Creamy Potato and Ham Soup

We were recently in a stretch of chilly weather with rain in the daily forecast for as far as we could see.  We try not to be whiners, but following that long winter, it was a bit much.  When you live in a climate that doesn’t see the sun for days and days, it is really hard to understand just how excited we get even if it peeks out for a few hours download huawei p9 lite images!  People literally start posting pictures on Facebook and our moods change significantly when the sun shines.

Ingredients:

8 Cups Potatoes, (12 medium, half peeled) chopped
4 Cups Celery, chopped
2 Large Sweet Onions, (nearly 6 Cups) chopped
4 Cups Carrots, chopped
1 Jalapeno Pepper, chopped
2 Large Red Bell Peppers, chopped
1 stick Butter
2 Tablespoons Extra Virgin Olive Oil
3 lbs. Ham, chopped 
8 Cups Chicken Stock, homemade (mine is unsalted)
1 quart Almond Breeze, unsweetened almond coconut milk blend
1/3 Cup Chicken Base – to taste – start with less, add more as you don’t want it too salty!
2 Cups Smoked Cheddar Cheese, shredded
1 Cup Heavy Cream

Start by peeling and chopping the onions and washing and chopping the celery tigerjython.

Place half of the butter into your stock pot over medium heat.  Season the onions and celery with salt & pepper and saute over medium heat, stirring occasionally until they become translucent and begin to brown herunterladen.

Chop the carrots and them along with the celery to the onions.  Add the oil and cook for five to ten minutes over medium high heat while stirring occasionally to cook them down.

While the vegetables are cooking, wash, peel half (or all depending on your taste) and chop the potatoes download nasheed.  Add them to the vegetables.

Add the chicken stock, stir and allow to cook while you continue to chop ingredients.

Wash and de-seed the peppers herunterladen.  Mince the jalapeno and chop the red pepper. Add them to the vegetables and stock.

Chop the fully cooked ham into cubes and add them to the soup.  Allow to cook for about five minutes or so before adding the milk and seasoning.

Reserve about two cups and then add the rest of the almond milk to the soup and taste film download van youtube mac.  Add a little chicken flavoring to some of the reserved almond milk and adjust accordingly.

Combine the corn starch with some of the reserved almond milk and whisk until dissolved.  Combine, while stirring constantly into soup.  Increase the heat and bring to a simmer and stir frequently as the soup thickens.

Once it has thickened somewhat, reduce heat to low simmer and stir in the shredded cheese.  Continue to cook until the potatoes are tender.  Stir in cream just before serving.

The vegetables will be tender, but still hold texture.  Serve immediately.  Garnish with fresh ground black pepper and additional sprinkle of cheddar cheese if you like.

Stuffed Zucchini

Ingredients:

2 Zucchini’s, medium sized
1/2 Cup Ricotta Con Latte
1/3 Cup Mushrooms, sauteed
1/3 Cup Red Peppers, roasted
2 Tablespoons Basil, chopped
1 Tablespoon Parsley, chopped
1/2 Cup Onions, caramelized
4 Garlic Cloves, roasted
2 Turkey Breakfast Sausage, chopped fine
2 Tablespoons Parmesan Cheese, shredded
1/3 Cup Mozzarella Cheese, shredded

I planned to have these as a side dish and thought about what flavors would also be good in a stuffed mushroom instagram für windows downloaden.  I had some left over cooked vegetables and cheeses and decided that the flavor of the breakfast sausage would compliment them well.

Preheat oven to 350 degrees

Creamy Curry Chicken and Asparagus Hotdish

Bill loves Curry.  I don’t have a lot of experience with it, but recently did a bit of homework thinking I should give some dishes a try because he keeps mentioning it download ard videos.  Yellow curry is one of three major kinds of Thai curry that are commonly found in Thai restaurants in the West.  There are other curry types, but yellow is the powder I recently found at my grocery store download ps3 game.  “Curry” is the generic English term used to denote a wide variety of dishes whose origins are Southern and Southeastern Asian cuisines.  Their common feature is the incorporation of complex combinations of spices and/or herbs, usually including fresh or dried hot chillies how to gif.

Ingredients:

1 Bunch Asparagus
2 Cups Hash Browns
1 can Cream of Chicken soup, condensed, undiluted
1/3 Cup Mayonnaise
1/3 Cup Heavy Cream
1/2 Meyer Lemon, rind and juice
1 Tablespoon Curry powder
1/2 Cup Sharp Cheddar Cheese, shredded

Preheat the oven to 375 degrees downloaden online video.

I had originally thought about using some left over cooked white rice, but wasn’t happy with the texture and ended up reaching for some frozen hash browns instead.  Start by cutting up the chicken into bite sized pieces.  Season with salt and pepper and cook with the oils over medium heat within a skillet until it is no longer pink, and has slightly browned on the outsides.  Set aside.

In a large bowl, combine the soup, mayonnaise, cream lemon juice and rind, curry and set aside.

Spray an oven safe 8 inch square baking dish with non stick cooking spray and place half of the asparagus lined along the bottom.  Spread the hash browns evenly across the asparagus and carefully pread with half of the soup mixture.

Next, place the cooked chicken over the soup mixture and top with another layer of asparagus.  Spread with remaining soup mixture.

Sprinkle with cheese and cover with foil.  Bake for 20 minutes before removing foil.  Bake an additional five to ten minutes longer until the cheese is completely melted.

We enjoyed this with an amazing CROZE 2012 Chardonnay, which paired perfectly!

Basic “True” Italian Tomato Sauce, taught by Pete

While we were visiting our friends Pete and Martinique in Seattle over our Christmas break, Pete and I enjoyed some time in his kitchen.  One of the things he taught me how to make was his “True Italian” red sauce.  I’ve been meaning to blog this and had taken step by step pictures while he was teaching me so that I would remember!  I’ve made this sauce several times since and while reviewing these images, realize that I not only do I need to add more garlic, but I need to buy myself a potato masher because I think that I’ve been leaving it chunkier than I should.  Referring to a documented recipe is a good thing, because we all tend to make small changes that we may not even be aware of and following a recipe can get us back on track dasta app downloaden!

This sauce is a staple in Pete’s house.  He uses it in numerous dishes that he prepares and since it takes a while to put together, always has some on hand in his freezer because it keeps very well.  I’ve been doing the same thing.  I will often make up batches on the weekends and what I’ve found is that using quality ingredients really does make the difference!  You can find similar brands at your grocery store, but I’ve also gone on line and ordered the same brands that Pete has access to with Amazon’s grocery program, locally there in Seattle co2 laser software for free.  It’s funny, now I see the San Marzano Tomatoes on most of the cooking shows I watch on Food Network.  If you pay close attention, you’ll start seeing ingredients that you should consider taking note of and see if they make a difference in your dishes!

Ingredients: 

3 Cans San Marzano Tomatoes (area, Naples Italy)
2 Whole Bulbs Garlic Peeled and Stemmed
Extra Virgin Olive Oil.  Make sure that it is imported and 100%  
1 Tablespoon Sea Salt, while garlic is softneing
2 Tablespoons Kosher Salt
1 Tablespoon Fresh Ground Black Pepper
1 teaspoon Oregeno, dried crushed
1 teaspoon Red Pepper, crushed

This will include images of my first attempt to make the sauce at home itunes 64 bit kostenlos downloaden.  While I was preparing my first batch, I was taking photo’s and texting them to Pete for his guidance long distance and in assembling these images for the blog, I found that I had made some mistakes in my initial efforts.  I will later explain why I now choose particular brands, but overall really enjoyed this learning experience!  I was humored when I saw this image of wine mixed in with my recipe and recall Bill and I were enjoying some while I was cooking.  Pete loves a quality wine, so he must have been with me in spirit!  Perhaps drinking the wine was why I made those initial mistakes and I’ve always loved Julia Child’s saying:  “I enjoy cooking with wine, sometimes I even put it in the food I’m cooking!”  (But not this time windows 8.1 update herunterladen dauert ewig! Let’s get to the sauce!  Start by cutting the ends off of the garlic cloves, leave them whole while peeling them and don’t crush or smash them.  Pete had told me that sometimes he cuts the larger cloves in half so that all of the garlic is the same size for even cooking, which is what I did.  Now I usually try to choose cloves that are the same size and save the smaller cloves of the center of the bunch for later.  I prefer not to cut any of them assassin's creed download kostenlos vollversion deutsch.

This is the brand of Olive Oil I prefer to use as recommended by Pete, but have since found additional high quality brands.  I’ve purchased numerous over the years, but recently learned quite a bit when Bill and I attended an Olive Oil tasting at  “The Oilerie” in Maple Grove.  It was very interesting  and understood many more health and beauty benefits from olive oil following the event.  We were surprised to learn that the US food and drug administration doesn’t do a great job regulating oil and that it really only requires 15% of the “olive oil” in stores to contain “actual olive oil” herunterladen!  Most do not realize that the balance is a number of other oils including vegetable and most commonly canola oil as a filler.  Sadly, people assume that they are buying olive oil at a premium price but they are really getting mostly other added oils!  Another interesting fact is that olives are originally pressed at 55 degrees and that the second press when it considered “extra virgin olive oil”.  After the second press, the maker heats the oils for the third press making it “Pure” olive oil.  Lastly, if the oil is pressed a fourth time it is then considered “light or extra light” and at really no longer contains any health benefits Download minigames for free.  One might assume that “light” would be a healthier variety, but it really is not.  You should look for imported oils from Italy or Greece where they require authentic 100% olive oil before distribution.  I still need to do homework on the oils that I buy in Napa Valley, but will get to that another day! 

Using a large pan, pour enough oil over the peeled garlic to cover it, but it shouldn’t float.  Pete’s images will be on the left in the silver pan and mine on the right in the white, cast iron dutch oven pan.

The first mistake that I realized was that I had added a little too much olive oil download windows movie maker 2018 for free.  Before proceeding, I poured some of it off and used it later as infused oil, so there was no loss there.

The bottom of these three images was once I removed some of the oil.  Pete says to saute the garlic over medium – low heat until the garlic is softened; but not transparent.  It takes about ten to 15 minutes.  Keep the heat low because you do not want it browned; be sure to stir frequently.  I saw later in my notes that the salt is to be added during this process and not later with the tomatoes; however looking at Pete’s images, he added it with the pepper, so now I need to ask if it really matters…

You can see the quality of the tomatoes is not the same, even though I paid more for mine then Pete did.  I prefer the brand on the left because the tomatoes were all fully in tact and not broken compared to the texture of the ones I used.

Season the tomatoes with the salt, pepper, red pepper and oregano.

Stir and bring to a boil before covering and simmering over low heat for at least an hour and a half charlotte link for free.

Stir and remove from heat.

Using a potato masher, crush the tomatoes.  I used the closest thing I had, but I wasn’t able to feel the “popping” of the garlic cloves or tomatoes like I recall when we made it at Pete’s.

Return the sauce to medium low heat and continue to cook for 30 more minutes, stirring occasionally.

Stir and taste!  You may need to season with a skosh more of salt.

With the highest quality of ingredients, I’ve mastered this sauce and believe that Pete would agree that mine is as good as his!

Consider adding fresh Parmesan or fresh basil and/or parsley before serving over pasta or other dishes.

Chicken and Rice Meatloaf

This is a comfort food dish to me.  I created it on a cool evening recently by grabbing few simple items out of the fridge.  Back in the day, many home cooked recipes consisted of a pinch of this and a splash of that without defined measures fotocommunity bilder downloaden.  It’s really how I’ve always cooked based on ingredients that I had on hand in my fridge and pantry.  The only reason I document today, is for the blog and so that I can remember what I put in something in the event I would like to re-create a dish download music for free from youtube!  This is very simple, but really flavorful.  If you or your kids are not into peppers, leave them out.  If you like mushrooms, add them!  You can customize your loaf with just about any flavors your family enjoys skype free tablet.  I almost always have caramelized onions in the fridge and this day had some left over peppers too.  Dr. up your store bought pasta sauce by adding some ricotta and enjoy a creamy sauce that was simple to make Download zoom for windows!

Ingredients: 

1 Cup White Rice, cooled
1 pound Ground Chicken
1 Cup onion and Peppers, caramelized and cooled
2 Garlic Cloves, pressed
3/4 cup  Parmigiano Reggiano Cheese, shredded
1/3 Cup Montery Jack Cheese, shredded
2 Eggs, slightly beaten
Salt and pepper, to taste
Olive Oil, to prepare baking dish

1/4 Cup Italian Red Sauce
1/2 carton Ricotta Cheese

Preheat the oven to 350 degrees

In a large mixing bowl, combine the rice with the ground chicken, onions, peppers, garlic, shredded cheeses and eggs for free. Season with salt and pepper.
