parsley, dry
2 Garlic Cloves, pressed
1 Tablespoon Tarragon, dry
3 Tablespoons Tarragon Vinegar
1/2 Tablespoon Thyme, fresh
1 Tablespoon Worcestershire Sauce
1 Tablespoon Fish Sauce (because I didn’t have any anchovies!)

Prepare the couscous according to package directions and set aside to cool.

Chop the lettuce and julienne the cucumbers before combining with a light coating of the dressing.  (Less is best because you can always add more if you would like) The crunch of the crispy romaine, cucumber, and almonds are wonderful with the chewy couscous.  I love the sweet grapes with the richness of the shaved parmesan, against the tart goddess vinaigrette.

Top the salad with the chilled couscous, grapes and shavings of a good quality parmesan cheese.

We enjoyed this salad along side of a grilled pork chop that had been drizzled with Trader Joe’s Carolina Gold BBQ Sauce.  This is a rich, thick golden-hued, mustard-based sauce that is sweet and smoky with a hint of molasses.  It paired just the right with a perfect blend of spices.  Bill chose a  Napa Valley Cab to sip on!

Cauliflower Cheesey Bake

We were leaving town and I had an entire package of cauliflower that I wanted to use up before we left so that it wouldn’t go to waste.  It was a two pound package that I had recently picked up at Costco and was equivalent to about one and a half large heads cleaned sonic dash kostenlos herunterladen.  I’ve always like this vegetable, but it hasn’t been one of Bill’s favorites.  He has been a good sport trying additional veggies and thought that he might eat it if I changed it up or mixed it in with mashed potatoes herunterladen.  Cauliflower is naturally low in fat and carbohydrates.  It is high in fiber and is a nutritional option offering a healthy dose of potassium, fiber, and folic acid excel download for free.  After citrus fruits, cauliflower is your next best natural source of vitamin C, an antioxidant that helps combat cancer.

Ingredients: 

2 Lbs music illegally or legally. Cauliflower, cut into floweretes
4 Tablespoons Butter
1/3 Cup Flour
1 Tablespoon Dijon Mustard
2 Cups Cheddar Cheese, shredded (I used smoked) 

1 Cup Panko Crumbs
2 Tablespoons Fresh Parsley, chopped
1 teaspoon Sweet Paprika
2 Tablespoons Butter, melted

Sprinkle over the cauliflower mixture and bake for 15 to 20 minutes, until the casserole is bubbly and topping is browned.

The cheese will be thick and creamy.  We served this along side of a simple piece of sauteed fish with fresh dill and creme’ fraiche.

Grilled Seared Tuna Korean-Style

Where did our summer go?  In Minnesota, it goes quick and we grill as much as possible.  Even when there is snow, you’ll see me firing up the grill out on the back deck call of duty app for free.  This was a recent preparation of Ahi Tuna.  I wanted some variety over the typical Asian flavors I prepare when I found this Recipe (courtesy of Leslie Glover Pendleton) and changed it up slightly herunterladen.  She says this aromatic marinade is used to flavor and tenderize beef in Korean cuisine, but she doesn’t recommend marinating fish longer than two hours, as the enzymes in ginger can over-tenderize it die drei fragezeichen kostenlos downloaden original.  I marinated our steaks for about an hour.  This is a simple dish and is wonderful with the smoke flavors caused from grilling really made it a great meal adblocker downloaden gratis!

Ingredients:

1 1/2 Pounds Tuna Steak (1 inch or thicker)
1/2 Cup Soy Sauce
2 Tablespoons Sesame Seed Oil
1 Tablespoon Fresh Ginger Root, minced
3 Tablespoons Sugar
3 Green Onions, chopped small
3 Garlic Cloves, pressed
1/4 teaspoon Salt
1/2 teaspoon Black Pepper, freshly ground

Italian Style Meatloaf

Recently, I knew I was going to have a few of Bill’s buddies over for dinner.  I had taken a couple of packages of “meatloaf” ground meats from the freezer, which was a mixture of lean ground beef and pork microsoft windows 10 for free.  This is my favorite combination for a meatloaf and I figured it was hearty enough to feed the guys plenty.

Meatloaf is simply a dish of ground meat that is formed into a loaf shape, mixed with egg and breadcrumbs and then baked chrome pdf anzeigen statten.  You can form it by hand and bake it on a flat baking pan if you prefer over a loaf pan, but since I had a large batch to work, I used a shallow baking dish and I created this dish by utilizing other ingredients that I had on hand in my fridge and pantry createing an Italian style meatloaf for a rich and delicious change Cash book revenue expenses free!

Ingredients:

2 lbs. Ground Pork

2 Tablespoons Parsley, dry
2 Tablespoons Oregano, dry
1 Tablespoon Italian Seasoning, dry
1 Tablespoon Basil, dry
Salt & Pepper, to taste

I had some left over homemade spaghetti sauce but you could use prepared pasta sauce amazon movies pc.  Combine the slightly beaten eggs with about 3/4 Cup of the sauce and the parmesan cheese.  Mix well with fork.

In a large bowl combine the ground meats with the bread crumb mixture and gently stir in the egg combination but don’t over mix with hands because it could get tough herunterladen.

Spray pan or baking dish with non stick cooking spray and form meat mixture into a loaf.  Top with the remaining sauce.

Bake the meatloaf in a 350 degree oven (uncovered) for one hour, or until the internal temperature reaches 150 degrees.

Sprinkle with about a cup of the shredded cheese and return to the oven for five to ten minutes until cheese is melted and browning.  Allow meatloaf to rest for 10 minutes and the internal rises to 155 degrees.  Allow to rest for five minutes and then lice to serve.

We had this along with a couple of side dishes and some great wine!

Corn Chowder

Ingredients:

1 Stick of Butter
2 Large Onions, chopped
Extra-virgin olive oil
2 Cups Celery, chopped
2 Cups Carrots, chopped
12 Garlic Cloves, pressed
6 sprigs Fresh Thyme, leaves only
4 Tablespoons Thyme, dry
4 Large Russet Potatoes, peeled and chopped
12 Large Whole Sweet Corn Cobs(or more small cobs)
6-8 Cups Corn Kernals, roasted cut from cobs
Water
16 Cups Corn Stock
1/4 Cup Flour
1 Pint Half & Half
Salt and freshly ground black pepper, to taste
1 Whole Acorn Squash, roasted, peeled and cubed (because I had it, used to thicken)
4 Tablespoons Better than Bullion, Chicken
2 Tablespoons Better than Bullion, Ham

Add the Celery and onions and cook for an additional eight to ten minutes until they start to become soft.

Peel and chop the potatoes into small cubes.

Dust the vegetables with flour and stir to coat everything well.  Add the herbs, stirring and cook for an additional five minutes.

Add the better than bullion to the corn stock; to taste and pour the seasoned stock into the vegetables stirring to avoid lumps and bring to a boil.

Add the cooked squash (if you have it on hand) and the potatoes; bring to a boil and boil hard for about eight to ten minutes, until the squash dissolves and the potatoes break down (this will help to thicken the soup and give it a good texture).

Add the cut kernels to the soup and stir in the half and half (or cream).  Season with salt and pepper; to taste. 

Garnish with chopped fresh flat leaf parsley, if desired.
