Grilled Yellowfin (Ahi) Tuna and Couscous

We went to dinner at a pub in St. Paul with some friends recently.  A place where we had never been.  I looked at the menu on-line before hand so I could try to find a healthy choice.  Ahi Tuna was one of the options.  The description was Grilled rare and sliced, with red wine reduction and garlic-Jack Daniels mushrooms do not download firefox pdf but open it.” Ok, so I’ve never had tuna with red wine reduction, but went for it anyways because the other options on the menu looked a lot like “bar food” and pretty unhealthy.  Well, it came cooked pretty well done, wasn’t sliced and I’m certain the wine was no good that they reduced.  Ewwww lieder aus youtube herunterladen legal.

Yellowfin tuna are found in tropical and subtropical oceans around the world.  Although we have 10,000 lakes, there are no oceans in MN.  There is only one local grocery store close to me that I am able to find quality Yellowfin Tuna and they sell out quickly herunterladen! Ingredients for Marinade:
2 Tablespoons Sesame Oil
2 Tablespoons Soy Sauce
1 Tablespoon fresh grated Ginger
1 Garlic clove

dash of Salt
1 Tablespoon Brown Sugar

Couscous Ingredients:
1 Cup water
1 teaspoon Sesame Oil
1 teaspoon Hoisin Sauce
1 Tablespoon Butter
1 Cup Couscous
1/2 Cup Onion
2 Green Onions
1 Carrot
2 Tablespoons fresh ground Ginger
1 Garlic clove
1/2 teaspoon Chicken Stock Paste (soup starter)
1/3 Cup Pine Nuts toasted

Chop the onions and saute them in a small sauce pan in the butter ppt for free.   While the onions are cooking, toast the pine nuts over medium low heat in a dry fry pan.

 

Prepare the other vegetables including peeling and grating the ginger and carrot.  Because fresh ginger perishes quickly, a great way to store it is to simply peel it and then keep the knobs in a zip tight baggie in the freezer.  Just remove it and grate as much or little at a time as you desire herunterladen!

 

After onions are soft and translucent add the carrots, ginger, sesame oil, Hoisin and crushed garlic.  Cook for about a minute before adding water and soup stock.

Heat to boil and add in dry couscous.  Stir quickly, turn off heat, cover with lid and allow to sit.

On a hot grill sprayed with non-stick cooking spray, sear tuna and allow to cook without moving for about five minutes per side.

 

Allow to rest five to ten minutes.  Uncover couscous and fluff with fork.

We enjoy this wine in moderation as it is no longer made… It was a find on a special trip with Joe and Lisa and I just had to have a case!

Sweet Pepper Caprese Salad

This is a fresh and delicious variety to the traditional Caprece.  We love the baby red, yellow and orange peppers that you can find in bulk at Costco.  These peppers are wonderful cooked, stuffed, roasted or just cut up and used fresh on top of a fresh salad.  Both Bill and I love Balsamic and anything that comes close to a Bruchetta, so this was a quick version one evening for a side salad spotify app for free!

Pot Roast

If you’ve never tried making a pot roast… just do it!  It’s easy!  This is a crock pot dish that I like to prepare the night before and simply plug-in before work.  The slow cooking does all of the magic.  Nothing beats the delightful and powerful smell that greets you when you open the door after a long day at the office ihre gedcom-datei herunterladen.

This isn’t just a meal for the winter.  Although it is warm and comfort food, it is also nice because in the preparation, you don’t have to heat up the house in warm weather because you don’t have to start the oven tahuna tool herunterladen!

 

You don’t need a bunch of fancy ingredients and in fact, it’s a use what’s in the refrigerator recipe!  I choose a chuck or an arm roast.  They are inexpensive and with the marbling within, cook down to the most delicious and fork tender roast you will ever enjoy herunterladen!

For the main ingredients along with the arm roast I used a half a package of simply potato wedges, a couple of carrots, an onion, fresh garlic and some cooked potatoes and onions from another meal amazon prime music auf pc herunterladen.

 

Start by seasoning your beef with salt and pepper.  Then heat a few tablespoons of oil and brown your meat in a saute pan over medium high heat creating a nice dark crust.  Place the raw potatoes and some onions in the bottom of a crock pot that has been sprayed with non stick cooking spray.  You can use some water and something like dry onion soup mix if you don’t want to add much of your own seasonings download firefox older versions.

After a number of hours slow cooking, the entire dish will be darker in color and meat should be perfectly tender.  If you have a lot of fat on the beef, you may need to remove it from the crock pot and separate the fat before placing the meat back with the vegetables and cooking liquid.  Typically, I’m able to just cut the roast into chunks right inside the crock pot and serve it family style herunterladen.

Healthy “Creamed Spinach”

Bill and I have been trying to incorporate more “healthy” options into our daily diet.  Adding dark vegetables can be challenging as Bill tends to be “afraid” and a little fussy.  I assure you that his go to choice of veggie did not used to be spinach!  The more I can get him to try things, the more open-minded he has become.  I like to try to change things up and include variety in our daily menu.  After eating out and having had some “not so healthy” creamed Spinach, I thought I would try to impersonate the “creamed” version with what I had on hand herunterladen!

Ingredients:
1 Tablespoon Butter
2 Tablespoons Sour Cream
1/3 Cup Ricotta (low-fat)
1/2 medium Onion – chopped
1/2 Zucchini – chopped
1/2 pound of fresh Spinach
Salt
Pepper

Although we are cutting back on calories, I still think all things are ok in moderation.  I still use real butter some of the time, but will also use low-fat ingredients when ever possible.  If it doesn’t taste good, we will not stick to any type of plan and the “fat-free” version doesn’t work well for us most of the time navcore downloaden.

Potatoes were seasoned with salt and pepper, as well as with fresh chopped fresh rosemary – sautéed in a small amount of vegetable oil over medium heat on stove top until browned and cooked through.  Pork tenderloin was baked according to package instructions and topped with a prepared Chipotle Raspberry sauce I picked up in the specialty area of CUB – uncovered

Chipotle Chicken Chili

This was a simple but delicious dish inspired completely with the “what’s on hand” concept!  But you could prepare this yourself for an easy crock pot dish download harry potter and the feuerkelch film for free.

A friend of mine works for a kitchen and they don’t refreeze food.  Occasionally there is inadvertently an abundance of something.  Since she hates to have anything go to waste and she knows I’ll create something out of it… she stopped by my office one day a few weeks back (when it was still cold outside!) and dropped off about five pounds of Chipotle seasoned pre-cooked chunked chicken.  (we have a refrigerator to conveniently store it in until the drive home.) They had planned to use the meat for chicken taco’s but when we had an unexpected snow storm, very few of their guests were able to attend their gathering joyn app kostenlos herunterladen.

To put it to good use, I threw together this very simple chili.  You could easily prepare by cooking your own chicken!

Ingredients:
1 large Onion
5 lbs sms message. of Cooked Chicken, chunked
Chipotle seasoning
3 Garlic Cloves
6 Cups Water

1 Tablespoon Cumin – ground
1 Tablespoon Coriander

This was prepared in my large crock pot.  You could modify this to make a smaller batch and if you chose, you could modify this by adding more bean ratio than chicken meat if you prefer vcds for free.
Start by spraying the crock pot with non-stick cooking spray.  Add the entire chopped onion to the bottom of the pot.
Add the crushed garlic and sprinkle with the cumin and coriander.  (because the meat was fully seasoned, I did not add additional salt or pepper)

Drain the beans, but don’t rinse them (This will help thicken your chili)  add to the pot and mix gently
