Fondue

One of my favorite appetizers at the Redstone American Grill is the Jerk Chicken Fondue.  Back in March, 2011 they posted their recipe prepared by the Eden Prairie, MN Head Chef Kevin on their official Blog herunterladen.  Their fondue is quite simple; 6 oz. Smoked Gouda Cheese warmed slowly to 155 degrees; don’t boil, as the cheese will break and then simply pour it into a fondue pot with candle to remain warm directx 12 download kostenlos.  They go onto explain how to prepare the Jerk Chicken too.  I was inspired to make fondue for a recent gathering because I think it’s something special herunterladen.  I decided to prepare a recipe that I had observed Tyler Florence make, who’s a Chef that has several Food Network shows.  Tyler’s 43 years old now, but graduated from the College of Culinary Arts at the Charleston, South Carolina campus of Johnson & Wales University twenty years ago herunterladen.  I’ve been watching him for years and like him because his recipes are generally pretty easy to follow.  My version is basically his with many of the same “dippers” that Redstone serves download movies.  Next time I’m going for the Smoked Gouda because Swiss isn’t my favorite, but the cheese I used is what I had on hand.

Ingredients:

1/2 pound Gruyere Cheese, shredded
1/2 pound Imported Swiss Cheese, shredded
2 Tablespoons Cornstarch
1 Clove Garlic, pressed
2 Tablespoons Extra Virgin Olive Oil
1 Cup White Wine (dry is best)
1 Tablespoon Lemon Juice
1 Tablespoon Brandy
1/2 Teaspoon Dry Mustard
Pinch Nutmeg

Jerk Chicken:
6 – 8 Chicken Tenderloins, cut into bite sized pieces
1 Tablespoon Allspice
Dash Cinnamon
2 – 3 Tablespoons Brown Sugar
Red Pepper Flakes, to taste
Dash Ground Cumin
Salt & Pepper, to taste
1 – 2 tablespoons EVOO
2 Tablespoons Spicy Pepper Mix, I like Mezzetta
2 Tablespoons Scallions, sliced on a bias

Shred cheese and gather your ingredients Russian songs for free.  In a small bowl, coat the cheeses with cornstarch and set aside.

Over medium heat, add the wine and lemon juice and bring to a gentle simmer aris free chip. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue.  Once smooth, stir in the mustard and nutmeg horse haven.

Arrange an assortment of bite-sized dipping foods;  I chose toasted sliced croissants and crispy pumpernickel croutons.  Made them by cubing the bread, drizzle with EVOO and sprinkle with salt before baking at 400 degrees, turning frequently for about five to ten minutes.

I cooked pork and beef tenderloins cubed and seasoned simply with salt and pepper and Chicken.  To prepare the jerk chicken, place marinated chicken in a hot skillet with oil and cook thoroughly.  Toss the chicken with the pepper mix and scallions. Plate.  Some other suggestions are Granny Smith apples and grapes.   Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

Scallops with Chorizo Cream Broth

I came across some Chorizo in my freezer and was thinking of different ways of cooking it.  The date impressed me and serves as a reminder of why I love my FoodSaver so much sender!  It had been frozen for over a year and was in perfect condition. I know if it had been stored in a zip type bag, it would be freezer burned and icy how to music on android.  Chorizo  is a pork sausage that has many different varieties and is eaten all over Spain.  Bill loves it and most chorizo that you would buy in stores has been cured antivirenprogramm für windows xp kostenlos downloaden.  “Fresh” chorizo is also available. I found this Chorizo, which was fresh and much softer at our local CUB.  They make the fresh sausage in house, in which case it must be cooked before eating herunterladen.  It can be grilled, fried, or simmered in liquid.  It is commonly used as an ingredient in other dishes, such as stews and soups.  Chorizo is made by chopping or grinding the pork and “marinating” it in spices eurocode 3 herunterladen. Ingredients: 

1 Chorizo Sausage link (fresh)
1 Cup Water
1/3 Cup Onion, sauteed
1 Celery Stock, chopped
1/3 Cup Half & Half
1 – 2 Tablespoons Rosemary, fresh chopped
Tomatoes, fresh sliced
Scallops
Extra Virgin Olive Oil
Polenta, prepared
Salt & Pepper, to taste

Start by crumbling half of the link of Chorizo into a small sauce pan tony hawk pro skater 2 full version for free.  Combine with water and bring to a low simmer.

Slice the other half of the link into small disks and add onion to the Chorizo and water to begin a broth herunterladen.

Add chopped celery and fresh rosemary to broth and allow to simmer on low, reducing the liquid while you prepare other items including the Polenta Download instagram windows 10.  (You can change the cheese and serve it warm and soft as well)

Brown both sides of the Chorizo for about a minute or so within a very hot cast iron skillet.  Set aside and use the fat to flavor the seared scallops.

Make sure the scallops are dry and season with salt and pepper.  Add a drop of EVOO to each and Sear the Scallops.

Set aside.

Once the broth has reduced by half, add the half and half and continue to cook until warm through.  Place the Chorizo broth in the bottom of a serving bowl, top with a spoon full of soft polenta, the cooked scallops and fried Chorizo slices.

Top with fresh sliced tomatoes and garnish with fresh rosemary if desired.  Serve immediately.

Pretzel Dessert

I had been thinking about a fruity option for Thanksgiving and thought of pretzel strawberry dessert.  I’ve had different variations of this dessert over the years and it is equally delicious prepared with raspberries computer games for free!  I’m not sure what you would call it, but technically it could be a “pie” since it has a crust, but it’s actually prepared in a cake pan herunterladen.  The pretzel crust is my favorite and when it is filled with fresh tangy fruit like strawberries and pineapples, heavy whipped cream and cream cheese, and the sweet gelatin filling… it makes for a delicious, quick dessert everyone will love Download myboy for free.  I would even consider doubling the crust alone portion!  Overall, this is  a fabulous contrast of salty and sweet with a satisfying crunch.  When you are choosing the pretzels, select thin pretzel sticks or squares rather than the large, thick ones because you want to leave them into some pieces pdf drucker herunterladen.  Depending on what fruit you have on hand, you can change it up and enjoy it year round.  My recipe was based off of Ms. Paula Deans!

Ingredients:

2 Cups Pretzels, crushed
3/4 Cup Butter, melted
3/4 Cup Sugar
5 Tablespoons Brown Sugar
1 (8-ounce) Package Cream Cheese, room temp
1/4 Cup Powdered Sugar
1 to 2 Cups Heavy Cream, whipped with Powdered Sugar
2 (3-ounce) packages Strawberry Gelatin dessert mix
2 Cups Water, boiling, just shy of this amount
2 Cups Strawberries, frozen – thawed and sliced
1 (8-ounce) can Crushed Pineapple (retain juice)
Whipped Cream, to garnish

Refrigerate covered with plastic until the jello is set.  To serve, cut slices and serve with a dollop of whipped cream!

Fried Wonton’s

I’ve been sharing ideas on how transform ingredients and use up left overs.  I’m telling you, wonton wrappers are one of the most versatile and inexpensive little items to keep in your kitchen steam handbuch herunterladen!  Look for wonton wrappers in the refrigerated section of most supermarket produce aisles.  (Usually by the fresh herbs, sprouts, etc.)  Keep them in the refrigerator in an air tight container (or even the freezer until you want to use them) leseprobe kostenlos herunterladen.  They are very easy to work with.  You can pan fry them but they even bake up crisp if you want to be healthier as each is only about 20 calories download instagram profile photo.

I like to make them into different shapes and sizes, so we started with a “jalapeno” type of “popper” flavored variety using up some left over filling from peppers made a couple nights before wdr mediathek videos downloaden.  lay out 12 to 20 wonton squares.  Squeeze about 1/2 to one tablespoon of the mixed cream cheese filling onto the center of each square.  Top with thinly sliced fresh jalapeno and a tad of cooked crumbled bacon.  Moisten two of the edges in a “L” shaped pattern and fold wonton skin in half, gently pressing the filling to even it out while sealing the edges to form a triangle.

Set aside and lay out additional wonton skins.  Only fill and form about 20 at a time, so they don’t dry out.

Two other varieties I made this night were cooked turkey and cold spinach dip; as well as some cream cheese and ground beef varieties.  (within the meat mixture was some puree’d stuffed mushrooms because Bill and Jacob don’t like the texture and didn’t know the difference!)

To make little “egg roll” shapes, place about a tablespoon or so of filling into the center of the wonton skin.  Begin to roll the skin upward and when you get to the half way mark, moisten the top two edges, leaving the two side corners free of filling.

Tuck the moist side corners in and continue to roll.  Place the filled wonton skins, seam down on a plate until you’re ready to cook them.

I pan fried each over medium high heat in Grape seed Oil, just until golden brown on both sides.  Use paper towels between layers to absorb access oil.  You can use Canola or other oil, but I prefer the grape seed because of the high heat and smoke point.

Allow to cool slightly and dip!  The sky’s’ the limit!  Everyone loved them and they are equally delicious re-heated in the toaster oven the next day or three!

Sweet Potatoes

Only a few in our group at the Thanksgiving gathering actually enjoy sweet potatoes, but I do!  My dear friend Jen and her family were up for the holiday hp druckertreiberen.  She and I had been talking about the menu for days and since she and her daughter also like them, I decided to try preparing them different this year telekom browser herunterladen.  I had watched a segment of a Saturday morning Show with a reporter I like named Rena Sarigianopoulos.  I had met this reporter who is a co-anchor of KARE 11 News Weekends and KARE 11 Saturday morning; some time ago when she was doing a “swap” job piece at our friends wine store amazon lagerbestand downloaden.  She’s really very nice!  When I saw her preparing her Yiia’s (the Greek word for “grandma”) Sweet Potatoes before the holiday, I paid close attention and decided to give them a try herunterladen! Ingredients: 

Sugar
Brown Sugar
Cinnamon
a pinch of nutmeg
Butter
Pecans (she doesn’t like them, but we do!)

There were no real measurements zenmate for free.  Just watched and guessed!  You start by boiling the potatoes (skin on) until you can pierce them with a fork.  Drain them and let them cool.

Preheat the oven to 350 degrees microsoft windows 10 for free.  Grease the bottom of a metal roasting pan or dish with non stick cooking spray or butter

Cover the bottom of the pan with water; about a cup.  Be sure not to rinse off the topping, so pour in at an angle or between each if you have the room.  Cover and bake for an hour and a half to two hours.

Pour the sauce at the bottom of the pan over the potatoes if you’re removing them from the dish!
