Grilled Ahi (Yellow Fin) Tuna with Balsamic

Written By: Chris - Sep• 07•12

We love, love, love Ahi!  But I don’t always want to have it prepared Asian style.  So the other day when I found some beautiful yellow fin steaks, I decided to go with our favorite seasonal tomatoes and fresh herb flavors!  We have an abundance of fresh flat leaf parsley and basil on hand right now.  I’ve mentioned in the past that you need to sniff and make sure you’re fish is fresh!  I found that our local Costco is now carrying “wild” yellow fin from time to time – and at a better price than my other go to grocery store.  Remember, don’t be afraid to ask the guy or gal behind the counter to allow you to smell the fish!  At Costco, I literally poke a small hole in the plastic and put my nose right in.  It should not smell “fishy”!  If it does, don’t buy it!  I do that with all fish before buying it now, because I’ve been burned.  At the price of Tuna in our area running right $15 or more a pound, it should be great!   Your fish should smell like fresh sea water with a little sweet scent.  Recently, I almost bought a large piece of Cod – but after the nose test, put it down as we would have been very disappointed.  It smelled terrible mit putty dateienen!

Ingredients:

1 Yellow Fin (Ahi) Steak
1/3 Cup Balsamic Vinegar
2 Tablespoons Olive Oil
1/4 Cup Flat Leaf Parsley, chopped
1/4 Cup Basil, chopped
pinch of Salt
Fresh Ground Black Pepper

Place the ingredients in a zip lock baggie and mix well.  Place tuna steak into the baggie and allow to sit in marinade for about an hour, but not much longer than that how to on youtube.

Place tuna steak onto a hot grill (you may need to spray grate with non-stick cooking spray), sear tuna and allow to cook without moving for about five minutes per side.  make sure to get some of the fresh herbs onto your steak as they crisp up delicious download apple stor!

Allow your steak to rest for about five minutes prior to slicing and serving.  This one steak was enough for two servings!  I prepared steamed rice, which included some basil and sun dried tomato seasoning from Pampered Chef as well as a Caprese Salad.  The instructions for balsamic reduction on the link.  Drizzle some of the reduction over the tuna and enjoy icloud inhalte herunterladen!

Since I made the wonderful meal, Bill treated me to a wonderful bottle of his favorite Verite wine herunterladen! WOW!! We were just there visiting the team and we miss them already!

Grilled Romain Lettuce Salad

Written By: Chris - Sep• 06•12

I was inspired to try a grilled salad after viewing an episode of one of my favorite shows; “Chopped!”   It was a grilling special and one of the chefs had grilled some Romain lettuce during the competition.  I recall seeing grilled lettuce in the past and since Bill and I both love salad, and we both love grilled veggies including artichokes and zucchini – I figured why not?!  I rummaged through the fridge to see what other vegetables I had on hand and decided on some peppers and carrots as well as the zucchini.  I opted to leave the cucumber raw to add a nice additional crunch pokemon quest herunterladen!

The balsamic dressing was left from a previous nights meal.  (The recipe can be found at this link Bill’s favorite)  You might be hesitant to try grilling lettuce, but do it!  I think you’ll like it!  The firm, crunchy leaves of romaine lettuce can take some heat Download tonie does not work.   The brief time on the grill gives them tasty charred edges and wilts them just slightly in a wonderful way, adding tons of flavor and texture.

Ingredients:

1 to 2 heads of Romaine lettuce
1/2 Green Bell Pepper
1/2 Red Bell Pepper
2 Carrots
1 Zucchini
2 Tablespoons Olive Oil
2 Garlic cloves, smashed
Course Kosher Salt and fresh Black Pepper

Dressing
Feta Cheese

Preheat a grill to medium-high to high heat.  Rinse and pat dry the lettuce.  Cut the heads in half lengthwise and remove any outer loose leaves.  Using a garlic press, smash garlic into oil and brush surface using a basting brush.  Coat the other vegetables with the oil, salt and pepper as well ältere teamviewer version herunterladen.

Sprinkle with salt and pepper.   Start by grilling the carrots before the other vegetables.  Once you’ve turned them, add the other vegetables and place the romaine on the hot grill cut side down.  Allow to grill just until the edges of the leaves start to char, turn and char on the other side as well as turn the others before removing from grill iphone xr apps. This should all take about two to three minutes on each side.  Leave your vegetables al dente for texture & great flavor!

Allow vegetables to cool slightly before chopping.  Combine with fresh chopped cucumber, sprinkle with feta cheese and drizzle with desired amount of dressing herunterladen.

Serve as a side dish.  We enjoyed this with cedar smoked Salmon herunterladen!

Enjoy!

Grown Up Mac & Cheese by Sara!

Written By: Chris - Sep• 04•12

This is a recipe from my friend Sara (Fairchild) Miller.  Although I don’t get to see her often, Sara is dear to my heart!  Years ago when I did daycare, she and her family were of my favorites!  I appreciate Face Book as I have enjoyed watching her become a beautiful woman and mother!  She describes herself as a stay at home mom and wife and it’s fun to observe she and her husband Justin as they succeed and develop their beautiful family!  Her mom Dori is a life long friend of mine and explained recently that Sara is an amazing coupon clipper too herunterladen!

Sara says this recipe does not need to be baked.  She explained that it can be served in a serving dish or a crock pot to keep warm.  She suggested also that it would be a great dish for a potluck!  When she shared this recipe she said that their pan was scraped clean, without a single noodle left ps4 account herunterladen!

Pan seared Cod with Fresh Mango Salsa

Written By: Chris - Aug• 29•12

So you’ve already read about one Mango salsa recipe, but I wanted to make another variety recently because I had flat leaf parsley on hand and only Coriander seeds rather than fresh Cilantro!  If you are growing your own herbs, know that Cilantro goes to seed (or called “bolts”) very quickly in the heat and it’s been HOT in Minnesota!  I had a beautiful plant growing and harvested several times, but then it went!  If you want to keep a good batch on hand, you need to start a few new seeds every couple of weeks.  Since my Cilantro went to seed, I just saved the seeds and allowed them to dry out on the counter.  If you store them in a cool dark place, they last a while.  For this recipe,  I smashed them with the side of a large Chef knife and chopped them somewhat mixing them into the salsa so we could still enjoy the flavor Download map maps!

Ingredients:

1 Mango, peeled and chopped
6 small orange & red peppers (or about one large sweet pepper)
1 Anaheim Chile (Because my friend Heather gave me a few from her garden and they are a nice mild flavor)
1/3 Cup fresh Green Onions
5 or 6 small Roma Tomatoes (from my only plant this season!)
1/3 Cup Flat Leaf Parsley
1 or 2 small inner yellow Celery stocks and their leaves
2 Tablespoons Coriander seed
1/2 Lime (juice)
1 Tablespoon Balsamic Vinegar
Salt & Pepper

Wash and chop all vegetables, as well as Mango into small pieces about the same size.  Chop celery and include the tender sweet leaves.  Remove seeds from tomatoes and chop.  Gently combine all ingredients stirring to coat all veggies tia portal v14 herunterladen.

We enjoyed sauteed onions and vegetables along side of this meal.  I prefer Brussels sprouts and Bill likes Zucchini!  Prepare and set aside youtube videos downloaden kostenlos deutsch.

In the same pan that you cooked your vegetables heat about a teaspoon of olive oil on medium-high until it barely starts to smoke.  Add fish which has been seasoned with salt & pepper animation herunterladen. Turn the fish when it changes color one-quarter of way up and the seared side has browned somewhat.  Roughly about three minutes or so.

Turn down the heat to medium and cook about four more minutes until cooked through (internal temp reaches 120 degrees)

You can baste the fish with additional oil if preferred, but I like to use just a dash of  butter added to the pan.  Drizzle and swirl while basting with spoon for another minute or two.  Allow the fish to rest for a couple of minutes before serving geogebra classic 5 kostenlos.

Dress with room temperature Salsa!  We treated ourselves to a very special Cosentino wine mozilla thunderbird for free!
