Beet Salad Tasting Spoon Appetizer

Ingredients: 

1 Cup Arugula (three to five leaves each spoon)
1/2 Cup Creamy Goat Cheese (1 teaspoon per spoon)
1 Large Roasted Beet, cubed (1-2 Tablespoons per spoon)
1/2 Cup Dried Cranberries (3-4 each spoon)
6-8 Dried Apricot slices, chopped (1-2 pieces per spoon)

1/2 Avocado, cubed
Extra Virgin Olive Oil (Lemon flavored)
Balsamic Vinegar (reduced flavored)
Fresh Thyme
Salt & Pepper, to taste

Herb Crusted Pork Tenderloin Crustini’s with Chutney

Ingredients: 

1 Baguette, sliced
Extra Virgin Olive Oil for drizzle
Salt, to taste

2 Garlic Cloves, pressed
1 Tablespoon Thyme, minced
1 Tablespoon Rosemary, minced

Combine the olive oil with the herbs in a small bowl.  Massage the mixture onto the pork loin, covering all of the meat and fat.  Place the pork loin on a roasting pan and bake for 20 minutes.  Then reduce the heat to 425 degrees and roast until the internal temperature reaches 155 degrees. Remove from the oven and allow the meat to sit for about 15 to 20 minutes before slicing as it will continue to cook while it rests.

Once baked, spread a little cream cheese on each toast and top with a slice of pork tenderloin and a spoon full of the chutney.  Serve warm or room temperature!

Baby EggPlant Parmesan

You can find fresh eggplants in the grocery store year-round, but they’re at their peak in late summer.  Even though it’s barely summer here in Minnesota, I found some fresh “Baby” eggplants at Costco! The most common variety is the large, dark-purple globe eggplant.  When you’re shopping for them, look for smooth, shiny skins with fresh-looking stems and no blemishes. The fruit itself (eggplant is actually a berry!) should feel weighty in your hand hart beat downloaden. And when you press on the skin, it should be firm but give slightly, and then bounce back.  If you’re not preparing your eggplants right away, store them in the crisper of your fridge.  If you keep eggplant too long, it can become bitter.

4 Garlic Cloves, slivered
1 Cup Cherry or Grape Tomatoes, halved
2 Tablespoons Extra Virgin Olive Oil
Salt & Pepper, to taste
2/3 Cup Fresh Buffalo Mozzarella Cheese, shredded
1/2 Cup Parmesan Cheese, shredded
1/2 Cup Pecorino Romano Cheese, shredded
Flour, seasoned with Salt & Pepper
2 Eggs, whisked with 2 Tablespoons Water
1 Cups dry Italian Bread Crumbs
1 Cup Panko Bread Crumbs
1 Tablespoon Italian Seasoning, dry
Fresh or Fresh dried Basil
Sunflower Oil, for frying
Chicken Breast, optional

Prepare a breading station with three shallow dishes.  Combine flour with salt and pepper to season.  Scramble an egg or two with a couple of tablespoons of water and combine bread crumbs of your choice with dried Italian seasoning herunterladen.

First heat oil in a large skillet over medium-high heat.  Dip eggplant slices in the seasoned flour.

Gently place them into hot oil and pan fry only two to three minutes on each side, or until golden brown.  Drain on paper towels.

Spread the marinara or red sauce onto the bottom of a baking dish.  Line each of the fried egg plants overlapping only slightly if necessary to fill the dish.

Shred the cheese and top each of the fried egg plants with a big of each variety.

Bake in the oven, uncovered for 15 minutes.

I prepared some breaded chicken while the egg plant was baking by pounding out chicken breasts until about a half an inch thick.  Season with olive oil and season with salt and pepper.

Using a tongs, coat the chicken with the remaining breading ingredients.  (I didn’t think to keep the seasoned flour and eggs, prior to using the bread crumbs.  I would normally treat the chicken just like the egg plant steps.) Fry over medium high heat; turning once until cooked through. (160 to 165 degrees internal temperature)

Allow to rest for five minutes or so prior to slicing.  Serve with a side salad and fresh greens.  Asparagus is in season!

Shrimp Pizza with Fresh Arugula

Looking for dinner ideas recently, I was rummaging through the fridge of ingredients that I had on hand so that I could come up with a homemade pizza that would combat my cravings!  Bill had pulled the pre-made Trader Joe’s dough from the freezer earlier as I planned to prepare some sort of thin crust variety!  I found a bit of homemade red sauce and pulled some shrimp in the deep freeze cannot be downloaded at this time.  I also spotted an abundance of fresh Arugula, which I’m thrilled is more readily available these days then it used to be!  You can often find it in the pre-washed bagged lettuce section.  Not everyone loves this leafy green, but we do!  Due to its peppery flavor, arugula is often mixed with other milder greens such as watercress and romaine when served as a salad, but in Italy, it is common to top pizza with arugula after baking alexa app download switzerland.

Ingredients:

Pizza Crust, I choose Trader Joe’s, split into two so it’s thin!
Red Sauce, reduced or Pizza Sauce

Shrimp, raw, peeled and deveined
Salt & Pepper, to taste
Pecorino Romano Cheese, shredded
Parmesan Cheese, shredded
Mozzarella Cheese, shredded
Fresh Arugula
Fresh Lemon juice, squeezed over greens

Italian Mashed Potato Bake

Ingredients:
Left over Mashed Potatoes (made with butter, 1/2 & 1/2 and salt & Pepper)
1/2 pound Fresh Mozzarella Ball
2/3 Cup Parmesan Cheese, grated 
2 Roma Tomatoes, sliced
1 Tablespoon Extra Virgin Olive Oil
2 Tablespoons Italian Seasoning
Salt & Pepper, to taste

The cheese that is blended with the potatoes is creamy and incredibly tasty combined with the slight tang of the tomatoes and Italian seasonings.

We enjoyed this as a side dish to lamb chops and asparagus, paired with an amazing 2008 Syrah/Grenache blend by Ridge Lytton Estates.  A meal so delicious, it makes us “hummm”.
