Creamy Potato Bake

Ingredients:

1 1/2 Cups Hash Brown Potatoes
1/2 Cup Sour Cream
1/3 Cup Italian Truffle Cheese, shredded
1/2 Cup Mozzarella Cheese, shredded
1/2 Cup Heavy Cream
Salt & Pepper, to taste

Meyer Lemon Soup

Ingredients:

4 Tablespoons  Butter
2 Tablespoons Extra Virgin Olive Oil
1 Large Onion, diced
2 Cups Celery, diced (keep a couple of the leafy tops)
2 Garlic Cloves, pressed 
4 Cups Chicken Stock
5 Tablespoons Chicken Better than Bouillon
6 Cups Water, plus rinds of Lemon
2 Cups Heavy Cream
5 Cups Lemon Juice, freshly squeezed
2 Sprigs Fresh Thyme
2 Tablespoons Thyme, dry 
1 teaspoon White Pepper
3 Tablespoons Butter (for roux) 
3 Tablespoons Flour
Lemon Extra Virgin Olive Oil, for garnish
Cooked Shrimp, Salmon, Lobster or Crab meat, optional

Place cooked seafood in the bowl and top with soup.  Drizzle with lemon olive oil.  The image on the right is the actual soup that we enjoyed at the wine dinner.  It was so delicious, I wish I could have another bowl right now!

Ranch and Blue Cheese Wedge Salad

Who doesn’t love good old iceberg lettuce salad?  It’s the lettuce that I grew up with and ate just about every night with dinner.  It seems to have a bad reputation of being low in nutrients, whic is not exactly true; it’s just simply lower in nutrients than some other types of lettuce download e mail in full.  In recent years iceberg lettuce has been left out, having been deemed of having no nutritional value.  It seems to get passed by for other more power-packed greens such as Kale, Romaine lettuce, or spinach ets2 multiplayer herunterladen.  Many people, including my grown up kids, prefer the crispness of iceberg.  I don’t think that any other lettuce has the same cool, enjoyable crunch provisionsverträge kostenlos downloaden.  You shouldn’t rely on it  as your sole source of leafy greens, but it’s OK to include it in your diet on a regular basis.

Ingredients:

1 Head Iceberg Lettuce, halved or quartered with core removed
3/4 Cup Pecans, chopped and toasted
1/2 Cup Bacon, cooked crisp and chopped
1 Cup Grape Tomatoes, cut quartered
Dressing:

1/4 Cup Buttermilk
1/4 Cup Sour Cream
1/4 Cup Basil Leaves, fresh chopped
1/4 Cup Parsley, fresh chopped
2 Tablespoons Chives, fresh chopped

1 Garlic Clove, pressed
1/2 Lemon, juiced plus rind
1/2 teaspoon Onion Oowder
1/2 Cup Blue Cheese, crumbled
Salt and Black Pepper, freshly ground

For the dressing: Combine the creme fraiche, sour cream and buttermilk with the basil, parsley, chives, thyme, garlic, lemon juice and onion powder with a whisk in a medium bowl handlettering font to.

Fold in the blue cheese, season with salt and pepper and refrigerate until ready to serve bilder von pinteresten.

For the wedge: Preheat the oven to 350 degrees. Spread the pecans on a rimmed baking sheet and toast until fragrant, six to eight minutes. Let cool and then chop.  Divide the lettuce wedges among plates.  Top each with dressing, the tomatoes, cooked, chopped bacon to taste and top with the toasted pecans. Serve the remaining dressing on the side.

I served the salad as a side dish to simple grilled shrimp that was coated with butter, olive oil, lemon juice and fresh garlic.

Mini Ham, Gruyere and Swiss Sandwiches

Years ago, I enjoyed some little individually wrapped ham sandwiches that a friend brought to a weekend gathering.  Her’s were gooey and the flavors outstanding aktuelle version von whatsapp herunterladen!  This is my version based on my recollection of what was in them; utilizing ingredients that I had on hand in my fridge and pantry.  These little Mini sandwiches prepared with freshly baked dinner rolls, stuffed with sweet ham and melted cheese are savory from the rich mustard sauce making an easy, tasty little bite or appetizer filme von rtl nitro downloaden.  I had some ham left over from Easter dinner and always have the Rhodes dinner rolls on hand in the freezer and with a few more ingredients, I was able to come up with a great appetizer for a recent girls night phototan german bank app.

Ingredients: 

12 Dinner Rolls, prepared
Ham, sliced (I had left over from Easter Dinner, but deli meat works!)
Gruyere and Swiss Cheese, grated
3/4 Cup Butter, melted
2 Tablespoons Dijon Mustard
1 Tablespoons Worcestershire Sauce
3 Tablespoons Sesame (or Poppy) Seeds
1 Tablespoon Onion Powder
1/2 teaspoon Granulated Garlic
Horseradish Mayonnaise (optional)

I prepared the dinner rolls according to package directions.  When ready to prepare the sandwiches, preheat oven to 350 degrees download amazon music listening games.  Using serrated knife, slice the buns in half.

Sprinkle with sesame seeds and cover with foil herunterladen.  Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes.  Remove foil and bake an additional five to ten minutes. The buns should be caramelized on the bottom and golden brown on top.

Serve as individual sandwiches.

I’ve also made these with croissants and Kings Hawaiian sweet rolls.  Bill enjoyed his along side a cup of tomato basil soup and paired with a wonderful 2012 Sangiovese by Benessere Winery!

Halibut, Risotto and Roasted Carrot, Ginger Puree

I was recently preparing some Halibut and wanted to change the flavor profile up a bit and created this dish based on ingredients that I had on hand in the fridge.  Risotto is a north Italian rice dish that is really not all that hard to prepare, but you need to give yourself a half hour to 40 minutes to get it just right.  It’s rice that is cooked in a broth to a creamy consistency. The broth can be derived from meat, fish, or vegetable; I choose chicken stock. There are many different risotto recipes with different ingredients, but they are all based on a standard cooking method.  The rice is first cooked briefly in a “soffritto” (another word for Mirepoix – A mixture of seasonings and finely chopped vegetables, such as onions, garlic, and celery, that is sautéed in olive oil and used as a base for many Italian dishes.) of onion and butter or olive oil to coat each grain in a film of fat, called tostatura; white or red wine is added and has to be absorbed by the grains. Ingredients: 

Halibut fillets, skinless, boneless
Peas, for side dish
2 – 4 Cups Chicken stock, divided
1 Tablespoon Butter
1 Extra Virgin Olive Oil
1/4 Cup Onion, minced
1 Cup Aborio Rice
1/3 Cup Dry White Wine
1 Pinch Saffron
1/2 Cup Parmesan Cheese, grated

Keep chicken stock heated in a saucepan Download tolino app books.  Meanwhile, in another pan, soften chopped onion in butter and olive oil.

Then add the rice and stir, coating it gently so that all the grains are coated.

The rice is done when it is tender, yet firm to the bite.  Finally, when the liquid has been absorbed, add your preferred ingredients.  I stirred in the cheese.  Season with Salt, to taste.

To prepare the carrot puree:
6 Carrots, peeled and chopped
1/2 Onion, chopped
Olive Oil
1 Tablespoon Ginger, grated
1 teaspoon Tahini Paste
1/3 Cup Cream
1 Tablespoon Asian Mayo
1 teaspoon Cumin
Pinch Cayenne
Salt & Pepper, to taste

Preheat oven to 400 degrees Download crysis 3 for free in full.  Peel and chop carrots and onions.  Coat with a drizzle of olive oil; and season with salt and pepper.

Bake uncovered for 35 minutes or until vegetables are soft.

Pan fry Halibut in a little bit of oil over very high heat to coat a crisp edge and until the center is no longer translucent.  Heat peas for a side dish.

Ingredients Sauce:
1 Tablespoon Butter, melted
1 Tablespoon Ginger, grated
2 Tablespoons Rice Wine Vinegar
2 Tablespoon Soy Sauce
1 teaspoon Fish Sauce
3 Tablespoons White Wine
2 Tablespoons Hoisin
2 Tablespoons Cilantro, fresh minced
dash Hot Sesame Oil

Grate additional ginger and combine all other ingredients except the Hoisin and sesame oil chkdsk.

Combine and cook in saucepan until reduced by half.  Set aside.

Using a ring mold is optional to plate the risotto.  Top with puree, cooked fish and sauce.  Serve with peas.
