Scallops with Mojo Picon (Garlic Sauce)

We recently attended an event at Spill the Wine Restaurant in Minneapolis.  The “A to Z Wineworks Wine Event” featured wines paired with various courses of food.  This dish was my re-creation of the scallops that they served with the second wine, an A to Z Oregon Pino Gris.  Bill and I absolutely loved their version of the dish.  I hadn’t known what Mojo Picon sauce was so I had to do a little homework.  Mojo Picon originated in the Canary Islands.  The basic recipe consists of olive oil, large amounts of garlic, paprika and cumin.  Flavorings such as vinegar, lemon, orange or lime juice may be added.  It is commonly served with fresh bread rolls at the beginning of a meal,  but it was a perfect marinade for the scallops they served!  My dish was good, but it wasn’t what we had at the event and I sure wish I knew how to make it like they did icloud data download android!

Ingredients:

6 Scallops, cleaned
2 Tablespoons of Grape seed Oil

1 Tablespoon Sweet Paprika
1 teaspoon Cayenne pepper
1/2 Tablespoon Red Pepper Flakes
1/2 Tablespoon Cumin
1 teaspoon Coriander seed
5 Garlic Cloves, pressed (I would likely use less next time!)
3 Tablespoons Red Wine Vinegar
5 Tablespoons Extra Virgin Olive Oil
5 Tablespoons Panko Crumbs
1 Tablespoon Brown Sugar

Combine dry ingredients except brown sugar in a spice grinder and pulse until an even powder is formed herunterladen.

Whisk in vinegar, oil, sugar and garlic ausweisapp2 downloaden.  Stir in the Panko crumbs.  Remove the small tag (side muscle) from the scallops, rinse with cold water and thoroughly pat dry with paper towels herunterladen.  Allow to marinade for at least five minutes.

Heat a cast iron pan until it begins to smoke, add the grape seed oil coating the bottom of the skillet Christmas music for free.

Gently add the scallops, making sure they are not touching each other download entire websites.  Stay near and watch only searing the scallops for 1 1/2 minutes on each side.  They should have a 1/4-inch or so golden crust on each side while still being translucent in the center download pt sans.  Spoon additional sauce to your liking.

Serve immediately.

Sesame & Poppy Seed Spinach, Strawberry & Goat Cheese Salad

The other night Bill asked for a strawberry and spinach salad with Feta cheese.  I actually had forgotten to take some of the cow’s milk feta out of the freezer the night before and only had goat cheese thawed out on hand in the fridge, so that is what I used!  I really like the flavor of sesame, so I changed up my normal poppy seed dressing a bit es 2 downloaden film deutsch.

This is a simple way to incorporate fresh spinach into your diet.  The fresh strawberries add a brightness and you get a creamy punch from the cheese.  The crunch and sweetness of the nuts makes this salad quite a treat herunterladen!

Ingredients:

2 Cups Spinach
3/4 Cup Strawberries
1/3 Cup Candied Nuts

Dressing:
1/2 Cup Vegetable Oil
1/4 Cup Sugar
1/4 Cup Vinegar
1 Tablespoons Sesame Oil
1 Tablespoon Worcestershire Sauce

2 Tablespoons Sesame Seeds, toasted
2 Tablespoons Poppy Seeds
1 Teaspoon Sweet Paprika
Salt & Fresh Ground Pepper, to taste

Prepare the dressing by chopping the onions and combining them with all of the ingredients except the vegetable oil.  If your sesame seeds are raw, toast in a dry pan over medium heat, tossing frequently.  Mix well until all of the sugar is incorporated antivirus program free chip download.

Jucy Lucy/Juicy Lucy Cheeseburger

It was my oldest son Nicholas’ birthday on the 21st of August.  I like to have the kids come for dinner at their convenience and try to cook them what ever they ask for.  Nick requested the Juicy Lucy, or Jucy Lucy, depending on who is serving it, as well as cheesy hash browns.  He’s not a big fan of food “outside of the box” and likes to keep things simple.  These were an easy enough request, so I served them along with a simple side salad and homemade ranch dressing Download spiderman app for free.

The Jucy Lucy/Juicy Lucy is a cheeseburger that has the cheese inside the meat patty rather than on top.  Cheese is surrounded by raw meat and cooked until it melts, resulting in a molten core of cheese within the patty.  If you use American cheese, it tends to gush out at the first bite, so servers frequently warn patrons to let the burger cool for a few minutes before consumption.  Two bars on the same street in South Minneapolis both claim to have invented the sandwich but you can find it on all kinds of menu’s in numerous restaurants these days.  Even the Food Network Magazine now has a recipe on-line.  I’ve made them before and I keep it simple.  These are delicious icloud backup! Ingredients:

1 Tablespoon Lawrey’s Seasoning Salt
Fresh Ground Black Pepper & Kosher Salt, to taste
American Cheese Slices, one or two per burger depending on preference

Grill over medium high heat, about four minutes.  Grill marks should appear on the bottom.  Using a spatula, flip the patties and cook an additional four minutes or so until grill marks appear on the second side.  Do not press down on the patties.  Cook less for medium and longer for well done burgers.

Nicks’ beautiful fiance Bri enjoyed hers as well!  The rest of us enjoyed turkey burgers at Bills request for a “healthier option”.  They too were moist and flavorful, because I mixed the ground turkey with the same seasonings and added a half a container of skim milk ricotta cheese.  They really turned out delicious and we ate ours with the cheeses on top download instagram profile photo!

Chewy Coconut Graham Cracker Bars

We were invited to a friends pool party recently and I offered to bring something.  I don’t often make desserts at home anymore.  Simply because if I did, we would eat them!  I have a terrible sweet tooth and though Bill pretends to not be interested most of the time in the goodies, he always manages to indulge if there is something sweet around the house.  Years ago I baked often.  We were also a lot chunkier and we’re working on trying to keep that to a minimum, so I usually just say no.  One of the bars I had made numerous times included buttery club crackers with a chewy graham cracker layer fortnite herunterladen fortnite herunterladen.

I looked around my pantry to see what I had on hand and got busy creating something to share at the party.  I decided to prepared these bars the day before, in fear I may need to run to the store and pick something up from a bakery, should they not turn out!  Fortunately, the execution of my ingredients worked!  These turned out sweet and chewy with a nice crisp crunch.  They were not the bars I loved all those years ago, but they worked music for usb stick!

Ingredients:

Graham Crackers
Softened Butter

Chewy center layer:
1 Cup Graham Cracker Crumbs
1/2 Cup Butter
1/2 Cup Brown Sugar
1/2 Cup Sugar

1 1/2 Cups Coconut
3 Hershey Milk Chocolate bars
1/4 Cup Butterscotch Chips (because this is all Andrew left in the package)

Frosting:
1/2 Cup Melted Butter
1/4 Cup Brown Sugar
3 Cups Powdered Sugar
3 Tablespoons 1/2 & 1/2
1 Tablespoon Vanilla

Smear butter onto a cookie sheet or large cake pan and line with a layer of graham crackers herunterladen.

Crush some of the crackers and boil them with butter and sugars for about five minutes.  Next, drizzle and spread evenly over the coconut layer ankiweb stack.

Creamy Cucumbers

I grew up on a ten-acre hobby farm and we always had a garden.  We ate cucumbers fresh and also made canned pickles.  Bill’s Aunt Susan taught me how to make refrigerator pickles that are sweet; but I could eat them simply with a little salt.  I love cucumbers.  Growing up I’m not sure that I ever paid attention to the fact that they are often regarded as a healthy food.  They are very low in calories and also contain many vitamins and minerals that make them a healthy choice for cooking and snacking.  Cucumbers have a 96% water content which is more nutritious than regular water.  We see slices in water at the spas.  Drinking it helps in keeping the body hydrated while regulating body temperature.  They say it also helps in flushing out the toxins from the body.  The juice contains a lot of potassium, magnesium and fiber that work effectively for regulating blood pressure so it’s unfortunate I can’t hardly get Bill to eat them with me!  I teased him when I explained recently that I heard they contain silicon and sulphur; therefore a regular intake of cucumber can help promote healthy hair growth!  I’m kidding of course and I eat them mostly because of their crisp, refreshing taste deezer musik herunterladen.

We can grow them here in Minnesota during our summer months, but the states of Florida and California provide U.S. consumers with fresh cucumbers for most of the year (from March through November) herunterladen. It was interesting to learn that there are actually close to 100 varieties of cucumbers grown in the world.  Two of the most common are the English cucumber, and the regular slicer cucumber we use most often in our dishes.  I think the extra cost for an English cucumber is worth it,  because I prefer few seeds.  Even though long, dark green, smooth-skinned garden cucumbers are familiar vegetables in the produce sections of most grocery stores, they actually come in a wide variety of colors, sizes, shapes and textures.  You may find white, yellow, and even orange-colored cucumbers, and they may be short, slightly oval, or even round in shape.  Their skins can be smooth and thin, or thick and rough.  I didn’t know that cucumbers are actually fruits, not vegetables.  They belong to the same botanical family as melons (including watermelon and cantaloupe) and squashes (including summer squash, winter squash, zucchini and pumpkin) route downloaden afstandmeten.nl.

Ingredients:

1/4 Cup Mayonnaise
1/4 Cup Light Sour Cream
1 English Cucumber, peeled and sliced thin
1/4 Onion, sliced thin
Salt and Pepper, to taste
