Pure Foods Fish Market, Seattle, WA

Although you will usually find our “reviews” on the restaurant section of our blog, (http://www.billswinewandering.com/category/restaurants/) I felt it was appropriate to review the Pure Foods Fish Market in downtown Seattle in a similar manor due to some recent experiences we’ve had.  I believe there is room for improvement with the way these guys handle their loyal patrons.

Our good friends Pete & Martinique live in downtown within the Harbor Steps Apartments, literally two blocks from the Pike Place Market and have been residents of downtown for many years.  As their guests, we have visited the market both as tourists, as well as have gotten the inside scoop from our friends who are the “locals”.  Pete, like myself loves to cook and is an excellent chef.  He does most of the cooking at home and they literally shop for their food on a “just in time” concept.  Pete has taken us to many of his favorite stops and swears that there is no place better to buy seafood in Seattle than at Pure Food Fish Market within Pike’s Place Market breakout spiele kostenlos herunterladen.  There are numerous other fish vendors here so it would be difficult not to find what you’re looking for, but this is Pete favorite claiming that it is by far the freshest.  They say say that more local shop here than tourists.

During December, Bill and I visited our friends and of course made our way to the market a few times.  Pikes Place Market is one of my favorite places to visit.  Yes, it’s a tourist trap and it can become insane busy, but aside from the fish there are other vendors that sell fruits, cheeses, vegetables, meats, fresh cut flowers, as well as souvenirs.  You can get some great food to eat and there are a lot of neat things to see.  Most of the time it is a flurry of activity so the best time to go is early morning.  I’ve even gone when vendors are setting up as I wake up early since my internal alarm is on the central time zone.  I love to walk around while I’m free to move about without the crowds Download thalia books from icloud.  I’ve visited with the hard working guys, who for the most part rebuild their work stations from the bottom up.  They shovel and haul snow and ice; they carry and arrange an abundance of fish and product; and decorate their displays delicately with greens.

The guys of Pure Foods Fish Market were mostly friendly but when they are busy, some of them tend to be brusque, curt and snippy in spite of the fact that you are their customer and wish to spend your money with them!  When we had purchased fish during the trip we were pleased that we would be bringing home fresh fish; and that it would be packed for carry on to the plane.  It was explained that it would stay cold for up to 48 hours!

We ordered our fish the day prior to our departure so that we could pick it up quickly on the way to the airport.  The shop was somewhat hectic and busy but the fast-paced, energy was to be expected.  We invested about $350 into the order, but were ok with it since we are unable to get great fresh fish of these varieties in Minnesota vtech kidizoom kid 2 bilder herunterladen.  The guys helping us were efficient and friendly but unfortunately, the order was not ready at the time promised the next morning.  The packers were then nice enough and hustled to put the order together quickly while we grabbed a cup of coffee.  Once home, we were thrilled with the quality of the fish; the cuts of the fish and the packaging of our purchase overall.  The various types of fish, including fresh manila clams smelled sweet like the ocean and were wrapped in clear plastic bags, then covered in several reusable ice packs, and were all placed in a sealed-Styrofoam container.  This was then packed into another sturdy outer cardboard box that had handles; easy for carrying.  The gentleman was apologetic for not being ready on time and said he had “thrown in something special”; which we think were a couple of extra jumbo shrimp.  Of course, we never weighed the fish because we assumed it would be accurate.  The clams were fresh and we stored them appropriately in a colander covered with ice (so that the water could drain, if ice melted) within the fridge until the next day when we prepared them.  We were thrilled that every single clam opened!  They were fresh and delicious!

About four months later, early this April, our inventory was depleting so I thought I would take advantage of the on line shopping system that one of their mongers had assured me was of equal quality wekgeluiden downloaden.  It was explained that Pure Food Fish Market takes fresh seafood orders online at FreshSeafood.com and ships anywhere in the United States via FedEx overnight, guaranteeing freshness upon delivery.  I assembled an order while at home on my computer including a repeat of some products; as well as included a few different types; King Salmon, Ahi Tuna, Halibut, and Mahi Mahi.  I was not thrilled with the minimum amount of (fixed pounds) fish required to purchase, but decided it would be worth it again and that inevitably it would all be eaten so I proceeded with my $423+ order (after the 10% new member discount).  I was excited to see that my order would include a free sample of smoked salmon, because we hadn’t been offered that while at the store.

The order arrived promptly as promised, but when I went to open the package I found myself disappointed.  My expectations were high since the initial order was of complete quality.  Although the majority of the fish smelled fresh for the most part, I felt sort of ripped off because some of it had an oder and the cuts of the fish were not the same spiele für den pc kostenlos herunterladen.  The Halibut for example, were three tail ends, with little of the thick meaty head end left for thick cut delicious fillets.  It’s like in Minnesota if you buy a whole beef and the butcher steals the prime cuts of steak or fillets.  Since it’s all wrapped up in white paper, the average person likely wouldn’t notice!

Previously, we had received an entire “slab” or side of the fish cut just behind the head and ran entirely down to the tail.  It had been folded within the package and remained in tact.  We had not discussed a preference in cuts on the initial order and didn’t think to do so on line (or see a space to do so) because we assumed it would be the same as the initial order and honestly didn’t think we would have to or know that we could!

The Mahi Mahi fillets had two very different colors and I queried the guys pertaining the color of the skin to decipher the fillets because they come unmarked.

I have a lot of experience with Tuna and these fillets were very different than the ones previously received jedes video downloaden firefox.  The flesh was soft and did have a slight “fishy” oder.  I know that cloudy eyes would indicate that the fish is old, but I wasn’t there to pick out my fish.  Typically I would press the fish’s flesh with a fingertip.  The fresher it is, the more firm it will feel and the more it will resist being pressed.  If it’s easy to make an impression in the flesh, and if the finger impression stays or fills with liquid, the fish is not very fresh.  This quality of fish was not great and it should have had very little odor whatsoever!

Typically when I purchase tuna, I would clean away any remaining skin from the fillet as well as any silver connective tissue.  Then I’m left with a nice clean loin that is long, round, and tapered.  I would cut it by starting at the thickest end and measure 1 to 1.5 inches to cut sims download 3.  When cutting or buying a fresh fillet, one should be aware of how many white sinew lines divide the meat.  These white lines in the flesh of ahi tuna indicate tough veins that you don’t want because the sinew can hinder cutting.  I tend to look for a cut of solid color (like the better looking fillet on the left) without veins.  If you are looking for fatty tuna, find cuts with soft marbling rather than stringy-looking sinew!

I immediately called the store and spoke to Tom who seemed surprised, but was contrite and handed me off to Neal, the manager at my request.  Neal did a good job of defending the quality of Pure Foods Fish Market while making efforts to appease me, but I strongly disagreed that “a lot of folks prefer the thin tail end” of fish.  Unfortunately, I had not yet weighed the fish when I accepted his offer of a $100 credit on my next order because of my complaints of “crappy” cuts Download purchased music from itunes.  I am now somewhat apprehensive about the promised credit since I looked at my on line account today and there is no $100 credit on my account.

Neal also explained that they would have vacuum seal it for us if we had asked, which would have been terrific to know in advance!  We literally spent an hour or two cutting and packing, plus the cost of materials using our home food sealer.  (It wasn’t clear if there is a fee for this, but it may be worth it!)  Neal recommended calling the store, rather than using the system on line and explained that one should specify the preferred cuts of each fish that they were purchasing in the future.

Now let me tell you about the weight of our order.  Keep in mind that 1 pound = 16 ounces.  My scale is accurate.

The Salmon:

The salmon did have a little bit of waste.  There were fins that had to be removed, but there was very little waste.

We paid for 5 lbs. King Salmon @ $165, but only got 3 lbs. 9 oz – in packages,  This equates to 5 meals – 2 fillets each @ $33.  WE WERE SHORTED because there is no way I tossed a pound and a half fortnite für nintendo 3ds downloaden!

The date on all of the fish should have actually said 4/9/14, which was the day we received it.

We paid for 4 lbs. Mahi Mahi @$58 and got 4 lbs. 4 oz. – in package with zero waste.  This equates to 7 fillets @ $8.29 each.  I think this is a fair price for this fish.

We paid for 3 lbs. Ahi Tuna @ $52 and weighed out at 2 lbs. 15 oz. – in package threw no waste.  This equated to 6 packages of varied sizes @ $8.67 ea.  We did taste the tuna immediately because we wanted to be sure it was fine before freezing filme auf handy downloaden.  It was alright, but definitely not the quality of the first batch and I’m still not pleased with the texture or smell.

The Halibut weighed accurately at 5 lbs. @ $132.50.  This equated to 8 fillets @$16.56 ea.   Generally, we are able to split each fillet between two people and we love this fish so much that it’s worth the investment.

We did not receive the sample of the smoked salmon!

Other reviewers discuss that the products are really fresh, really good and overall worth the investment for excellent, fresh seafood.  I would recommend you buy what is inside the counter and not what is displayed on the ice where all the customers can touch it.

Others report that they didn’t appreciate being given a rounded up price for fish that wasn’t labeled with weight.  Some wished they had a scale at home to see if they had been taken advantaged of.  A number of folks said that they too felt taken advantage of and that they had consistently been overcharged.

I will give them another shot providing they give me my store credit, but I really think they owe me a pound and a half of King Salmon and they should throw in some smoked salmon that I have heard so many great things about, because we still haven’t had a chance to sample any!

I’m hopeful that we will be able to continue to enjoy the fabulous fresh fish that we originally experienced because living in the midwest doesn’t leave much for fresh fish options, besides the lake fish that we have to work for and it’s just not the same.

Apple and Cabbage Coleslaw

There is a local restaurant that makes an apple slaw that I really like.  Following a viewing of one of Guy Fieri’s shows where he had prepared one similar, I had to make some herunterladen!  When I went on line and looked at Guy’s recipe, I decided to wing it and prepare my own version based on what ingredients that I had on hand in my fridge sims 3 downloaden op laptop.  I typically buy green cabbage, but like the color of the purple.    No matter what color cabbage you choose, you can’t go wrong as they are both very low in calories and high in fiber and nutrients herunterladen.  Eating just one cup of either one provides four percent of the recommended daily intake of eight vitamins and minerals.  Both types of cabbage contain vitamin A in the form of the carotenoids beta-carotene, and such netflix movies download like many.  Beta-carotene is an antioxidant that can also be converted into the vitamin A you need for vision and to keep your skin and immune system healthy.  I’ve read that red cabbage has 10 times more vitamin A than green cabbage herunterladen.  None the less, this is a tasty simple salad.  Next time I think I would add more apple because it was so light and refreshing!

Ingredients:
1/3 Cabbage, medium sliced
1 Red Cabbage, sliced
1 Green Apple, cored and julienned
2 Tablespoons Apple Cider Vinegar
1/2 Cup Mayonnaise
1 Tablespoon Chives
1 Tablespoon Poppy Seeds
1 Tablespoon Honey
1 Tablespoon Agave (*you may wish to use sugar)
1 Shallot, minced
Salt & Pepper, to taste

*A note on Agave, which seems to have become one of my preferred sweeteners as a health-conscious consumer in the past year or so…  Seems the more I look into things, the more I’m less and less dazzled by words like “natural” arma 3.  I’m dumbfounded with recent research on how our wheat is genetically modified, but I’ll save that for another day.  I wasn’t thrilled when I recently read that US food regulators do not  legally define the term “natural” and it’s most often left up to the manufacture how they want to use it.  We all need to keep in mind that the goal of the manufactures is to sell more product and you should know that Agave is processed just like other sugars, so it really isn’t any better for you than other sugars.  It’s all so confusing, isn’t it!

Chicken Roulade

Ok, it’s just stuffed chicken breast… but it sounds fancy, doesn’t it!  I recently posted a pork roulade and found that it generated a lot of interest.  I also realized once sorting through images to be blogged that chicken roulade is what’s for dinner pretty regularly at our house.  The word “roulade” originates from the French word “rouler” meaning “to roll” download mp3 music for free.  Typically, a roulade is a European dish consisting of a slice of meat rolled around a filling, such as cheese, vegetables, or other meats.  A roulade, like a braised dish, is often browned then covered with wine or stock and cooked.  Sometimes the stuffed meat is secured with a toothpick, metal skewer or a piece of string, which would be necessary if you intend to brown the meat before baking but I’ve found that with chicken breast, browning isn’t really necessary because it tastes moist and tender anyways and includes lots of flavors from all the goods you put inside scratch kostenlos downloaden deutsch!  Once the meat is cooked, the stuffed chicken is sliced into rounds and served.  I tend to change ours up based on what ingredients that I have on hand and I encourage you to “stuff” yours with what ever flavors you like!

Red peppers have become a staple in our house because both Bill and I love them so much!  I almost always include them as one of the ingredients within my stuffed chicken download xbox app.  I like to roast them simply over the gas stove because their flavor takes on a deep, sometimes smoky flavor that adds great dimension to dishes.

Ingredients: 

1 Chicken Breasts, per person (skinless, boneless)
Carmelized Onion slices
Roasted Red pepper
Roasted Garlic
Fresh Spinach
Cheese, your favorite
Salt & Pepper, to taste
Sun dried Tomatoes
Anything you like!

Roasting the peppers is easy.  First, turn the gas stove to medium-high heat.  You want a fairly large flame to ensure the quickest roasting time and sufficient blackening.  Place the peppers directly onto the burner, making sure they are close to the flame download silverlight mac.  Leave the peppers over the flame, constantly turning them with a tongs while listening for “crackling noises”, which simply tell you the skin is cracking and that the peppers are roasting.  Continue to rotate each pepper once the skin has blackened in areas, rotating them until the entire surface is black and crispy.  Don’t worry about the burnt black color as the flesh underneath will be perfectly fine and flavorful youtube musikvideos herunterladen.  Once the peppers are totally blackened on all sides, remove it from the heat and either place the pepper in a bowl, covering it with plastic wrap, or place it in a small brown bag and fold the top closed allowing it to steam.

Once the peppers have cooled for at least 10 minutes, rub the peppers between your fingers and/or a paper towel, or use a paring knife to scrape off the blackened skin.  Once all the black skin has been removed, cut the tops off and discard.  Cut each pepper and slice down one side, exposing the inner seed cavity.  Scrape off the white membrane and seeds and discard gta 6 gratisen.

Sometimes I use feta, sometimes shredded mozzarella or brie cheese http //www.cewe-fotobuch.de downloaden.  I like to add lemon zest, fresh herbs, etc.  It can be challenging to keep filling away from edges, but do your best and shove the ingredients back in if they fall out when you roll.

Beginning at the narrower end of the chicken breast, roll up, enclosing filling as you would a jelly roll siemens logo soft comfort for free.  If you wish to brown them on the stove, tie with kitchen twine to secure.  Otherwise, lay into baking dish that has been sprayed with non stick cooking spray, seam side down and repeat with remaining chicken breasts tucking them close together within the baking dish.  Drizzle with a little bit of olive oil, season with salt and pepper.

Sometimes I bake them with gravy, sometimes I just pour it on after it’s been baked.  Either way, bake them uncovered for 35 minutes or so and allow the roulade to rest prior to slicing.

This particular night we enjoyed a blend of Old Vine Zinfandale, Petite Sirah, and  Mourvèdre.  It was a 2010 California wine by BOGLE Vineyards and it was delicious, while a real value at Costco for under $20!

Reuben Soup

My friend Jennifer had brought over delicious, creamy Ruben soup a couple of times for girls nights gatherings.  I love corned beef and really enjoyed her soup herunterladen.  She had given me the link to the recipe she had found on the internet and I just waited until I was ready to cook off the large corned beef brisket that I had in the freezer knowing I was going to reserve some of it for my own batch of soup outlook windows 7 for free!  I followed most of the recipe she provided, but added some of my own spin on it.

Corned beef brisket is one of the easiest roasts you will ever prepare download solitaire for free.  I like to use the crock pot over the stove method because I can start it and go.  Once your roast is complete, be sure to reserve the juice for your soup javascript android download kostenlos.  You can use a separator or skimmer to rid it of the fat.  I recommend whole fat cream if you’re not concerned about calories, because the fat free version does tend to separate swr2 music piece of the week.  I ended up adding cream later when I re-heated.  You may also wish to use flour and make a roux to thicken it.

The brisket is the most common cut used for corned beef, although other cuts can also be used download skype app for free.  Brisket is the name of a particular “cut” of beef, which tells you what part of the cow it came from. Corned Beef is is a cut of brisket that has been cured (or pickled) in a seasoned brine and often with spices download skype to pc.   In the grocery store, you can find the newer style of corned beef, a rosy red color, vacuum-sealed in a bath of brine.  The term corned comes not from the vegetable corn, but from the English term corn, meaning any small particle, such as the coarse-grained salt which was used for curing älteres skypeen.  When choosing the brisket, I prefer the flat cut over the point cut.

Ingredients:
1 Onion, large, chopped
1 Cup Celery, chopped
1 Red Bell Pepper, chopped
2 Garlic Cloves, minced
1 Tablespoon Tarragon
1 teaspoon Cumin
1 teaspoon Caraway Seed
1 Cup Butter
3 Tablespoons Corn Starch
6 Cups Corned Beef Stock, fat removed
4 – 6 Cups Corned Beef, cooked and chopped
2 Cans Sauerkraut, drained
1 Quart Half-n-Half
Shredded Swiss Cheese
Pumpernickel or Rye Croutons, optional
Fresh Black Pepper, to taste
Salt, to taste if necessary

Cover the roast with water and either bring it to a boil and then simmer for three to five hours, or simply put on low and leave it in the crock pot for six to eight hours, until tender.

I had used my skimmer and reserved the stock in the fridge until I was ready to use it for the soup.

To make the soup, clean the vegetables and chop.  Saute the onions and celery in the butter until they start to become soft.  Add the garlic and red pepper and cook for another five minutes or so.

Chop the left over corned beef into small cubes and combine with the vegetables.

Drain the sour kraut and add it along with the seasonings and stock.  Simmer over low heat for at least 30 minutes.  Add the cream and give the soup a taste since the salt of the meat and stock varies.  Season with salt and add if need.

Just prior to serving add shredded Swiss cheese to your liking.  You may wish to garnish your soup with additional Swiss and pumpernickel or rye croutons!

Seared Mahi Mahi with Hash, Soft Egg and Hollandaise

The mahi-mahi or common dolphinfish is a surface-dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. Also known widely as dorado, it is one of two members of the Coryphaenidae family, the other being the pompano dolphinfish.  The majority of Mahi-mahi’s calories come from protein.  The protein provides all the amino acids you need to make enzymes essential for cellular metabolism, produce hemoglobin required for oxygen transport and support healthy muscle tissue fluidsim herunterladen.  This fish has a sweet pronounced flavor, large moist flakes and a smooth texture, which makes it a versatile fish to grill, pan-fry, bake or steam.  It is a great source of vitamin B12, phosphorus, potassium, protein, niacin, vitamin B6, and selenium.

We recently purchased some that we had shipped over night from Washington and I’ve been looking for new ways to prepare it.  I was hungry for hash and after watching the Pioneer Woman on the Food Network, I discovered Hollandaise sauce can be made easily in the blender herunterladen.  It is a sauce that begins with lemon juice and butter base, and is emulsified with the addition of egg yolks.  It is typically challenging to make with a whisk, so give this method a try for a special treat!

Ingredients:

2 Mahi Mahi fillets
1 teaspoon Sweet Paprika
1 teaspoon Blackening Herbs
1 Tablespoon Lemon Olive Oil
1 Sweet Potato, peeled and chopped
1 Russet Potato, peeled and chopped 
6 Shallots, chopped
1/4 lb herunterladen. Bacon, chopped
1 Cup Button Mushrooms, cut in half
1/2  Tablespoon of Oil, for sauteing mushrooms
1/2  Tablespoon of Butter, for sauteing mushrooms
1 Can of Green Beans, drained
2 Eggs
1 teaspoon Butter, to fry egg
Salt & Pepper, to taste

Hollandaise:
3 egg yolks
1 Juice of whole Lemon
Salt, dash to taste
Cayenne Pepper, to taste
2 Sticks of Butter (if using salted butter, skip the added salt)

Peel and chop shallots.  Cut bacon into small pieces and combine both in a skillet over medium heat and cook until bacon is crispy

Clean, peel and chop potatoes and add them to the bacon and onions ark dinos herunterladen.  Continue to cook over medium heat tossing frequently until the potatoes are golden brown, about 15 to 20 minutes.  Add the drained green beans and toss.  Keep warm over low heat.

Saute the mushrooms over high heat in about a tablespoon of butter and oil combined, until browned herunterladen.  Set aside.

Cook the Mahi Mahi.  Bill and I like it blackened and it is best to use a cast iron skillet to blacken fish, but you can also use a non-stick frying pan. Most blackened fish recipes call for dipping fish fillets in melted butter and generously coating with blackening seasoning, but I used seasoned olive oil with lemon google tabellen download kostenlos.

The secret to a perfectly blackened mahi-mahi fish fillet is to make certain the pan is just starting to smoke prior to cooking fillets and to flip fish only once during the cooking process. Mahi fillets need to cook eight to ten minutes per inch of thickness. Once cooked, transfer the fish onto the potatoes while you prepare the Hollandaise vavoo.to.
