Brined Pork Chops

I was having all the kids over recently for Sunday dinner and was looking for something “different” from the items I had on hand in the freezer.  I had recently picked up some nice bone-in pork chops at Costco, so I sent off a text to Nick, learning that chops are one of his favorites!  I had also just previewed a segment on Diners Drive-in’s and Dives where pork chops had been prepared and thought that they sounded great!  I decided to brine them because brining any meat can add a significant amount of moisture to it before you cook it, making it juicier and more tender!  I prepared these chops in the oven because it was really cold outside, but I would recommend grilling them if you can download nltv!

Ingredients:

6 Bone-in Pork Chops
Oil
Lawry’s Season Salt

Brine:
2 Tablespoons Coriander, ground
2 Tablespoons Granulated Garlic
4 small Bay Leafs
1/4 Cup Salt
1/3 Cup Sugar
1 Quart Water
2 Carrots, chopped
1/2 Medium Onions, chopped
2 Ribs Celery, chopped

To make the brine combine all of the ingredients and stir.  submerge the pork chops in the brine and refrigerate for at least 18 hours and up to three days modelhuurcontract.  I learned this basic technique from Ann Burrell, of Food Network and I’ve found that mixing the ingredients within your storage container works just fine too.  Simply stagger the chops in a seal-able dish, cover with water and sprinkle each of the other ingredients on and around them.  Cover and shake well.  Turn and toss a couple of times throughout the brining process herunterladen.

After the allotted time, let chops and brine to come to room temperature and then remove the chops and discard the brine.  Rinse off chops quickly with cold water adobe illustrator cs2 gratis downloaden.

Sear chops in cast iron pan quickly on each side and then place them on a baking sheet or pan Download songs android.  Or just grill them outside on a hot grill!  If cooking indoors, stand them up so the fat edge is in contact with the hot pan to crisp up the fat edge.  Bake the chops covered with foil for 10 minutes then turn them over baking uncovered for another 10 minutes until the internal temperature is around 150 degrees.  The chops will continue to cook once you have removed them from the oven (or grill) covered with foil.  Allow them to rest for five to ten minutes in a warm place before serving.  The meat should be cooked medium for very juicy chops mod.

Green Curry Mahi Mahi

Bill is a fan of Curry, but I just don’t have a lot of experience with preparing too many dishes with it.  I did a little research and learned that Green curry is a variety of curry primarily in Thai cuisine.  (I love Thia dishes, and I’ve eaten Green Curry out before, so I was eager to try this too!)  The name “green” curry derives from the color of the dish herunterladen. Green curries tend to be as hot as red curries, both being hotter than phanang curries.  However, green curries, regardless of heat, have a definite and desired sweetness that is not usually associated with red curries.  We had just eaten a course including Lobster and green curry at a wine dinner at Nectar herunterladen.

Ingredients:

2 Mahi Mahi Fillets

1 14 oz. Can Green Curry Sauce
White Rice, prepared
1/2 Onion, chopped1/2 Green Pepper, chopped
1/2 Orange Bell Pepper, chopped
3 Carrots, medium – peeled and chopped

Saute vegetables over medium high heat in a bit of oil beginning  with the onions.  Once they become translucent, add the garlic and cook for another minute or two.  Combine the other vegetables with the onions and cook over high heat tossing frequently just until vegetables are cooked slightly, but still firm.  Remove them from the pan and set aside.  In the same pan, sear the Mahi Mahi fillets on each side, but don’t over cook the fish.  Remove the fillets (it’s ok if it’s still pink in the middle as it will continue to cook in the sauce)

Cube the fish and return both to the pan.  Combine with the curry sauce and allow to simmer on low until fish is opaque and cooked through free pdf gratis herunterladen.

Serve over cooked rice.  Thai green curry can be made with all kinds of meat windows 1809 manuell herunterladen. However, the more popular ones are made with beef, pork, chicken, and fish.  The green curry is usually eaten with rice as part of a wider range of dishes in a meal.  I had just picked up some nice (frozen)  Mahi Mahi at Costco and wasn’t sure what to expect.  I love ordering fish out, but as you know in Minnesota, it’s challenging to get good fresh fish.  We were pleasantly surprised at how quick and delicious this meal was free pc games to!

Shrimp & Lobster Claw Risotto

Risotto is one of Italy’s best known culinary classics and for good reason!  It is terrific!  This famous rice dish comes in many flavors, but the rice and technique remain the same to produce this delicious dish.  Risotto is a class of Italian rice dishes cooked in broth to a creamy consistency.  Many types of risotto contain butter, wine and onion.  We are big fans and change it up based on seasonal ingredients and whatever I happen to have on hand in my fridge, pantry or freezer!  In Italy, risotto is often served as a first course, but depending on what you put in it, it can surely be eaten as a main dish horse spiele kostenlos downloaden!

Bill’s been wanting to eat up the remaining lobster claws I’ve had in the freezer that I had picked up at Costco, so I came up with this delicious variety for our dinner the other night.  It was very tasty and delicious!  Just know that the rice in risotto takes a good 40 minutes to cook, so be sure and allow yourself enough time for the other preparations when planning your meal download ipad mp4.

Ingredients:

4 Large Lobster Claws, cooked and shelled
8 Jumbo Shrimp, cleaned and deveined
1 Can Corn (if I had it, or it was in season – I would use one or two fresh ears of white corn)
6-7 Cups Stock (I used my chicken homemade stock, but have learned “Better Than Bouillon” brand has a lobster base!)
3 Packets of Seafood Boosts
2 Shallots, chopped fine
1 Tablespoon Butter
2 Tablespoons Extra Virgin Olive Oil
2 Garlic Cloves, pressed
1 1/2 Cups Arborio Rice (best for risotto)
3/4 Cup White Wine
1/4 Cup Half and Half
White Pepper, to taste
Salt, to taste
1 Cup Grated Tuscan Blend (Parmesan Cheese & Pecoriano Romano)

Start by heating the stock on medium heat but under a boil amazon movies pc.

Cheesy Hash Brown Potatoes

The kids were coming over for dinner last Sunday and Nick’s fiance Bri requested “cheesy potatoes”.  I have a recipe within a box that I’ve had for years of a potato dish that my mom and oldest sister Shym used to make.  (It’s funny when I’m looking through oodles of recipes I’ve written down, how my memory works allowing me to remember just how big or small the size of paper was, and the fact that the paper had a torn lower right corner) Well I found it, but I decided to lighten my version up a bit!  I omitted a lot of the fat by using light soup and cheeses.  I also wanted to add some creaminess so I added light sour cream wow for free.

I always plan to make enough food so that the kids can bring home left overs.  Michelle’s boyfriend Jacob had to work and was unable to come for dinner, so I planned to send some home for him because he is a potato lover!  I was also having the girls over the next night so I used about a third of the mixture in a small baking dish that I would  share with them.  So if you don’t have a big gang to feed, I would recommend cutting this recipe in half!

Ingredients:

2 lbs herunterladen. Hash Brown Potatoes
1 Onion, medium chopped
1 Tablespoon Butter
1 Tablespoon Oil
1 Cup Light Sour Cream
2 cans Cream of Celery Soup (one Healthy Choice, low fat)
1 can Cream of Mushroom
2 packages of 1/3 Less Fat Cream Cheese, softened to room temperature
2 Cups Cheddar Cheese, grated & divided
2 Cups Reduced Fat Cheddar Cheese, grated & divided
1 Cups Mozzarella Cheese, grated
1 Cups Reduced Fat Mozzarella Cheese, grated
Salt & Pepper to taste

Saute the onions in butter and oil in a skillet over medium high heat until they become translucent.  Season with Salt & pepper.  Add the cream cheese and stir until all of the cheese is melted microsoft outlook 2013 free full version. Stir in canned soups and mix until blended completely.

Buffalo Chicken Flat Out Pizza’s

I spotted a new “Flat Out” product in the store that I thought looked good.  They were called Thin Crust Artisan Pizza, which I thought was interesting because I’ve been making “Flat Out” pizza’s for years.  When my daughter Michelle and her boyfriend Jacob were coming over recently for dinner I was wondering how to change up the toppings to include ingredients that they really enjoy.  I started looking through the items that I had on hand in my fridge and pantry and since we all love Frank’s Hot Sauce and as the slogan goes “We put that shit on everything”  I thought that would be a hit with them.  (I really don’t put it on everything, but they do and I think Bill just likes to walk around while I’m cooking saying that!)  Well, these turned out delicious, but I have to admit, I think I’ll go back to using the original flat out’s because these seemed dry and even cracked, compared to the success I’ve had using the original or light traditional low fat, high in fiber kind euro truck simulator 2 online kaufen unden.

Ingredients:

6 Flat Out Pizza Crusts
1 Onion, medium chopped
2 Garlic Cloves, pressed
3 Tablespoon Oil, divided
1 Tablespoon Butter
6-8 Chicken Tenderloins
