Roasted Corn and Black Bean Salad

I was having the kids and Bill’s folks over for dinner recently and I was thinking “Mexican”.  They all seem to enjoy tacos and I like that we can easily enjoy the same ingredients in a salad form.  I had five ears of corn hanging out in the fridge and thought I needed to do something with them.  We had recently had a corn salad at my friend Heather’s, so I came up with my own version based on some ingredients that I had on hand vtech kidizoom kid 2 bilder herunterladen.  It was quite tasty and everyone seemed to really enjoy it!

Ingredients:

1/4 Onion, sweet chopped fine
1 Can Tomatoes, petite and diced
1 Can Black Beans, rinsed
5 Ears of Corn
2 Tablespoons Butter
1 Jalapeno Pepper, seeded and minced
1/2 Cup Fresh Cilantro, chopped
Salt & Pepper, to taste

Dressing:

2 Tablespoons White Vinegar
3 Tablespoons Sugar
1/2 Cup Vegetable Oil
1/3 Cup Lime Juice
1 Tablespoon Chicken Bullion
3 Tablespoons Cumin, ground
Salt & Pepper, to taste

Mix the dressing ingredients well until the sugar and chicken flavoring is dissolved.  Chill until ready to mix with salad wekgeluiden downloaden.

Start by preparing your corn to be roasted on the grill.  Remove husks and silks from the corn.  Rinse and dry well.  Rub the butter that has been softened to room temperature on one side of the ears of corn.  Season with Salt and pepper.  Create a foil pouch, sealing in the ears of corn before placing onto a hot grill; butter side up.  Grill five minutes on each side of the pouch and then remove the ears from the foil pack to scorch somewhat spiele für den pc kostenlos herunterladen.

Ranch Salad Dressing

I was having the kids and Bill’s folks over for dinner the other night and though I usually make my dressing with Buttermilk, this day I was out of it and decided to create this simple and delicious dressing with just a few extra ingredients that I had on hand.  Both my daughter Michelle & my mother in law Karen asked for this recipe, so it’s here for you all to enjoy phototan german bank app!

Ingredients: 

1 1/2 Cups Skim Milk
1/2 Cup Light Sour Cream
1 Cup Hellman’s Mayo (You could use light, it tastes good but not the same!)
1 Packet of Hidden Valley Ranch Salad Dressing Mix
1 teaspoon of Granulated Garlic
Dash of Salt
2 Tablespoons White Vinegar
1/2 Cup Fresh Flat Leaf Parsley, chopped

Asian Chicken Bites with Peppers

The gals were coming over for the newest season of Bachelorette and I needed to come up with something to serve on a fly.  I’ve been keeping the groceries at a limit between travels so I worked with what I had on hand in the freezer, pantry and fridge to create these tasty little appetizer bites!  They tell me that they really liked them, so I thought I would share!  You may not have the exact same name brands of sauces, but you get the point of how easy it is to “toss some ingredients together” to create flavorful and tasty dishes adobe elements 14!

Ingredients:

Oven Roasted Chicken Bites, Schwans 1.5 bag thawed
3 Red Bell Peppers, chopped into 1″ chunks
2 Large Jalapeno Peppers, de-seeded and cut into thin strips
1/2 Large Onion, cut into thin strips
2 Tablespoons Wok Oil, House of Tsang (found at most grocery stores!)
1/3 Cup Kraft Asian Toasted Sesame Anything Dressing
1/2 Cup Hoisin Sauce
1/2 Cup Asian Dipping Sauce, Trader Joe’s Gyoza
1/2 Cup Chunky Peanut Butter

Set aside chopped red bell peppers and chicken.  Heat Wok oil in a skillet over medium high heat.  Saute the onions until they start to become translucent.  Add the jalapeno peppers and cook until soft.  Mean while, combine all of the other sauce ingredients within a crock pot that’s heat has been set on high, allowing them to melt while stirring together and the peanut butter has melted ios.

Toss with cooked chicken and the onions and jalapeno peppers.  Repeat the heating of the Wok oil and sear the red peppers to your preferred doneness and then add them to the chicken mixture.  Coat everything evenly and serve immediately.  This could be served over rice, but tastes great on its own as a flavorful easy appetizer and it holds well in a crock pot during social events Download the photo frame program for free.

Baked Sweet Potato Fries

We’ve been incorporating more sweet potatoes into our diet and generally when cooking I try to bake rather than fry!  These are a very simple recipe for baking and we all really enjoy them.  If you want, you an add additional seasoning and spices such as paprika, garlic powder, etc.  Just toss it with the salt & pepper.  I usually make them with simple salt and dip them in a seasoned Aioli or even ketchup Download safari latest version!

Ingredients:
2 Sweet Potatoes, large
Olive Oil, for tossing also Vegetable or Canola work fine
Sea Salt (coarse)
Fresh Black Pepper, to taste
Wash and completely dry the potatoes

Preheat oven to 450 degrees

Maple & Ginger Glazed Mahi Mahi

This was the first meal that I had prepared recently after returning home from our long, but wonderful annual anniversary vacation.  I thought we should eat on the lighter side and chose fish.  I had picked up some awesome Maple infused Balsamic Vinegar while we were in Napa Valley; which is what inspired this dish Download videos from platforms! Mahi Mahi Also known as dolphinfish. (but it’s not a dolphin, don’t worry!  Sometimes being called dolphinfish causes it to be confused with the more widely known marine mammals called dolphins, far from the surface-dwelling ray-finned fish)  It is a mild, sweet fish that has a very firm flesh that makes cooking really easy!  It also doesn’t have a “fishy” taste, which is important to us.  According to the American Heart Association, it is packed with B-complex vitamins, omega-3 fatty acids and various minerals essential to thyroid function, immune system strength and bone, nerve and muscle function.  Dietary intake of omega-3 fatty acids contributes to lower rates of atherosclerosis, and reduced triglyceride and blood pressure levels, ALL good for Bill!

Ingredients:

1 Tablespoon Agave, dark
2 Tablespoons Pure Maple Syrup
2 Tablespoons Soy Sauce
2 Tablespoons Balsamic Vinegar, I used Maple infused

We also enjoyed a delightful new wine that we picked up on vacation!  This 2010 Quantum Red Blend from Beringer is a Cabernet Sauvignon-based wine in its first vintage.  It flows across the palate with attractive layers of deep, resonant fruit cv design downloaden. Dark raspberry jam, orange rind, cloves, violets and cinnamon are all woven together gracefully. This open, approachable Bordeaux-style blend should drink well pretty much right out of the gate.
