Hash Brown Potato Bake

Ingredients: 

16 ounces of Sour Cream
1 Can Cream of Chicken Soup
1 1/2 Sticks Butter, divided 
2 pounds Hash Browns Potatoes
3 Cups Cheddar Cheese, grated
1 Onion, chopped fine
1 Tablespoon Olive Oil
Salt and Pepper, to taste
2 Cups Corn Flakes, crushed

Saute the chopped onion in the oil until translucent Download music video clips for free.  Mix together the soup, one stick of melted butter, and sour cream until smooth.  Add the cooked onions and cheese and season with salt and pepper.

Marinated Flank Steak and Shrimp with Molasses

After viewing a show on the Food Network that featured “surf and turf” it got me thinking about what I might make for dinner.  I headed to the deep freeze wondering what might pair with the large jumbo shrimp I planned on preparing and found a couple of flank steaks that I had on hand deciding this was it download windows 8.1 language packs!  Flank steak is technically not a steak, it is the belly muscle of the cow and is typically cut into small pieces. Ingredients:

1 Flank Steak, trimmed of excess fat
4 Jumbo Shrimp, cleaned and deveined 
3 Tablespoons Molasses
3 Tablespoons Red Wine Vinegar
3 Tablespoons Dijon Mustard
1 Tablespoon Soy Sauce
3 Tablespoons Extra Virgin Olive Oil
3 Garlic Cloves, pressed
2 Tablespoons Fresh Rosemary, chopped

Heat a cast iron pan or grill outdoors over medium high heat.  Remove steak from the marinade letting excess drip off. Season the steak well with salt and pepper.

I cut the steak in half since I was cooking it in the cast iron skillet.  Grill steak on each side for five to six minutes per side.  Cover and allow to rest for ten minutes before slicing across the grain.

Cook the shrimp in the same cast iron skillet over very high heat for about three minutes on each side.

I had some Ricotta Pea puree left over (that I had made by simply by microwaving peas according to the package directions, until just tender.  Draining them and adding them to ricotta, butter and a pinch of salt in a processor to make a slightly chunky puree.)  I combined it with some caramelized onions and half and half and cooked it over low heat until it was reduced and thick.  I used this as a sauce base that was topped with roasted butternut squash, tossed with ricotta served along side of a side salad.

Ahi Tuna with Edemame

Ingredients:

Boxed Pasta, prepared

2 Tablespoons Sesame Oil
Sesame Seeds, toasted
2 Tablespoons Soy Sauce
1/3 Cup Peanut Sauce
1 Onion, sliced thin
Yellow, Orange & Red Bell, sliced thin
Onion, sliced thin
Olive Oil, for sauteing vegetables
Frozen Edamame, shelled
Salt & Pepper, to taste

Allow the fish to rest for five to ten minutes before slicing.  Serve the edemame mixture on the pasta and top with sliced tuna.  Sprinkle with toasted sesame seeds.  Drizzle with additional peanut sauce or soy sauce if necessary.

Blackened Salmon and Shrimp with Blue Cheese Sauce

Ingredients: 

4 Fillets of Salmon
8 Jumbo Shrimp
Grape seed Oil, for brushing
2 Tablespoon Italian Seasoning
Salt & Pepper, to taste
1 Tablespoon Cayenne

1 teaspoon Garlic powder

Mushroom & Blue Cheese Sauce:
Button Mushrooms
1 Tablespoon Butter
1 teaspoon Olive Oil
1/2 Cup White Wine
1/2 Cup Half & Half
1/2 Cup blue cheese
pinch of White Pepper

Halibut with Ricotta Pea Puree
