Dill Dip

This time of year in particular, we tend to eat a lot more fresh vegetables and changing up the dip helps add some variety to our snacking.  Bill and I both love dill and depending on where it is grown, is either a perennial or an annual herb.  Of course, here in MN it’s an annual because not many herbs survive our winters outdoors!  Its fern-like leaves are aromatic and smell “lemony’ to me.  I use it to flavor many dishes (especially fish) and by adding fresh herbs in your dishes and dips, it really makes the difference adding flavor!  Choosing low-fat ingredients such as cottage cheese and/or low-fat sour cream will help reduce calories.  Another option is to exchange the sour cream with non-fat Greek Yogurt and you could add fresh lemon rind and/or juice to add brightness.  In the past, I’ve even added dried herb varieties for roasting vegetables, etc o tannenbaum herunterladen. for more flavor! Ingredients:

1 Cup Mayonnaise (Hellmann’s)
1/2 Cup Sour Cream, light
1 Cup Cottage Cheese, 1%
3 Tablespoons Garlic Salt (you could use one or two fresh cloves – plus 2 Tablespoons kosher salt)
1/3 Cup Dill Weed, dried
1/2 Cup Dill, fresh minced
1 Tablespoon Shallot, minced (optional)

Simply cream all ingredients together and serve chilled.  (Chill at least 30 minutes to allow flavors to mingle)

Mexican Dip

During a recent girls nights, I created this delicious and simple appetizer based on what was on hand in the fridge and pantry!  We had some left over ground beef and onion taco seasoned meat mixture that needed to be eaten.  When combined with all of the delicious flavors of a taco and baked until bubbly hot, then topped with chilled toppings and flavors – it became a hit!  I allowed each of the gals to top their own hot dip with the flavors of their choice of fresh lettuce, diced tomatoes, guacamole, sour cream, peppers and salsa to be eaten on crispy tortilla chips kreuzworträtsel online kostenlos herunterladen.

Ingredients:

1 large can Re-fried Beans
1 Package Cream Cheese
2 Cups Cheddar Cheese, shredded

Cold toppings:
Lettuce, chopped
Tomato, diced
Sour Cream

Banana Peppers
Jalapeno Peppers
Tortilla Chips

Layer the bottom of a baking dish that has been sprayed with non stick cooking spray beginning with re-fried beans.  Next, warm cream cheese in the microwave until softened and easy to spread.  Using spatula, spread evenly across the beans.  Add the crumbled cooked seasoned taco meat and top with shredded cheese invitation to your birthday.

Beef Tenderloin Crustini’s with Carmelized Rosemary Onions

The winers group was getting together recently and the weather had been raining a lot.  It was our turn to host and I wanted to prepare something that would pair nicely with red wines, which is what most of the group prefers to drink.  I had recently split a large tenderloin into some individual fillets, but saved half of it intact for something special and that was what inspired to come up with this dish download windows 8.1 language packs!   The only thing I would do differently is serve the toasts with some creamy horseradish sauce.

Ingredients:

1 loaf of Italian Bread
Beef Tenderloin (about 2.5 to 3 lbs.)
1 Onion
Olive Oil
Mozzarella Cheese
Salt & Pepper, to taste
Fresh Rosemary (about 3 Tablespoons, chopped)

Let the beef stand at room temperature for at least 30 minutes before grilling boulder dash kostenlos downloaden.

Ranch Vegetable Dip

I almost always have a fresh veggie tray out at social events.  I may think subconsciously that if I eat fresh vegetables, it helps me justify the other snacks that we typically have o choose from!  This is another simple, but delicious recipe I’ve had a few requests for lately.  Years ago, one of my sister in-laws had introduced us to a cold veggie tip that included cottage cheese, so I can’t take the credit for coming up with the idea, but I have changed mine up a bit.  I like the fact that it is very flavorful and the low-fat cottage cheese helps reduce the calorie intake and because it is filling, when added to this dip – it actually helps you eat less of the higher fat mayonnaise while remaining quite satisfying videos aus mediatheken ipad.

Ingredients:

1/4 Cup Dry Dill

Blackened Catfish with Mashed Sweet Potatoes

I spotted some fresh catfish at the market the other day and it smelled very fresh!  And since Bill’s been wanting to incorporate more fish into our diets, this was a perfect find!  He requested blackened, which seems to be his favorite lately software video! Blackening is a cooking technique used in the preparation of fish and other foods. Often associated with Cajun cuisine.  The food is dipped in melted butter and then dredged in a mixture of herbs and spices and is then cooked in a very hot cast-iron skillet.  When I make the rub, I only use what I need for the given meal as I typically have enough left over for another meal or two memory herunterladen.

Ingredients:

2 Fresh Catfish Fillets
Olive Oil

Dry Rub:
2 teaspoons Salt & Pepper
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 teaspoon Cayenne Pepper
2 Tablespoons Paprika, 1 Fancy and 1 Sweet
1 Tablespoon Coriander, ground

In a small bowl, mix together the dry rub and set aside download rossmann 10 app.

Sweet Potatoes:

2 Large Sweet Potatoes, washed , peeled and cut into cubes
Salted Water, for boiling

1/3 Cup Half & Half
1 Tablespoon Dijon Mustard
1 teaspoon Paprika
1/4 Cup Brown Sugar

1 teaspoon Cinnamon
1/2 to 1 teaspoon Cayenne Pepper
4 to 5 Tablespoons Butter

Reserve half of the caramelized onions for the potatoes and the rest for the sauteed vegetables jewel kostenlos downloaden.

Wash, peel and cube potatoes and cover with water in a pot.  Bring to a boil over medium-high heat before reducing the heat to simmer until the potatoes are tender, about 8 to 10 minutes, drain well filme zum herunterladen kostenlos.

Return the potatoes to the pot and add 1/2 of the caramelized onion, the half & half, dijon mustard, paprika, brown sugar, garlic salt, cinnamon, cayenne and butter.  Use an emulsion blender to puree mixture until smooth easy soft herunterladen.

Drizzle a bit of olive oil onto the scorching pan and quickly place fillet into hot pan herunterladen. (be sure to avoid over crowding; or do one at a time)  Cook until fish has a charred appearance, about 2 minutes. Turn fillets and cook until the other side is charred.

For another side dish, chop zucchini, red, yellow and orange bell peppers.  Reheat the skillet of the remaining caramelized onions until piping hot.  Then add peppers and saute until your desired likeness before adding the zucchini.  Cook over high heat, tossing frequently.  Season with salt and pepper.

Serve fish over sweet potatoes and garnish with fresh vegetables.  We enjoyed this sweet and spicy dish with a refreshing Fogdog Rose!
