Crispy Potato Cakes

Many of you know I try to create dishes based on ingredients that I have on hand in my refrigerator and pantry.  I always try to use up left overs and mashed potatoes are one of those items that can easily be transformed herunterladen!  I recently prepared these delicious, crunchy potato cakes as a side dish to a burger and salad for dinner.  I really prefer to use “Panko” (a Japanese-style breadcrumb) for a unique – crispy coating that you can’t get from standard type of breadcrumbs apps für windows 10en.

Ingredients: 

2 Cups Mashed Potatoes, chilled
1/3 Cup Cheddar Cheese, shredded (or use your favorite cheese variety!)
3 Tablespoons Onion, chopped (cook or use leftovers) 
2 Eggs, slightly beaten (separate one for dredging)
Salt & Pepper, to taste
1/2 Cup Flour, for dredging
2/3 Cup Kikkoman Panko Bread Crumbs
1/3 Cup Glutino Crumbs (optional or use all Panko)
1 – 2 Tablespoons Sunflower Oil & Butter, for pan frying

Meanwhile heat the butter and oil in a large skillet over medium high heat. Add the potato patties to the hot oil and cook until well browned and heated through.  Turn with a spatula and brown on the other side.  Allow to sit on paper towels to absorb any access fat and hit with a bit of salt while hot.

Grilled Vegetable Caprese salad

Caprese salad is traditionally a simple Italian salad, made of sliced fresh mozzarella, tomatoes and basil, seasoned with salt, and olive oil. Ingredients: 

1 small Green Zucchini
1 small Yellow Squash
1 Red Bell Pepper
1 Green Pepper
1/2 Cup Grape Tomatoes, sliced in half

Extra Virgin Olive Oil
Aged Balsamic Vinegar
Salt & Pepper
Fresh Basil (optional)

3 Tablespoons Dijon Mustard
2 Tablespoon Mayonnaise

1 Cup Panko crumbs, plus some for coating 
Salt and Pepper, to taste

Place some additional panko into a shallow dish and press both sides of the salmon patties into it until coated.  Heat oil in a large nonstick skillet over medium-high heat and add the patties cooking until browned on the bottom, three to five minutes.

Turn and cook until the other side is browned for about the same amount of time.  Transfer to a plate lined with paper towel.  Season with salt while warm.  Discard sesame oil and cook buns that have been drizzled with the lemon flavored olive oil.

Serve with the patties on the buns; topped with tartar sauce and arugula.

We enjoyed these burgers paired with a Grenache Blanc by Shane Wine Cellars out of Sonoma County.  The 2014 Grenache Blanc exhibits a light golden color in the glass.  The aromatics are striking and emit an exuberant blend of pineapple, lemongrass, and seashells. Enticing acidity highlights the mid-palate and accentuates flavors of mango, kaffir lime, and honeycomb. The zesty finish exhibits accents of lingering ginger, Meyer lemon, and green tea.

Cream Cheese and Chive Wontons

Ingredients:

Lay out a couple of rows of skins and using a heavy zip lock bag with the corner cut, place the cream cheese mixture inside and squeeze about a tablespoon of filling onto each wrapper.

Heat a shallow layer of oil in a skillet over medium high heat.  Stay close by and fry the won tons until golden brown on each side; just a minute or two on each side.  Set aside to drain any access oil on paper towels.

Orzo Tomato, Herb and Garbanzo Bean Salad

I keep Orzo pasta on hand in my pantry as a staple pasta.  It’s shaped like grains of barley or rice and I seem to use it most for summer salads Download videos from facebook mac.  I also have been trying to incorporate more Garbanzo beans, (also known as chickpeas and legumes) into our diet.  The nutty-flavored beans originated in the Middle East and are grown mainly in India, but can be found in the grocery store canned how can I with itunes.  We usually mash them into hummus, but they are also good roasted; eaten as a snack or tossed into a salad.

Slice tomatoes, mince the onions, and drain and rinse the garbanzo beans you can bluetooth.  Add the onions and beans to the cooled pasta.
